Slow Cooker Root Vegetable and Lentil Ragù
A hearty, deeply flavored vegetarian ragù built on layers of roasted root vegetables, earthy lentils, and tomato. Made entirely in the slow cooker, this British-inspired sauce grows richer as it cooks, developing sweetness from caramelized carrots and parsnips, umami from mushrooms, and body from tender lentils. Serve over pasta, polenta, or grain for a satisfying meat-free meal.

- About 5 cups (1.2 L), enough for 1 lb (450 g) pasta
Steps
Before you start
- Prep all vegetables before you start—they go straight into the slow cooker
- Use a 6-quart (5.7 L) or larger slow cooker to avoid overflow
- Brown the mushrooms first for deeper flavor (optional but recommended)
Brown the mushrooms
- Heat 1 tbsp (15 ml) of the olive oil in a large skillet over medium-high heat.
- When shimmering, add the chopped mushrooms in a single layer and let them cook undisturbed for 4–5 minutes until golden on one side.
- Stir and cook another 3–4 minutes until tender and any liquid has mostly evaporated.
- This concentrates their umami and deepens the final flavor.
- Transfer to a plate.

Ready when: Mushrooms are golden and any released liquid has mostly evaporated
Tip: Don't crowd the pan or stir too early; browning requires direct contact with the hot surface.
Assemble in slow cooker
- Transfer the browned mushrooms to a 6-quart (5.7 L) slow cooker.
- Add the prepared carrots, parsnips, celery, minced garlic, green lentils, crushed canned tomatoes with juice, tomato paste, vegetable stock, red wine, bay leaves, thyme sprigs, salt, and black pepper.
- Add the remaining 1 tbsp (15 ml) of olive oil.
- Stir to combine, making sure the lentils are submerged.

Ready when: All ingredients are in the slow cooker and lentils are partially submerged
Tip: Stir from the bottom to ensure the lentils don't clump together at the bottom of the cooker.
Cook on low
- Cover the slow cooker and set it to low.
- Cook for 8 hours, stirring once halfway through (after about 4 hours).
- The sauce should bubble very gently at the edges.

Ready when: Lentils are completely tender and break easily when pressed; carrots and parsnips are very soft; sauce is thick and unified
Tip: Resist the urge to lift the lid too often; each opening adds 15–20 minutes to the cooking time.
Finish and season
- Stir in the balsamic vinegar.
- Taste and adjust seasoning with more salt and pepper as needed.
- Remove the bay leaves and thyme sprigs if you prefer (they will have mostly dissolved into the sauce).
- The ragù should be thick enough to coat a spoon, with no visible liquid pooling on top.

Ready when: Balsamic is fully stirred in and sauce coats the back of a spoon
Tip: Add balsamic just before serving; it brightens the deep, earthy flavor without overpowering the vegetables.

Tips
- Slow cookers vary widely in temperature; if your ragù looks dry after 6 hours, add 0.25–0.5 cup (60–120 ml) stock and check again at 7 hours. Every cooker is different.
- For a chunkier texture, leave vegetables in ½-inch (1.3 cm) pieces; for a more cohesive sauce, cut them into ¼-inch (6 mm) dice, which will partly break down over 8 hours.
- Pair this ragù with egg pasta (pappardelle or tagliatelle shine here), creamy polenta, farro, barley, or roasted cauliflower steaks for a hearty, satisfying meal.
- Finish each serving with a pinch of fresh thyme leaves, grated pecorino or parmesan (if not vegan), and a drizzle of good olive oil for brightness and richness.
Make ahead
Prepare the vegetables and store them separately in an airtight container in the refrigerator for up to 1 day. Assemble and cook the ragù following the recipe; the slow cooker method makes it ideal for making a day or two ahead.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: up to 5 days in an airtight container; reheat gently on the stovetop over medium-low heat, adding a splash of stock or water if needed. Freezer: up to 3 months in an airtight container or freezer bag; thaw in the refrigerator overnight and reheat on the stovetop or in the slow cooker on low for 1–2 hours.
Substitutions
- green lentils → Brown or French (Le Puy) lentils. Use the same amount. Brown lentils cook slightly faster (7–8 hours on low); French lentils hold their shape better but take up to 9 hours. Avoid red lentils, which will break down into a purée.
- dry red wine → Extra vegetable stock or dry white wine. Replace with 0.5 cup (120 ml) stock or white wine for a lighter sauce without the tannin depth; the finished ragù will be slightly brighter.
- cremini or button mushrooms → Diced aubergine (eggplant) or extra carrots. Use 8 oz (225 g) diced aubergine (no browning needed) or increase carrots to 1.5 lb (680 g); the ragù will be less earthy but still satisfying.
- balsamic vinegar → Red wine vinegar or aged sherry vinegar. Use 1–1.5 tbsp (15–22 ml) for a more acidic finish; adjust to taste. Balsamic adds subtle sweetness, while wine vinegar is sharper.
