  • Use a 5- to 6-quart (4.7–5.7 L) slow cooker; a smaller one may overflow.
  • Drain and rinse the canned black beans so the chili isn't salty or gluey.
  • Plan on 6–7 hours on LOW, or 3½–4 hours on HIGH. Chicken is done when it reaches 165°F (74°C) and shreds easily.
  • Slow cookers vary, so check the chicken at the earliest time listed.
  1. Prep the vegetables

    • Dice the onion and bell pepper, mince the garlic, and drain and rinse the black beans in a strainer under cold water.

Tips

Make ahead

Chili tastes even better the next day. Cook through step 7, cool, and refrigerate up to 3 days. Add the lime juice and toppings after reheating.

Storage & reheating

Room temperature: no more than 2 hours. Refrigerator: up to 4 days in an airtight container. Freezer: up to 3 months in freezer-safe containers, leaving ½ inch (1.3 cm) headspace. Thaw overnight in the fridge and reheat on the stovetop over medium-low heat, stirring occasionally, until steaming hot (165°F / 74°C), adding a splash of broth if thick.

Substitutions
  • boneless, skinless chicken breasts → boneless, skinless chicken thighs. Same weight; they stay juicier and can cook 30–60 minutes longer without drying out.
  • black beans → pinto or cannellini beans. Use the same amount, drained and rinsed.
  • frozen corn kernels → canned corn, drained. Use 1½ cups (about one 15-oz can) and add at the same time.
  • sour cream → plain Greek yogurt. Use the same amount for a tangier, higher-protein topping.
