Steps
Before you start
- Have sourdough discard at room temperature—cold discard will make the dough stiff and harder to work with
- Preheat your air fryer to 375°F (190°C) for at least 5 minutes
- Line a cutting board or parchment with a light dusting of lentil flour to prevent sticking
- Toast the cumin seeds in a dry skillet over medium heat for 1–2 minutes until fragrant, then let cool
Mix the dough
- In a medium bowl, combine sourdough discard, lentil flour, toasted cumin seeds, turmeric, coriander, black pepper, and sea salt.
- Stir well with a wooden spoon.
- Add olive oil and warm water, stirring until a stiff, cohesive dough forms.
- The mixture should come together without being wet or sticky—if it's too dry, add 1 teaspoon water at a time.

Ready when: Dough is uniform and holds together when squeezed
Tip: Sourdough discard varies in moisture; add water slowly to avoid a wet dough that won't crisp up in the air fryer.
Roll out the dough
- Lightly dust a clean work surface with lentil flour.
- Place the dough on it and roll or pat it out to about 1/8-inch (3 mm) thick—roughly the thickness of a thin cracker.
- Work gently and evenly.
- If the dough springs back, let it rest for 1 minute and try again.

Ready when: Dough is thin, even, and no thicker than 1/8 inch
Tip: Thinner crackers bake crispier; if uneven, they'll cook at different rates. Use a rolling pin with light, even pressure.
Cut the crackers
- Using a sharp knife or pastry wheel, cut the rolled dough into 1.5 × 1.5-inch (4 × 4 cm) squares or rectangles.
- Alternatively, use cookie cutters for fun shapes.
- Transfer each cracker to a sheet of parchment paper, spacing them 1/2 inch apart—they will puff slightly and crisp as they cook.

Ready when: All pieces are cut and arranged on parchment
Tip: Keep pieces similar in size so they finish cooking at the same time. A sharp knife prevents dragging, which tears the dough.
Air fry the crackersOven 375°F / 190°C
- Place parchment paper with crackers into the air fryer basket in a single layer.
- Cook at 375°F (190°C) for 10–12 minutes.
- After 6 minutes, gently shake or stir the basket to ensure even cooking.
- The crackers are done when they're light golden brown and feel crispy to the touch—they should snap cleanly, not bend.

Ready when: Golden brown, crispy, snap cleanly when broken
Tip: Smaller crackers may finish in 10 minutes; larger ones may need closer to 12. Watch the edges—they brown before the centers crisp, so don't rely solely on color.
Cool and crisp
- Transfer the warm crackers to a cooling rack and let them sit for 3–5 minutes.
- As they cool, they will continue to firm up and become even crispier.
- Do not stack them until completely cool, or they will trap steam and soften.

Ready when: Crackers are cool to the touch and snap easily
Tip: Residual heat finishes the crisping—don't rush this step. If any crackers seem soft after cooling, pop them back into the air fryer at 350°F (175°C) for 2 minutes.
Good to know
Tips
- Toasting the cumin seeds before adding them intensifies their warm, nutty flavor—this is a crucial step that makes the crackers taste more complex and authentic.
- Sourdough discard can vary in activity level and water content. If your dough feels too wet, add lentil flour by the teaspoon; too dry, add water by the teaspoon. A cohesive, slightly stiff dough rolls most easily.
- Air frying is ideal for these crackers because it uses minimal oil while creating a crispy, even texture. If you don't have an air fryer, you can bake them: place on a parchment-lined baking sheet and bake at 375°F (190°C) for 12–15 minutes, rotating the pan halfway through.
- These crackers are naturally vegan and naturally leavened thanks to the sourdough discard. They're perfect for iftar platters, served alongside chutneys, hummus, or curried dips.
Make ahead
Prepare the dough up to 4 hours ahead; cover it loosely and refrigerate. Let it come to room temperature for 10 minutes before rolling. Baked crackers keep for up to 5 days if stored properly.
Storage & reheating
Room temperature (airtight container, 5 days): Keep crackers in a glass jar or sealed container away from moisture. Refrigerator (up to 2 weeks): Store in an airtight container; refresh in a 350°F (175°C) air fryer for 2 minutes if they soften. Freezer (up to 3 months): Freeze in a single layer on a tray, then transfer to a freezer bag. Thaw at room temperature for 15 minutes and crisp in the air fryer for 3–4 minutes at 350°F (175°C).
Substitutions
- lentil flour (red or yellow) → chickpea flour (besan) or all-purpose flour. Chickpea flour adds a similar nutty flavor and protein boost; use the same amount. All-purpose flour will give a milder taste but works if lentil flour is unavailable.
- cumin seeds → fennel seeds, caraway seeds, or nigella seeds. Toast the substitute the same way. Fennel adds sweetness, caraway brings earthiness, and nigella seeds offer a peppery bite.
- extra-virgin olive oil → neutral oil (vegetable or avocado oil) or ghee. Use the same amount. Ghee adds richness and extra flavor; neutral oils work well if you prefer a less peppery result.
- sourdough discard → plain yogurt or buttermilk. Use ¾ cup (180 ml) yogurt or buttermilk. The crackers will taste less tangy but will still be light and crispy. Add ¼ tsp baking soda if using yogurt or buttermilk to neutralize acidity.
