Scrambled Eggs, Cheddar and Jalapeño on Sourdough
A vibrant breakfast sandwich with fluffy scrambled eggs mixed with sharp cheddar and fresh jalapeño heat, served on toasted sourdough. The creamy eggs and melting cheese contrast beautifully with the bright, spicy pepper kick and tangy bread. Ready in 15 minutes.
Steps
Before you start
- Gather eggs and cheese at room temperature for even cooking
- Have all ingredients prepped before you start cooking (prep work is quick)
- Toast the bread while the eggs cook to time everything together
Toast the bread
- Place the 4 slices of sourdough (about 3/4 inch thick) in a toaster and toast until golden brown and crispy on the outside but still tender inside, 2–3 minutes.
- Set aside on a clean surface.

Ready when: Sourdough is golden brown and crispy outside
Tip: Don't over-toast—you want it firm but not hard, so it still holds the eggs without breaking.
Prep the jalapeños
- Cut 2 fresh jalapeños in half lengthwise.
- Scoop out the seeds and white ribs with a small spoon (this removes most of the heat).
- Finely dice the jalapeño flesh into 1/4-inch (6 mm) pieces.
- Wash your hands after handling the peppers.

Tip: Remove the seeds and ribs if you prefer mild heat; keep them for more spice. Wear gloves if your hands are sensitive to capsaicin.
Whisk the eggs
- Crack 4 large eggs into a small bowl.
- Add a pinch of kosher salt and freshly ground black pepper.
- Whisk vigorously with a fork for about 20 seconds until the yolks and whites are fully combined and the mixture is pale yellow.

Ready when: Eggs are pale yellow and completely mixed
Tip: Thorough whisking incorporates air, which makes the scrambled eggs fluffier and lighter.
Cook the eggs
- Place an 8-inch (20 cm) nonstick skillet over medium heat and add 1 tablespoon (14 g) cold unsalted butter.
- Once the butter is melted and foaming (about 30 seconds), pour in the whisked eggs.
- Let them sit undisturbed for 10–15 seconds so they begin to set on the bottom.

Ready when: Butter foams and eggs start to set on the bottom
Tip: Medium heat is crucial—high heat will cause the eggs to become rubbery and brown unevenly.
Scramble gently
- Using a silicone spatula or wooden spoon, gently push the cooked eggs from the edges toward the center, tilting the pan so uncooked egg flows to the edges.
- Do this for 2–3 minutes, stirring slowly and letting the eggs set between movements.
- When the eggs are mostly set but still slightly glossy on top, fold in the diced jalapeños and shredded cheddar cheese.
- Continue stirring gently for 30–45 seconds until the cheese melts and is evenly distributed.

Ready when: Eggs are creamy and just set, cheese is melted and distributed throughout
Tip: Remove the pan from heat when eggs look slightly underdone—residual heat will continue cooking them to perfect creamy consistency. Overcooked eggs become watery.
Assemble the sandwich
- Divide the scrambled eggs evenly between 2 of the toasted sourdough slices (about 3/4 cup per sandwich).
- Top each with a second slice of toasted sourdough, pressing gently so the top slice settles into the eggs.
- Cut each sandwich in half diagonally if desired, and serve immediately.

Tip: Serve right away while the toast is still warm and the eggs are at their creamiest.
Good to know
Tips
- For less spice, seed the jalapeños completely; for more heat, leave the seeds and white ribs in. You can also roast or pan-char the jalapeños first for deeper, smoky flavor.
- Soft scrambled eggs are all about removing the pan from heat just before they look fully set—they continue cooking from residual warmth and will be creamy rather than dry.
- Toast the bread while you cook the eggs to time everything perfectly so the sandwich comes together while both components are hot.
- Add fresh cilantro, avocado slices, or crispy bacon for extra flavor and texture.
Storage & reheating
This sandwich is best eaten fresh. Leftover scrambled eggs can be refrigerated in an airtight container for up to 2 days and reheated gently in a nonstick skillet over low heat with a splash of milk or water to restore creaminess, but they will not have the same texture as freshly made. The sandwich itself does not reheat well once assembled.
Substitutions
- sharp cheddar cheese → Gruyère, Emmental, or Monterey Jack cheese. Use the same amount (3/4 cup shredded). Gruyère adds nuttiness, while Monterey Jack is milder and creamier.
- fresh jalapeño peppers → Serrano peppers or fresh cayenne peppers. Use the same amount. Serranos are hotter; cayenne is milder. Adjust by taste in cooking.
- sourdough bread → Ciabatta, focaccia, or thick-cut whole wheat bread. Use 4 slices of similar thickness. Focaccia will make a richer, oilier sandwich; whole wheat adds earthiness.
- unsalted butter → Extra-virgin olive oil or ghee. Use 1 tablespoon (15 ml) olive oil or same amount of ghee. Olive oil adds a fruity note; ghee creates richer, nuttier eggs.
