
Sausage, Egg and Potato Breakfast Burritos

Steps
Before you start

Start the potatoes

Finish the potatoes

Crisp in a dry skillet for 1 minute per side if desired."
Substitutions
- bulk breakfast sausage → Mexican chorizo or crumbled plant-based sausage. Chorizo is greasier and spicier; drain it well. Plant-based may need an extra teaspoon of oil.
- Yukon Gold potatoes → Frozen shredded hash browns (about 3 cups / 360 g). Cook straight from frozen in the oil for 8 to 10 minutes until crisp.
- sharp cheddar cheese → Pepper Jack or Monterey Jack. Pepper Jack adds mild heat and melts very smoothly.
- 10-inch (25 cm) flour tortillas → Whole wheat flour tortillas. Warm them a little longer so they stay pliable.
