Steps

Before you start
  • Cook the lentils ahead of time if not using canned—brown or French lentils work best and hold their shape
  • Choose bell peppers that are sturdy and can stand upright; red, yellow, or orange peppers are slightly sweeter but any color works
  • Have your slow cooker ready and know its size (4-quart minimum recommended)
  1. Prep the peppers

    • Slice the top ½ inch from each bell pepper and set the tops aside.
    • Using a small spoon or knife, carefully remove and discard the seeds and white membranes from the inside of each pepper.
    • Pat the inside of each pepper dry with paper towels so the filling doesn't slide around.
    • Stand the hollow peppers upright on a cutting board.

Ready when: Peppers are hollow and dry inside

Tip: Pat the insides dry so the filling adheres better and the peppers cook evenly

  2. Sauté aromatics and zucchini

    • Heat 2 tablespoons olive oil in a large skillet over medium heat.
    • Add the diced onion and cook for 2–3 minutes until softened and fragrant.
    • Stir in the minced garlic and cook for another minute until aromatic.
    • Add the diced zucchini and sauté for 3–4 minutes, stirring occasionally, until the zucchini begins to soften and release some of its moisture.

Ready when: Zucchini is beginning to soften and has released visible liquid

Tip: Don't overcrowd the skillet; let the zucchini cook rather than steam

  3. Build the filling

    • Remove the skillet from heat.
    • Stir in the cooked lentils, canned diced tomatoes with their juice, cumin, cinnamon, paprika, and ¾ teaspoon salt.
    • Mix thoroughly until all ingredients are evenly combined and the spices are distributed.
    • Taste and adjust seasoning with black pepper and more salt if needed.
    • The filling should be moist but not soupy.

Ready when: All ingredients are combined and spices are evenly distributed

Tip: Taste as you go—the slow cooking will mellow the spices, so don't be shy with seasoning at this stage

  4. Fill the peppers

    • Spoon the filling evenly into each hollow pepper, packing it gently but firmly so each pepper gets about ¾ to 1 cup of filling.
    • The filling should come just to the rim of the pepper without spilling over.
    • Use any remaining filling to create a small bed in the bottom of the slow cooker.

Ready when: All four peppers are filled and standing upright

Tip: Fill from the bottom up and pack gently so the filling doesn't compress and leave gaps at the top

  5. Layer into slow cooker

    • Pour any remaining filling mixture into the bottom of your 4-quart slow cooker.
    • Carefully place the filled peppers upright in the slow cooker, nestling them into the filling on the bottom (they should sit snugly and not tip over).
    • Pour the 1 cup of vegetable broth around the peppers and filling, being careful not to pour directly into the peppers themselves.
    • The liquid should come about halfway up the sides of the peppers.
    + Show details

Ready when: Peppers are stable and liquid surrounds them

Tip: If the peppers seem wobbly, use small balls of foil to prop them upright so they don't tip during cooking

  6. Slow cook until tender

    • Cover the slow cooker and cook on low for 4 hours.
    • The peppers should be very tender and the skin slightly collapsed or wrinkled, and the filling should be hot throughout.
    • Do not stir during cooking, as this may cause the peppers to collapse or the filling to separate.
    + Show details

Ready when: Peppers are soft, skin may be slightly wrinkled, and filling is steaming hot

Tip: Resist opening the slow cooker during cooking, as heat loss will extend the cooking time

  7. Rest and finish

    • Turn off the slow cooker and let the peppers rest for 5 minutes with the lid on.
    • Carefully transfer each pepper to a serving plate or shallow bowl, using a large spoon or slotted spoon to support the bottom.
    • Spoon some of the warm braising liquid and any extra filling from the bottom of the slow cooker around each pepper.
    + Show details

Ready when: Peppers are plated and braising liquid is spooned around them

Tip: Use a slotted spoon under the entire pepper to prevent it from falling apart—it will be very soft

  8. Garnish and serve

    • While the peppers are still warm, scatter the pomegranate seeds over the top of each pepper.
    • If using, add a pinch of fresh parsley and a small handful of crumbled feta cheese to each.
    • Serve immediately, spooning some of the warm braising liquid from the plate over each pepper as you eat.

Ready when: Peppers are garnished and ready to serve

Tip: Add the pomegranate seeds just before serving so they stay fresh and tart; their burst of acidity brightens the warm, savory filling

Good to know

Tips
  • Brown or French lentils hold their shape much better than red or green lentils during the long slow cook; if using canned, drain and rinse well to remove excess sodium that can make the dish too salty.
  • If you don't have fresh pomegranate seeds on hand, fresh pomegranate molasses (a reduction of pomegranate juice) adds a wonderful tart note—drizzle 1 tablespoon over each pepper instead.
  • The peppers can also be cooked on high for 2–2.5 hours if you're short on time, though the texture will be less silky; watch them closely to avoid overcooking.
  • Serve with rice, couscous, or a dollop of Greek yogurt mixed with fresh mint and lemon for a more substantial meal.
Make ahead

Prepare the filling (steps 2–3) up to 1 day ahead and store in an airtight container in the refrigerator. Prep the peppers (step 1) on the day of cooking. Assemble into the slow cooker and proceed with cooking when ready—this allows flexibility if you want dinner at a specific time.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a microwave (about 2–3 minutes per pepper, covered) or in a covered skillet over medium-low heat with a splash of broth until warmed through. Do not freeze; the texture of the peppers and seeds will be compromised.

Substitutions
  • brown or French lentils, cooked → cooked chickpeas or farro, or cooked rice mixed with white beans. Use the same total volume (1.5 cups). Chickpeas will give a creamier texture; farro adds chewiness. Cooking time remains the same.
  • medium zucchini → diced eggplant, mushrooms, or summer squash. Cut into the same ½-inch cubes. Eggplant and mushrooms may release more moisture; reduce the broth to ¾ cup if using either.
  • diced tomatoes, canned → tomato sauce or crushed tomatoes; or 2 fresh medium tomatoes, diced. Use the same volume. Fresh tomatoes will give a brighter taste but less body; add ¼ cup more broth to compensate.
  • pomegranate seeds (arils) → fresh lemon juice or pomegranate molasses, or toasted pine nuts. Pomegranate molasses (1–2 tablespoons drizzled over) adds tartness; pine nuts (¼ cup toasted) add texture. Lemon won't provide the same textural pop.
