
Sahlab-Free Date Juice with Cardamom
A silky, naturally sweet Saudi-style date drink made by soaking Medjool dates, blending them with cold water and freshly ground cardamom, and straining. No sahlab or added sugar needed.

Steps
Before you start
- Plan for at least 2 hours of soaking time, plus 30 minutes of chilling.
- Check each date for pits, even in 'pitted' dates, to protect your blender.
- Use green cardamom pods and grind the seeds fresh for the best aroma.
- Chill your serving glasses or pitcher if you want the juice very cold.
Prepare the dates
- Tear each date in half and remove the pit and any stem caps.
- Check that no pit fragments remain.
- Place the dates in the medium bowl.

Ready when: All dates are pit-free and torn into halves.
Tip: Pits left in the dates can damage blender blades.
Soak the dates
- Boil the water, let it cool for 5 minutes, then pour 1 cup (240 ml) over the dates.
- Press the dates under the water with a spoon.
- Let them soak for 2 hours at room temperature.

Ready when: Dates are very soft and squish easily when pressed with a spoon; the water is amber and cloudy.
Tip: If your dates are dry or firm, soak for 3 hours or use water that is still quite hot.
Grind the cardamom
- Crack open the cardamom pods and discard the husks.
- Grind the black seeds to a fine powder in a mortar or spice grinder, about 30 seconds.

Ready when: Seeds are a fine, fragrant powder with no whole seed pieces.
Blend the juice
- Pour the dates and their soaking liquid into the blender.
- Add the 3 cups (710 ml) cold water, ground cardamom, and the pinch of salt.
- Blend on high for 45 to 60 seconds.

Ready when: The mixture looks uniformly tan and creamy, with no visible chunks of date skin.
Tip: Do not blend longer than 1 minute; over-blending can make the juice gluey.
Strain the juice
- Set the fine-mesh sieve (lined with a nut milk bag or cheesecloth if you want it extra smooth) over the pitcher.
- Pour in the blended mixture in two batches, pressing the pulp with a spoon to extract the liquid.
- Discard or save the pulp.

Ready when: Pulp in the sieve is thick and fairly dry; the juice is smooth.
Tip: Press, don't scrape, to avoid pushing gritty bits through the sieve.
Chill and season
- Stir the juice and taste it.
- If you like, stir in the lemon juice to brighten the flavor.
- Refrigerate for at least 30 minutes until very cold.

Serve
- Stir or shake the juice well, since it settles as it sits.
- Fill 4 glasses with ice if you like and pour in the juice, about 1 cup (240 ml) per glass.

Good to know
Tips
- Straining through a nut milk bag gives the smoothest texture; a sieve alone leaves a little more body.
- Taste before chilling: the juice should be lightly sweet. Add 2 to 4 tablespoons more water if it is too thick or sweet.
- Do not over-blend; more than a minute can turn the juice gluey.
- Save the strained pulp to stir into oatmeal or blend into smoothies.
Make ahead
Soak the dates up to 12 hours ahead in the refrigerator. Blend and strain up to 1 day before serving.
Storage & reheating
Refrigerate in a sealed jar for up to 3 days; stir or shake well before serving as it settles. Freeze in containers for up to 2 months; thaw in the fridge overnight and stir well. Do not keep at room temperature longer than 2 hours.
Substitutions
- Medjool dates → Khalas or Sukkari dates. Use the same weight; Saudi varieties give a more traditional flavor. Soak 30 minutes longer if they are firm.
- green cardamom pods → pre-ground cardamom. Use ½ teaspoon; the aroma will be slightly milder.
- cold water → cold whole milk. Replace up to half the water for a creamier, richer drink.
