Steps

Before you start
  • Preheat your oven to 400°F (200°C)
  • Have a food processor or blender ready
  • Let feta come to room temperature for easier blending (about 30 minutes ahead)
  1. Roast tomatoes and garlicOven 400°F / 205°C

    • Toss the halved cherry tomatoes and whole garlic cloves with 2 tablespoons (30 ml) olive oil, ½ teaspoon dried oregano, salt, and black pepper on a sheet pan.
    • Spread in a single layer, cut-side down.
    • Roast in a preheated 400°F (200°C) oven for 25–30 minutes until the tomatoes are deeply caramelized and slightly shriveled, with some charring on the edges.

Ready when: Tomatoes are deeply browned with slightly shriveled skins and garlic is soft and golden

Tip: Cut-side down ensures the tomatoes caramelize rather than steam; don't stir them midway through roasting.

  2. Cool roasted vegetables

    • Remove the pan from the oven and let the tomatoes and garlic cool for about 5 minutes until they are warm but not piping hot.
    • This prevents the dip from becoming too runny.

Ready when: Vegetables are warm to the touch but no longer steaming

  3. Combine feta and yogurt

    • Place the room-temperature crumbled feta cheese and Greek yogurt into the bowl of a food processor.
    • Add the remaining 2 tablespoons (30 ml) olive oil and the remaining ½ teaspoon dried oregano.
    • Pulse until just combined, about 5–6 pulses.
    + Show details

Ready when: Mixture is barely combined but still has some small feta curds visible

Tip: Do not overmix—you want some texture; overmixing makes the dip gluey rather than airy.

  4. Add roasted tomatoes and garlic

    • Add the warm roasted tomatoes and garlic cloves, along with the lemon juice, to the feta mixture.
    • Process until smooth and fluffy, about 15–20 seconds, scraping down the bowl once halfway through.
    • The dip should be light and whipped in texture.
    + Show details

Ready when: Dip is smooth, fluffy, and slightly lighter in color than the feta alone; no large chunks remain

Tip: The warm tomatoes and garlic help soften and lighten the feta—this is why temperature matters.

  5. Season and taste

    • Pulse the dip 2–3 more times while tasting.
    • Add additional salt, black pepper, and a squeeze more lemon juice if needed to brighten the flavors.
    • The dip should taste bold and tangy with sweet undertones from the roasted tomatoes.

Ready when: Flavor is balanced: savory feta, sweet roasted tomatoes, bright acidity

Tip: Taste as you go; it's easier to add salt and acid than to remove them.

  6. Serve and garnish

    • Transfer the dip to a shallow serving bowl.
    • Drizzle with a little extra olive oil if desired.
    • Garnish with fresh basil, a pinch of red pepper flakes, and a crack of freshly ground black pepper.
    • Serve warm or at room temperature with crusty bread, pita, crackers, or fresh vegetables.

Ready when: Dip is plated and garnished, ready to serve

Tip: Serve warm within 30 minutes for the best texture; the dip firms up as it cools but is still delicious at room temperature.

Good to know

Tips
  • Room temperature matters: cold feta chunks won't blend smoothly. Leave it on the counter for 30 minutes before blending.
  • Cut tomatoes cut-side down during roasting to encourage deep caramelization and concentrate their sweetness.
  • Don't overmix the final blend—a few pulses are all you need. Overworking will make it dense and gluey instead of fluffy.
  • For a spicier dip, add a pinch of Aleppo pepper or smoked paprika instead of, or in addition to, the red pepper flakes.
Make ahead

You can roast the tomatoes and garlic up to 3 days ahead; store them in an airtight container in the refrigerator. The dip itself is best made within 2 hours of serving for the lightest, fluffiest texture, but you can blend the feta and yogurt base up to 1 day ahead and fold in the roasted tomatoes just before serving.

Storage & reheating

Store in an airtight container in the refrigerator for up to 4 days. The dip is best served warm; reheat gently in a small saucepan over low heat, stirring often, or in a 300°F (150°C) oven for 10 minutes. Do not freeze—the texture will become grainy when thawed.

Substitutions
  • plain Greek yogurt → Sour cream or crème fraîche. Use equal amounts; both will lighten the dip slightly and add tanginess. Crème fraîche is richer; sour cream is more acidic.
  • cherry tomatoes, halved → Plum tomatoes or halved regular tomatoes. Roast for 35–40 minutes until deeply caramelized; they contain more water and take longer.
  • dried oregano → Fresh oregano or dried marjoram. If using fresh oregano, use triple the amount and add it just before serving for best flavor.
  • crumbled feta cheese → Ricotta or labneh. Ricotta will be milder and creamier; labneh will be tangier and denser. Adjust salt accordingly.
