- Line a baking sheet with parchment paper or foil
- Have a blender or food processor ready
- Gather all ingredients and measure them out before you start
Prepare and roast squashOven 400°F / 205°C
- Pat the kabocha squash halves dry with a paper towel.
- Brush the cut sides lightly with 2 tablespoons olive oil and season with ½ teaspoon sea salt.
- Place cut-side down on a prepared baking sheet.
- Roast in a preheated 400°F (200°C) oven for 35–40 minutes, until the flesh is very tender and a fork easily pierces it.

Ready when: Flesh is very soft and a fork pierces it easily; edges may caramelize slightly
Tip: Cut-side down ensures even cooking and slight caramelization on the interior
Toast pumpkin seeds
- While the squash roasts, place ½ cup raw pumpkin seeds in a dry skillet over medium heat.
- Toast for 3–4 minutes, shaking the pan occasionally, until fragrant and lightly golden.
- Transfer to a plate to cool.
- Reserve the remaining ¼ cup raw pumpkin seeds for garnish.

Ready when: Seeds smell nutty and are light golden; they pop slightly in the pan
Tip: Watch closely—pumpkin seeds brown quickly and can burn. Stop just before they darken
Cool squash and scoop flesh
- Let the roasted squash cool for 8–10 minutes until you can handle it.
- Using a spoon, scoop the soft flesh from the skin into a bowl.
- Discard the skin.
- You should have about 1¼ cups (300 g) of cooked squash.

Ready when: Squash is cool enough to touch but still warm inside
Tip: Don't skip cooling—hot squash will steam when blended and make the dip less smooth
Blend main ingredients
- Add the cooled squash, toasted pumpkin seeds (the ½ cup portion), minced garlic, fresh lime juice, cilantro, cumin, and 1 tablespoon water to a blender or food processor.
- Blend on high for 1–2 minutes until very smooth and creamy.
- If the mixture is too thick, add water 1 tablespoon at a time until you reach a soft, spoonable dip consistency.

Ready when: Dip is smooth, creamy, and no gritty specks remain
Tip: Start with 1 tablespoon water; you can always add more, but you can't remove it. Overblending can make the dip warm again, so pulse if needed
Taste and season
- Transfer the dip to a bowl.
- Taste and add salt and chili powder (if using) to your preference.
- Start with ¼ teaspoon salt and a pinch of chili powder, then adjust.
- Remember that the lime juice is already quite flavorful, so be gentle with salt.

Tips
- This dip is naturally vegan and dairy-free, making it an inclusive appetizer for most dietary needs.
- For a smoother, more restaurant-quality texture, strain the blended dip through a fine-mesh sieve, pressing gently with the back of a spoon. This removes any grainy pumpkin seed texture.
- Toast the pumpkin seeds in a cast-iron or stainless steel skillet rather than nonstick—they toast more evenly and develop better color.
- Serve the dip slightly chilled for the best flavor development. Cold temperatures mute seasoning, so chill after final tasting and adjust salt one more time before serving.
Make ahead
Blend the dip up to 2 days ahead and store in an airtight container in the refrigerator. Toast the pumpkin seeds up to 3 days ahead. Add the olive oil drizzle and raw seed garnish just before serving for best texture and appearance.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: up to 4 days in an airtight container; stir and taste again before serving as flavors mellow. Freezer: up to 3 months in a freezer-safe container. Thaw overnight in the refrigerator and stir well before serving; the texture may be slightly less creamy after freezing. Do not refreeze after thawing.
Substitutions
- kabocha squash, halved and seeded → butternut squash or acorn squash. Use the same weight. Butternut is slightly sweeter and silkier; acorn is more subtle. Both work well in this dip.
- raw unsalted pumpkin seeds (pepitas) → sunflower seeds or tahini (2 tablespoons tahini for the ½ cup seeds to blend). Sunflower seeds are milder; tahini adds richness and a slightly deeper flavor. Both create a creamy base.
- fresh cilantro leaves → parsley or a combination of cilantro and parsley. Parsley is less pungent; use the same amount. Some people prefer a milder herbal note.
- fresh lime juice → fresh lemon juice or apple cider vinegar. Use the same amount. Lemon is more neutral; vinegar adds subtle tang without citrus flavor.
