Ready when: Dry ingredients are evenly combined and no lumps of turmeric or baking soda remain
Tip: Whisk the dry ingredients thoroughly to distribute the turmeric evenly so the muffins have a consistent golden color
Mix wet ingredients
- In a large bowl, whisk together the eggs, coconut milk, sugar, neutral oil, and vanilla extract until well combined.
- The mixture should be smooth and the sugar mostly dissolved.

Ready when: The wet mixture is smooth and sugar is mostly incorporated
Tip: Room-temperature eggs and coconut milk combine more smoothly and create a better texture in the final muffins
Combine wet and dry
- Pour the wet ingredients into the dry ingredients.
- Fold gently with a spatula or wooden spoon, stirring just until the flour is barely moistened.
- A few small lumps are okay—do not overmix or the muffins will be tough and dense.

Ready when: Dry ingredients are just moistened with small lumps visible
Tip: Overmixing activates the gluten and makes tough, dense muffins. Stop stirring as soon as you don't see streaks of flour
Fold in shredded coconut
- Gently fold in the unsweetened shredded coconut until evenly distributed throughout the batter.

Ready when: Each cup is filled evenly and tops are sprinkled (if desired)
Tip: Use an ice cream scoop or divide batter by eye to ensure even-sized muffins that bake at the same rate
Bake muffinsOven 375°F / 190°C
- Place the muffin tin in the preheated 375°F (190°C) oven and bake for 20–22 minutes, until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs or clean.
- The tops should be set and lightly golden, and a light press should spring back.

Ready when: Toothpick comes out with a few moist crumbs; tops are set and lightly golden; muffin top springs back when lightly pressed
Tip: Muffins continue to cook slightly as they cool, so remove them while just barely set in the center to avoid dryness. If your oven runs hot, check at 18 minutes
Cool in pan
- Let the muffins cool in the tin for 5 minutes.
- This allows them to set enough to handle without falling apart.

- Turn the muffins out onto a wire rack or plate to cool completely, or serve warm.
- They are best enjoyed within a few hours of baking but will keep in an airtight container.

Good to know
Tips
- Toast your own shredded coconut in a dry skillet over medium heat for 2–3 minutes, stirring constantly, to use as a crunchy topping. Watch closely as it browns quickly
- For a moister muffin, reduce the oven temperature to 350°F (175°C) and bake for 24–26 minutes instead
- These muffins pair beautifully with a light dusting of extra turmeric mixed with powdered sugar on top for a more dramatic presentation
- If your muffin tin has darker nonstick coating, reduce the oven temperature by 25°F (14°C) to prevent over-browning on the bottoms
Storage & reheating
Store in an airtight container at room temperature for up to 2 days. Keep refrigerated for up to 4 days. Freeze wrapped individually in plastic wrap in a freezer bag for up to 2 months; thaw at room temperature for 1–2 hours or warm gently in a 300°F (150°C) oven for 8–10 minutes until soft.
Substitutions
- neutral vegetable oil → melted unsalted butter. Use an equal amount (⅓ cup / 80 ml); the muffins will have a richer, more buttery flavor
- unsweetened shredded coconut → finely chopped crystallized ginger or dried pineapple chunks. Use the same amount (¾ cup / 65 g); adds tartness or spice to complement the turmeric
- granulated sugar → coconut sugar or light brown sugar. Use the same amount (¾ cup / 150 g); brown sugar adds deeper molasses notes
- ground cardamom → ground ginger or cinnamon. Use ½ teaspoon (1 g); ginger adds spice, cinnamon adds warmth
