Steps

Before you start
  • Preheat your oven to 325°F (160°C)
  • Have a food processor ready
  • Measure all seeds and spices before roasting—timing is critical
  1. Prepare and roast seedsOven 325°F / 165°C

    • Spread the sunflower seeds and pumpkin seeds in a single layer on a 13×9-inch (33×23 cm) baking sheet, mixing them together lightly.
    • Place the 3 unpeeled garlic cloves on the sheet among the seeds.
    • Roast in a preheated 325°F (160°C) oven for 18–20 minutes, stirring the seeds once halfway through (around 10 minutes).
    • The seeds should smell fragrant and toasted, with some just beginning to turn golden.
    • The garlic will soften and the skins will begin to wrinkle.

Ready when: Seeds are fragrant and lightly golden; garlic skin wrinkles slightly

Tip: Stir once at the halfway point to prevent the seeds at the edges from burning. Watch carefully—roasted seeds can go from perfect to burnt quickly.

  2. Cool and peel garlic

    • Remove the baking sheet from the oven and let it cool for 2–3 minutes so the garlic is cool enough to handle.
    • Once the garlic cloves are safe to touch, carefully peel away the papery skin by hand.
    • The roasted garlic should slip easily out of its skin.

Ready when: Garlic cloves are cool enough to touch and skin comes away easily

Tip: Don't skip this cooling step—the garlic will be nearly impossible to peel while hot, and you may burn your fingers.

  3. Grind seeds into butter

    • Transfer the roasted seeds to a food processor.
    • Process on high speed for 8–10 minutes, stopping every 2 minutes to scrape down the sides with a spatula.
    • At first the seeds will break into fine crumbs (around 3 minutes); then they'll start releasing their natural oils and begin to clump together (around 5 minutes).
    • Continue processing until the mixture becomes smooth and creamy, resembling natural nut butter with a slightly grainy texture.
    • If the mixture seems too thick or grainy after 10 minutes, don't over-process—a tiny bit of texture is desirable.

Ready when: Mixture is creamy and spreadable with a slight texture, resembling nut butter

Tip: Patience is key here. The longer you process, the more oils release from the seeds. Stop and scrape the sides frequently to ensure even grinding and prevent the processor from struggling with clumps.

  4. Add roasted garlic and seasonings

    • Add the peeled roasted garlic cloves, smoked paprika, sea salt, and black pepper to the food processor with the seed butter.
    • Process on high for 1–2 minutes until the garlic is fully incorporated and the paprika is evenly distributed throughout.
    • The dip should take on a warm tan color with spice flecks.

Ready when: Garlic is fully blended and paprika is evenly distributed throughout the dip

Tip: Don't overprocess once you've added the garlic—you want the dip to be creamy, not separated or oily.

  5. Finish with lemon and oil

    • Squeeze the fresh lemon juice and add it along with 2.5 tablespoons (37 ml) of extra-virgin olive oil to the processor.
    • Pulse 8–10 times until everything is well combined and the lemon juice brightens the flavors.
    • The dip should be smooth, creamy, and spoonable, with a slight sheen from the olive oil.

Ready when: Lemon juice is fully mixed in and the dip is smooth and creamy

Tip: Pulse rather than continuously process to avoid emulsifying the oil—you want a cohesive dip, not an oily separation.

  6. Taste and adjust

    • Transfer the dip to a serving bowl and taste it.
    • Add more sea salt, black pepper, or smoked paprika if you'd like deeper flavor, or a squeeze of extra lemon if you want more brightness.
    • Stir well to combine any adjustments.
    • The dip should be well-seasoned and balanced between nutty, smoky, and lemony.

Ready when: Flavors are balanced and dip is seasoned to your taste

Tip: Taste before serving—the dip may need extra seasoning because the roasted flavors can mellow as it cools.

Good to know

Tips
  • The key to a smooth dip is roasting the seeds until they're fragrant but not darkly browned—darker seeds can taste bitter and mask the other flavors.
  • This dip is excellent served alongside crudités (carrots, celery, bell peppers, radishes), warm pita bread, or crispy seed crackers. It's also wonderful stirred into yogurt for a creamy spread.
  • For a chunkier texture if you prefer it, process the seeds for only 5–7 minutes instead of 8–10, then skip pulsing with the lemon and oil—simply stir them in by hand.
  • The dip tastes best within an hour of making, while the roasted flavors are still vibrant, but it stores beautifully and flavors deepen over 1–2 days in the fridge.
Make ahead

The dip can be made up to 3 days ahead. Transfer it to an airtight container and store in the refrigerator. Stir well and add a drizzle of olive oil on top before serving if the surface looks dry.

Storage & reheating

Room temperature (up to 2 hours): Store in an airtight container; this dip is stable at cool room temperature. Refrigerator (up to 3 days): Cover the serving bowl or transfer to an airtight container; stir well before serving. The flavors deepen as it sits. Freezer (up to 2 months): Spoon into an airtight container or freezer bag; thaw overnight in the refrigerator before serving. Reheat if desired in a small pot over low heat, stirring frequently with a splash of water to loosen texture.

Substitutions
  • Raw sunflower seeds (hulled) → Use 2 cups (280 g) raw pumpkin seeds only. The dip will have a slightly more peppery, less nutty flavor, but will still be delicious. Increase the roasting time by 2–3 minutes since pumpkin seeds are slightly denser.
  • Smoked paprika → Use 1 teaspoon (2 g) sweet Hungarian paprika or 1⁄2 teaspoon (1.5 g) cayenne pepper for heat. Sweet paprika will give earthiness without smoke; cayenne will add spice instead of smoke. Smoked paprika gives the most authentic Ukrainian flavor profile.
  • Fresh lemon juice → Use 3 tablespoons (45 ml) fresh lime juice or 2 tablespoons (30 ml) white wine vinegar. Lime will give a brighter, more tropical note; vinegar will add depth and tang without citrus fruit flavor.
  • Extra-virgin olive oil → Use 2.5 tablespoons (37 ml) melted butter or sunflower oil. Butter will add richness and a dairy note; sunflower oil will keep the dip lighter and more neutral.
