Steps

Before you start
  • Measure the brown rice accurately for proper water absorption
  • Have all ingredients prepped and near the stove before you begin
  • Use a heavy-bottomed pot with a tight-fitting lid for even cooking
  1. Rinse and prepare rice

    • Place the rinsed brown rice in a fine-mesh strainer and drain well.
    • Have the ginger minced and measured, sesame oil and soy sauce ready, and scallion whites separated from the greens.

Tip: Rinsing removes excess starch and prevents the rice from becoming gummy.

  2. Toast ginger briefly

    • Heat a medium heavy-bottomed pot over medium-high heat.
    • When hot, add the minced ginger and stir constantly for about 1 minute until fragrant.
    • You'll smell warm, peppery notes as the ginger releases its oils.

Ready when: Ginger is fragrant and lightly golden at the edges

Tip: Don't skip this step—toasting the ginger deepens its flavor significantly.

  3. Add rice and toast

    • Pour the drained brown rice into the pot with the ginger and stir constantly for 2 minutes.
    • The rice will become slightly dry-looking and start to smell nutty.

Ready when: Rice appears dry and smells toasty

Tip: Toasting the rice before boiling gives it a nuttier, deeper flavor.

  4. Add water and seasonings

    • Carefully pour in the 2¾ cups (650 ml) water—it will steam briefly.
    • Add the salt.
    • Stir well to combine and break up any clumps.
    • Increase heat to high and bring to a boil, stirring occasionally.

Ready when: Mixture reaches a rolling boil

Tip: The ratio of water to rice is crucial for brown rice; use a pot with a reliable lid to trap steam.

  5. Reduce heat and cover

    • Once boiling, reduce heat to low.
    • Place the lid on the pot and cook undisturbed for 30 minutes.
    • Do not lift the lid or stir during this time, as steam loss will dry out the rice.
    + Show details

Ready when: All water is absorbed and rice is tender

Tip: Resist the urge to peek—every time you open the lid, steam escapes and cooking time increases.

  6. Rest and finish

    • Remove the pot from heat.
    • Let it sit covered for 10 minutes.
    • This allows the rice to finish steaming and become fluffy.
    • Remove the lid and fluff the rice with a fork to separate the grains.

Ready when: Rice is fluffy and grains are separate

Tip: Fluffing with a fork instead of stirring keeps the grains intact and prevents mushiness.

  7. Season with sesame and soy

    • Drizzle the sesame oil and soy sauce over the rice.
    • Add the scallion whites if using.
    • Fold gently with a wooden spoon until evenly distributed, about 1 minute.
    • Taste and adjust seasoning if needed.

Ready when: Sesame oil and soy are evenly mixed throughout

Tip: Fold gently to avoid breaking the grains. If you prefer more salt or nuttiness, add a few drops of soy sauce or a drizzle more sesame oil.

  8. Garnish and serve

    • Transfer to a serving bowl.
    • Top with toasted sesame seeds and scallion greens if using.
    • Serve warm.

Tip: Sesame seeds add a delicate crunch and visual appeal—toasting them first in a dry pan for 1 minute intensifies their nutty flavor.

Good to know

Tips
  • Toasting the rice before simmering brings out deeper, nuttier flavors and prevents a bland result.
  • Brown rice requires more water and longer cooking than white rice—don't rush the 30-minute simmer or the grains won't be tender.
  • For extra flavor, use chicken or vegetable broth instead of water. The cooking time and ratio remain the same.
  • If your rice comes out slightly undercooked, add 2–3 tablespoons (30–45 ml) more water, cover, and simmer on low for another 5 minutes.
Make ahead

You can cook the rice up to 4 hours ahead and reheat it gently. Store cooled rice in an airtight container in the refrigerator. To serve, warm gently in a covered pot over low heat with a splash of water, stirring occasionally, for about 5 minutes. The sesame oil and soy sauce are best added right before serving to preserve their aromatic quality.

Storage & reheating

Room temperature: up to 2 hours in an airtight container. Refrigerator: up to 4 days in an airtight container. Freezer: up to 3 months in a freezer-safe container (thaw in the refrigerator overnight, then reheat gently). Reheat covered over low heat with a splash of water, stirring occasionally, until warmed through (about 5 minutes for chilled rice).

Substitutions
  • fresh ginger → 1 teaspoon (2 g) ground ginger. Use less of the ground version as it is more concentrated. Add it in step 2 with the rice rather than toasting it separately, and reduce toasting time to 30 seconds.
  • toasted sesame oil → peanut oil or neutral vegetable oil with a few drops of ginger extract. The rice will be less aromatic but still delicious. Add the ginger extract in the final step.
  • soy sauce → tamari or coconut aminos. Tamari is gluten-free; coconut aminos is lighter and slightly sweeter. Use the same amount.
  • long-grain brown rice → short-grain brown rice or a brown rice blend. Short-grain may need slightly less water (2½ to 2⅝ cups / 590–620 ml). Check at the 25-minute mark to avoid overcooking.
