Spiced Potato and Cauliflower Toss with Cilantro

A vibrant Middle Eastern–inspired pan-fried side dish featuring tender potatoes and cauliflower florets tossed with warm cumin and coriander, finished with fresh cilantro and a squeeze of lemon. The vegetables develop golden-brown edges while staying creamy inside, and the spices release their aromatic oils as they bloom in oil. Perfect alongside roasted meats, kebabs, or as a vegetarian main.

Steps

Before you start
  • Cut potatoes and cauliflower into ¾-inch (2 cm) pieces so they cook evenly
  • Have cilantro and lemon ready to finish the dish
  • Use a large skillet (12-inch) to ensure vegetables aren't crowded
  1. Bloom the spices

    • Heat the 4 tbsp (60 ml) of olive oil in a 12-inch (30 cm) skillet over medium heat.
    • Once shimmering, add the 1.5 tsp (3 g) cumin seeds and cook for 30 seconds, stirring constantly, until they become fragrant and darken slightly.
    • Add the 1 tsp (2 g) ground coriander and cook for another 15 seconds.
    • Do not let the spices burn.

Ready when: spices are fragrant and cumin seeds have darkened

Tip: Blooming the spices releases their essential oils and prevents raw spice flavor

  2. Add aromatics

    • Add the diced onion (about 90 g or ½ medium) to the spiced oil and stir frequently.
    • Cook for 2 minutes until the onion begins to soften and becomes translucent at the edges.
    • Add the 3 minced garlic cloves and cook for another 30 seconds, stirring, until fragrant.

Ready when: onion is translucent and garlic is fragrant

Tip: Stir constantly to prevent garlic from browning and becoming bitter

  3. Add potatoes and cauliflower

    • Add the 1.25 lb (570 g) potato cubes and 600 g cauliflower florets to the skillet, stirring to coat everything with the spiced oil.
    • The vegetables should fill the skillet but not be piled too high—they need space for browning.
    • Season with a generous pinch of salt and freshly ground black pepper.
    + Show details

Ready when: vegetables are evenly coated with oil and spices

Tip: Don't stir for the first 3 minutes—let the vegetables develop golden edges

  4. First sear and stir

    • Let the mixture cook undisturbed for 3 minutes, allowing the potato and cauliflower pieces on the bottom to brown.
    • Stir everything together and spread it back out in a single layer.
    • Let it sear again for 2 minutes without stirring.
    + Show details

Ready when: potato and cauliflower pieces have light golden-brown spots

Tip: Resist the urge to stir constantly; this searing develops deeper, sweeter flavors

  5. Add water and simmer

    • Pour the ½ cup (120 ml) of water around the vegetables and stir once to combine.
    • The water will bubble vigorously.
    • Reduce the heat to medium-low, cover the skillet with a lid (or a baking sheet if you don't have a lid), and simmer gently for 12–15 minutes until the potatoes are fork-tender throughout and the cauliflower is creamy and soft but not mushy.
    + Show details

Ready when: a fork pierces the largest potato piece with no resistance; cauliflower is soft throughout

Tip: Check tenderness at 12 minutes; if any liquid remains, cook uncovered for 1–2 minutes more to evaporate it

  6. Finish and plate

    • Remove from heat.
    • Taste and adjust seasoning with salt and pepper as needed.
    • Stir in the ½ cup (15 g) of fresh cilantro and the zest and juice from 1 lemon (about 2 tbsp or 30 ml juice).
    • Gently toss to combine—the cilantro will brighten as you fold it in.
    • Serve warm.
    + Show details

Ready when: cilantro is evenly distributed and lemon juice is absorbed into the vegetables

Tip: Add cilantro and lemon right before serving so the cilantro stays bright green and the lemon aroma is fresh

Good to know

Tips
  • Cut all vegetables into uniform ¾-inch (2 cm) pieces so everything cooks at the same rate. Larger pieces will be underdone when smaller ones are mushy.
  • If your cauliflower is very large, halve each floret lengthwise so the florets cook evenly and aren't just a tender center with a raw exterior.
  • For deeper color and more caramelization, increase the heat to medium-high during the first two searing phases (steps 3–4). Watch carefully to prevent burning.
  • This dish is excellent alongside grilled lamb, roasted chicken, or served as a vegetarian main with a dollop of yogurt and warm flatbread.
Make ahead

Prepare the vegetables (cut potatoes and cauliflower, dice onion, mince garlic) up to 4 hours ahead and refrigerate in separate containers. The cooked dish can be made up to 1 day in advance, refrigerated, and reheated gently on the stovetop with a splash of water over medium heat for 3–5 minutes until warm.

Storage & reheating

Store in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop over medium heat with 2–3 tablespoons of water, stirring occasionally, for 3–5 minutes until warm throughout. The dish does not freeze well due to texture changes in the vegetables.

Substitutions
  • cumin seeds → 1 tsp ground cumin instead of cumin seeds. Add it with the coriander in step 1 for a more powdery, slightly less toasted flavor
  • fresh cilantro → fresh flat-leaf parsley. Use the same amount for a more neutral, slightly peppery herb finish; the dish will be less aromatic
  • lemon → lime or red wine vinegar. Use the juice from 1 lime or 1 tbsp (15 ml) vinegar for a different acidity and character
  • olive oil → vegetable oil or clarified butter (ghee). Ghee will add a subtle nutty, rich depth; use the same amount
