About Steak
Steak is a tender cut cooked quickly over high heat. Salt, pepper, a hot pan, and a little butter or oil go a long way. Many cooks add garlic and fresh herbs near the end.
Steak is the fastest of the whole cuts. Beef roast is cooked in the oven for longer, and stew beef and short ribs cook slowly in liquid. Steak is also best served a bit pink in the center, if you like, rather than cooked until falling apart.
Questions folks ask
How do I cook steak in a skillet?
Heat a heavy pan until hot, sear the seasoned steak on both sides, then lower the heat and finish to your liking. Rest it before slicing.
How do I know when steak is done?
A meat thermometer is the surest way. You can also press the meat. Firmer means more done.
Why is my steak chewy?
It may be overcooked, cut with the grain, or not rested. Slicing against the grain helps a lot.
Kitchen tips
- Dry the steak well and season with salt before cooking.
- Get the pan very hot before the steak goes in.
- Flip only once or twice for a nice crust.
- Rest the steak for 5 to 10 minutes before cutting.
- Slice against the grain for tender bites.
