Rum-Soaked Date and Pistachio Flan
A silky, custard-based flan infused with warm spices and topped with a glossy caramel. Medjool dates are soaked in dark rum and layered at the bottom with crushed pistachios, creating pockets of sweetness and nuttiness throughout. This elegant fusion dessert bridges Latin American and Middle Eastern traditions, perfect for dinner parties or special occasions.

Steps
Before you start
- Preheat oven to 350°F (175°C) and have a 9-inch (23 cm) round cake pan ready
- Bring eggs and both milks to room temperature (about 1 hour)
- Prepare a larger roasting pan for the water bath
- Have an oven thermometer to ensure accurate temperature
Bloom dates in rum
- Combine chopped dates and dark rum in a small bowl.
- Let sit at room temperature for 20 minutes so the dates soften and absorb the rum's flavor.
- This step enriches the filling with boozy sweetness and tenderizes the dates.

Ready when: Dates are plump and liquid is mostly absorbed
Tip: Don't skip this step; it prevents dry dates in the final dessert
Make caramelOven 350°F / 175°C
- In a small saucepan, combine ¾ cup (150 g) sugar and ¼ cup (60 ml) water.
- Place over medium-high heat and do not stir—instead, gently tilt the pan occasionally to combine.
- Cook for 8–10 minutes until the mixture turns deep amber (about 350°F / 175°C on a thermometer).
- Working quickly, pour the caramel into the 9-inch cake pan, coating the bottom and sides evenly.
- Set aside to cool and harden (it will set in 5 minutes).

Ready when: Caramel is deep amber, not black or smoking
Tip: Watch carefully after 7 minutes; caramel goes from golden to burnt quickly. Don't stir with a spoon to avoid crystallization
Layer date and pistachio base
- Once the caramel has set, spread the rum-soaked dates evenly over the caramel layer.
- Sprinkle the crushed pistachios over the dates, pressing them down gently so they adhere.
- This creates a textured layer that will be at the bottom of the final plated flan.

Ready when: Dates and pistachios are evenly distributed
Tip: Don't compress too hard or the flan won't unmold cleanly; just press to secure them
Blend custard base
- In a blender, combine 5 eggs, 1 can (14 oz / 397 g) sweetened condensed milk, 1 can (12 oz / 354 ml) evaporated milk, 1.5 tsp (7.5 ml) vanilla extract, ½ tsp (2.5 g) cinnamon, ¼ tsp (0.5 g) cardamom, ⅛ tsp (0.25 g) nutmeg, and ¼ tsp (1.5 g) salt.
- Blend on high for 1 minute until completely smooth and homogeneous.

Ready when: Mixture is pale, smooth, and shows no egg streaks
Tip: Don't over-blend or you'll incorporate too much air, which creates foam and uneven texture
Strain custard
- Pour the blended mixture through a fine-mesh sieve into a medium bowl, pressing gently with a spatula to remove any solids or air bubbles.
- This ensures a silky, velvety texture without grainy spots or foam.

Ready when: Custard passes through sieve with no lumps
Tip: Don't rush this step; a fine sieve prevents tiny air pockets that create texture flaws
Pour and set up water bath
- Pour the strained custard carefully over the date and pistachio layer in the caramel-lined pan.
- Place the cake pan inside the larger roasting pan.
- Pour hot water into the roasting pan until it reaches halfway up the sides of the cake pan (about 2 inches / 5 cm).
- This water bath ensures even, gentle heat distribution.

Ready when: Water level is consistent around the pan
Tip: Use hot water from the tap to prevent shocking the custard with cold water; it helps the flan cook evenly
Bake in water bathOven 350°F / 175°C
- Transfer the water bath to a preheated 350°F (175°C) oven.
- Bake for 45–50 minutes.
- The flan is done when the edges are set but the center still jiggles slightly when gently shaken—about a 1-inch (2.5 cm) circle in the very middle should wobble.
- The internal temperature at the edge should reach 170°F (77°C), but the center will be slightly cooler.

Ready when: Edges are firm; center jiggles slightly; internal temp at edge is 170°F (77°C)
Tip: Overbaking creates a grainy, rubbery texture. Residual heat will continue cooking as it cools, so remove it while still slightly soft in the center
Cool and chill
- Remove the flan from the oven and lift the cake pan out of the water bath.
- Let it cool at room temperature for 1 hour.
- Then cover loosely with plastic wrap and refrigerate for at least 4 hours (or overnight).
- The flan continues to set as it chills and the flavors deepen.

Ready when: Flan is completely chilled and firm
Tip: Don't skip the chill time; a warm flan will break apart when you unmold it
Unmold and serve
- Run a thin knife around the edge of the chilled flan, tilting it gently to loosen the caramel.
- Place a serving plate on top of the pan and invert, giving a gentle shake.
- The flan should slide onto the plate with the glossy caramel and date-pistachio layer now on top.
- If it resists, dip the bottom of the pan briefly in hot water and try again.
- Serve chilled or at room temperature, cut into 8 wedges.

Ready when: Flan cleanly unmolds onto the plate
Tip: If the flan cracks during unmolding, serve directly from the pan. A warm water bath on the pan bottom softens the caramel for easier release
Good to know
Tips
- For a boozy kick, warm the dark rum in a small pan and set it alight for 30 seconds to burn off some alcohol, then cool before soaking the dates. This mellows the flavor.
- Don't skip straining the custard. Even tiny air bubbles affect the flan's silky texture and can cause cracks when it bakes.
- If your oven runs hot or cold, use an oven thermometer to ensure 350°F (175°C). A 10-degree swing can change baking time by several minutes.
- Pistachios have a distinctive green hue that makes this flan visually striking when unmolded. Toast them fresh if possible for deeper flavor.
Make ahead
Prepare the entire flan up to 2 days ahead. Cover and refrigerate until serving. Unmold just before plating to keep the caramel glossy and prevent the custard from drying out.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: up to 4 days in an airtight container or covered. Freezer: up to 2 months, wrapped well. To reheat: thaw overnight in the fridge, then warm briefly at room temperature. Do not microwave, as it ruins the custard's texture.
Substitutions
- dark rum → brandy or cognac. Use an equal amount. The flavor will be slightly drier and more fruit-forward; the result is equally delicious and a touch more refined.
- pitted Medjool dates → dried figs or raisins, soaked in rum. Use the same weight. Figs add a nuttier note; raisins are more traditional in some Latin American flans. Adjust final sweetness to taste.
- roasted unsalted pistachios → roasted sliced almonds or toasted pine nuts. Use the same weight. Almonds are milder; pine nuts are buttery. Both pair beautifully with dates and rum.
- sweetened condensed milk → ¾ cup heavy cream plus 2 tbsp (12 g) sugar, blended until smooth. The flan will be less rich and slightly less set. Ensure ingredients are fully blended for a smooth result.
