Steps

Before you start
  • Chill the sugarcane juice in the fridge for at least 2 hours so the drink stays cold without over-diluting.
  • Use fresh or frozen-then-thawed 100% sugarcane juice with no added sugar; shelf-stable bottled versions can taste cooked.
  • Calamansi vary in tartness: taste one before juicing and be ready to adjust with the extra juice or a pinch of salt.
  • Put two serving glasses in the freezer for 10 minutes.
  1. Chill the glasses

    • Place two 12 oz (350 ml) glasses in the freezer.
    • Measure 1½ cups (360 ml) chilled sugarcane juice, stirring it first since the sugars settle.

Ready when: Glasses feel icy and lightly frosted

Tip: Keep the juice in the fridge until the moment you shake, as warm juice melts ice too fast.

  2. Juice the calamansi

    • Cut about 18 calamansi in half and squeeze over a fine-mesh strainer set over a bowl until you have 6 tablespoons (90 ml) juice.
    • Press the pulp lightly, then discard the seeds.
    • Halve 2 more calamansi and set aside for garnish.

Ready when: Juice measures 6 tablespoons and is free of seeds

Tip: Avoid squeezing the peels hard, which releases bitter oils into the juice.

  3. Grate the ginger

    • Peel the ginger with the edge of a spoon and finely grate 1 tablespoon (8 g) on a microplane.
    • Keep the juices and pulp together.
    + Show details

Ready when: Ginger is a wet, fine pulp with no stringy chunks

  4. Combine in shaker

    • In a cocktail shaker or 1-quart (1 L) jar, combine the sugarcane juice, calamansi juice, grated ginger and salt.
    • Add 2 cups (280 g) ice cubes and seal the lid tightly.

Ready when: Shaker is about two-thirds full and lid is sealed

Tip: Check the lid seals before shaking to avoid sticky splashes.

  5. Shake hard

    • Shake vigorously for 15 to 20 seconds, until the outside of the shaker is very cold and frosty and the liquid looks pale and foamy on top.

Ready when: Shaker is frosty and the juice is lightly foamy

Tip: Do not shake longer than 20 seconds or the drink will become watery.

  6. Taste and adjust

    • Open the shaker and taste a spoonful.
    • If too sweet, add 1 teaspoon more calamansi juice; if too sharp, add a splash more sugarcane juice.
    • Give one more quick shake if you adjust.
    + Show details

Ready when: Balanced: sweet first, then bright citrus and a gentle ginger warmth

Tip: A tiny pinch more salt makes the sweetness taste rounder.

  7. Strain and pour

    • Remove the glasses from the freezer and divide the fresh 1½ cups (210 g) ice between them.
    • Strain the cooler through a fine-mesh strainer over the ice, dividing evenly (about 10 oz / 300 ml each).
    + Show details

Ready when: Glasses are filled about ¾ full with a pale golden-green drink

Tip: Straining removes the used, half-melted ice and ginger fibers for a cleaner sip.

  8. Garnish and serve

    • Squeeze a calamansi half into each glass, then drop in the rind.
    • Slap the mint sprigs between your palms, tuck one into each glass if using, and serve immediately with a straw.

Ready when: Fragrant citrus aroma rises from the glass

Good to know

Tips
  • Always strain calamansi juice: the seeds turn bitter when shaken hard.
  • If you only have a juicer-pressed sugarcane juice that has darkened, add an extra tablespoon of calamansi juice to brighten the flavor.
  • For a sparkling version, shake without the fresh serving ice and top each glass with 2 tbsp (30 ml) chilled soda water.
  • Pre-chilling the juice and glasses is the secret to a cold drink without watery dilution.
Make ahead

"Mix the sugarcane juice, calamansi juice, ginger and salt (no ice) up to 4 hours ahead and refrigerate in a sealed jar. Shake with ice just before serving."

Storage & reheating

"Best served immediately. The unshaken base keeps covered in the fridge up to 8 hours (fresh sugarcane juice darkens and ferments quickly). Do not leave at room temperature for more than 30 minutes. Freeze the base in ice cube trays for up to 1 month and blend with a splash of water for a slushy; do not reheat."

Substitutions
  • calamansi juice → 3 tbsp (45 ml) fresh lime juice plus 3 tbsp (45 ml) fresh orange or tangerine juice. Mimics calamansi's sour-sweet, floral profile.
  • sugarcane juice → Coconut water sweetened with 1 tbsp (15 ml) simple syrup per cup. Lighter and less grassy; use 1½ cups (360 ml) coconut water total.
  • fresh mint sprigs → Vietnamese balm (kinh giới) or basil leaves. Gives an herbal aroma; use 3 to 4 leaves per glass.
  • fresh ginger → ¼ tsp ground ginger. Less fresh and bright; whisk into the juice well before shaking.
