30-Minute Burnt Honey and Black Sesame Granola Bowl
A Japanese-inspired yogurt bowl featuring homemade black sesame granola with burnished honey undertones, topped with creamy yogurt, fresh fruit, and a drizzle of caramelized honey. The granola is made in one pan and combines nutty black sesame seeds with oats, almonds, and a touch of burnt honey for complex, toasty flavor. Ready to eat in just 30 minutes.
Steps
Before you start
- Have all granola ingredients measured and ready
- Line a baking sheet with parchment paper
- Use a heavy-bottomed saucepan for burning the honey to avoid scorching
Burn the honeyOven 340°F / 170°C
- Pour the honey into a heavy-bottomed saucepan over medium-high heat.
- Let it cook without stirring for 3–4 minutes, watching closely.
- The honey will first foam, then deepen from amber to dark brown with a slight caramel smell.
- Swirl the pan gently once or twice if needed to ensure even coloring.
- Stop cooking when it reaches a deep mahogany brown (about 340°F / 170°C internal temp if you have a thermometer).
- Do not let it turn black or smell acrid—it should smell sweet and toasty, not burnt.
- Remove from heat immediately and add the coconut oil, stirring to combine.

Ready when: Honey turns deep mahogany brown and smells sweet and caramel-like
Tip: Once honey starts darkening, it moves fast—watch constantly in the final 30 seconds. If you over-brown it, discard and start again; burnt honey tastes unpleasantly bitter.
Mix granola dry ingredients
- In a medium bowl, combine the rolled oats, chopped almonds, black sesame seeds, and sea salt.
- Stir well to distribute the sesame seeds evenly throughout.

Combine wet and dry for granola
- Let the honey-coconut oil mixture cool for about 30 seconds (it will be very hot), then pour it over the dry granola mixture.
- Stir vigorously with a wooden spoon for 1–2 minutes, coating every piece of oat and nut.
- The mixture should come together into clumpy, moist clusters.

Ready when: All oats and nuts are evenly coated with honey-coconut oil and form small, moist clusters
Tip: Stir quickly and thoroughly while the honey is still warm to ensure even coating. If it cools too much, it hardens and won't coat smoothly.
Toast granola in ovenOven 325°F / 165°C
- Spread the granola mixture in an even layer on a parchment-lined baking sheet.
- Bake at 325°F (163°C) for 10–12 minutes, stirring once at the 6-minute mark with a wooden spoon to break up clusters and ensure even toasting.
- The granola is done when it smells nutty and toasted, is deep golden-brown, and feels dry to the touch.
- The black sesame will darken significantly.

Ready when: Granola is deep golden-brown, smells toasted and nutty, and feels dry and crisp
Tip: Stir at the 6-minute mark to prevent burning on the edges and ensure even toasting. The bottom of the pan gets hotter, so scrape the sides and corners.
Cool granola completely
- Spread the hot granola on the parchment to cool for 6–8 minutes at room temperature.
- Do not stir while it cools—this allows it to set into clusters.
- Once cooled, it will crisp up further.
- You can break it into bite-size clusters with your hands if desired, but leave some clusters intact for texture.

Ready when: Granola is completely cool to the touch and clusters are crispy
Tip: Resist the urge to stir while cooling—you want it to set into clusters. If you break it up too early while still warm, it will crumble into crumbs.
Assemble the bowls
- Divide the chilled Greek yogurt evenly between two bowls (about ½ cup / 120 ml per bowl).
- Top each bowl with a generous handful (about 3–4 tablespoons / 30–40 g) of the cooled burnt honey and black sesame granola.
- Scatter the fresh strawberries and blueberries over each bowl.
- Dust lightly with sifted matcha powder if using for an earthy, herbal note.

Ready when: Bowls are assembled and ready to eat
Tip: Add the granola just before serving so it stays crispy and doesn't soften in the yogurt.
Final drizzle and serve
- Drizzle ½ tablespoon (7–8 ml) of raw honey over the top of each bowl, letting it cascade over the granola and fruit.
- Serve immediately while the granola is still crispy.

Tip: The raw honey drizzle adds a fresh, floral sweetness that complements the burnt honey granola's deep caramel notes.
Good to know
Tips
- Burnt honey is temperamental: watch it constantly as it darkens. The window between perfect mahogany brown and too dark is only 30 seconds. Swirl the pan gently once or twice if you see uneven browning, but don't stir.
- Black sesame seeds toast differently than white sesame and have a subtle, earthy flavor that deepens as they cook. They will darken significantly in the oven and that's correct—they should smell nutty, not burnt.
- If you don't have black sesame, white sesame seeds work, but reduce the baking time by 1–2 minutes and watch closely—they brown faster and burn easily.
- For maximum crispness, add the granola to the yogurt bowl just before eating. If granola sits in the bowl for more than a few minutes, the moisture from the yogurt will soften it, but it will still taste delicious.
Make ahead
Store the cooled granola in an airtight container at room temperature for up to 5 days. Assemble the bowls just before serving to keep the granola crispy.
Storage & reheating
Granola: Room temperature in an airtight container for up to 5 days. Yogurt bowls are best eaten immediately after assembly to preserve granola texture. Assembled bowls can be refrigerated for up to 2 hours, but granola will soften; keep granola separate and add just before serving.
Substitutions
- black sesame seeds → white sesame seeds. Use the same amount. White sesame will toast quickly at 325°F, so check at 8 minutes and stir frequently to prevent over-browning. The visual contrast with dark honey will be less dramatic, but the nutty flavor is similar.
- raw almonds → sliced or slivered raw almonds, or raw hazelnuts. Use the same weight. Hazelnuts add an even deeper, more earthy note and pair beautifully with black sesame. Slivered almonds will toast slightly faster, so reduce oven time by 1–2 minutes.
- plain Greek yogurt → plain whole-milk yogurt or Icelandic skyr. Use the same amount. Whole-milk yogurt will be slightly less thick; use 1¼ cups if you prefer a creamier texture. Skyr is denser than Greek yogurt, so use ¾ cup (180 ml) for a similar consistency.
- fresh strawberries → fresh raspberries, peaches, or mandarin orange segments. Use the same amount by weight. Each will change the flavor profile—raspberries add tartness, peaches add sweetness and juiciness, and mandarins add brightness.
