Steps
Before you start
- Cook quinoa ahead if not already done (can be made 1 day ahead and chilled)
- Have all fresh ingredients prepped and at room temperature
- Juice the limes just before dressing to maximize flavor
Cook the quinoa
- Rinse the quinoa in a fine-mesh sieve under cold running water for 1 minute, tilting and stirring gently to remove any bitter coating.
- In a medium saucepan, combine the rinsed quinoa with 2 cups water and 0.5 teaspoon kosher salt.
- Bring to a boil over high heat, then reduce the heat to low, cover with a lid, and simmer gently for 15 minutes, until the water is absorbed and the quinoa is tender with visible white spirals.

Ready when: All water is absorbed; quinoa grains are translucent with a white spiral visible on each grain
Tip: Rinsing removes saponins, which can give a soapy taste. Don't skip this step.
Cool the quinoa
- Spread the cooked quinoa on a large plate or shallow dish and let it cool to room temperature, stirring once or twice to help it cool evenly, about 5–10 minutes.

Ready when: Quinoa feels cool to the touch when you stir it
Prepare the dressing
- In a small bowl, whisk together the lime juice, olive oil, ground cumin, ground coriander, 0.5 teaspoon kosher salt, and black pepper.
- Taste and adjust seasoning as needed, remembering that the salad will be cold and flavors mellow slightly.

Ready when: Dressing is well combined and spices are dissolved
Tip: Taste at this stage; the dressing should be bold and balanced because it's the only seasoning source.
Prep remaining ingredients
- While the quinoa cools, seed the jalapeño (cut it in half lengthwise and scrape out the seeds and white membrane for less heat, or leave some seeds for more spice) and finely mince the flesh.
- Dice the red onion into small pieces.
- Roughly chop the cilantro, keeping some leaves whole for garnish.

Ready when: All vegetables are cut and ready to add
Tip: Wear gloves when handling jalapeños or wash your hands immediately after; the capsaicin oils can irritate eyes and skin.
Assemble the salad
- Transfer the cooled quinoa to a large mixing bowl.
- Add the drained black beans, thawed corn, minced jalapeño, diced red onion, and most of the chopped cilantro.
- Pour the lime-cumin dressing over everything and gently toss with a fork or wooden spoon until all ingredients are evenly coated and combined.

Ready when: Everything is mixed, no dry quinoa at the bottom, and dressing coats all grains
Tip: Mix gently to keep the corn kernels and beans whole and the salad from looking mushed.
Chill and finish
- Cover and refrigerate the salad for at least 15 minutes (or up to 4 hours) so flavors meld and the salad chills.
- Just before serving, taste again and adjust salt, lime juice, or jalapeño heat as desired.
- Gently stir, then divide among bowls.
- Top with reserved cilantro leaves and diced avocado if using.
- Serve cold.

Ready when: Salad is chilled and flavors have melded; no visible separation of oil and acid
Tip: Don't add avocado until just before serving or it will brown. You can also serve this salad at room temperature straight after assembly for a brighter, fresher taste.
Good to know
Tips
- For a spicier salad, leave the jalapeño seeds in or add a pinch of cayenne to the dressing.
- This salad is perfect for meal prep; store the assembled salad (without avocado) in the fridge and portion out as needed throughout the week.
- Serve over a bed of mixed greens for a heartier salad, or in lettuce cups for a low-carb version.
- The salad can be served at room temperature for a fresher, more vibrant taste, or chilled for a more muted flavor profile—choose based on the weather and your preference.
Make ahead
Prepare the quinoa, black beans, and dressing up to 1 day ahead and store separately. Assemble up to 4 hours before serving. Add fresh cilantro and avocado just before serving.
Storage & reheating
Refrigerate in an airtight container for up to 3 days. The salad keeps best without avocado. Stir gently before serving, as the dressing may separate slightly. Not suitable for freezing. Serve cold or at room temperature.
Substitutions
- white_quinoa → Red or tri-color quinoa. Use the same amount; cooking time and method remain the same. Red quinoa is slightly earthier.
- canned black beans, drained and rinsed → Pinto beans or kidney beans. Use the same amount. Pinto beans are milder; kidney beans are firmer and hold their shape well.
- frozen corn kernels, thawed → Fresh corn kernels (in season) or canned corn, drained. Use the same amount. Fresh corn has a sweeter taste; adjust salt slightly if using fresh.
- jalapeño pepper → Serrano pepper (hotter) or a pinch of cayenne (more uniform heat). Use one serrano or ¼ teaspoon cayenne for a similar heat level. Adjust to taste.
