Roasted Carrot and Cumin Sauce

A vibrant, naturally sweet pasta sauce built on roasted carrots and warm cumin, finished with tomatoes and garlic. The carrots develop concentrated flavor in the oven, while cumin adds an earthy, subtly spiced depth. This vegetable-forward sauce is silky when blended and pairs beautifully with any pasta shape.

Steps

Before you start
  • Preheat oven to 425°F (220°C)
  • Line a large baking sheet with parchment paper or foil for easy cleanup
  • Have an immersion blender or regular blender ready for the final puree
  1. Roast the carrotsOven 425°F / 220°C

    • On the prepared baking sheet, toss the carrot rounds with 3 tbsp (45 ml) olive oil, a pinch of kosher salt, and black pepper.
    • Spread them in a single layer and roast at 425°F (220°C) for 25–30 minutes, stirring halfway through, until the carrots are deeply caramelized on the edges and tender when pierced with a fork.
    • The flat sides should be golden and slightly charred.

Ready when: Carrots are deeply caramelized on the edges and very tender

Tip: Spread the carrots in a single layer without crowding—they'll steam instead of roast if piled up. Flip halfway for even browning.

  2. Toast cumin seeds

    • While the carrots roast, warm the 1.5 tsp (4 g) cumin seeds in a large pot over medium heat for 1–2 minutes, stirring constantly, until fragrant and lightly toasted.
    • Do not let them burn—they should smell warm and nutty, not acrid.

Ready when: Cumin is fragrant and lightly toasted, no longer raw-smelling

Tip: Toast in a dry pot first for deeper flavor, then add oil. This blooms the cumin and prevents it from tasting harsh.

  3. Build the base

    • Add 2 tbsp (30 ml) olive oil to the pot with the toasted cumin and immediately add the minced garlic and the optional red pepper flakes (if using).
    • Sauté over medium heat for 30–45 seconds, stirring constantly, just until the garlic becomes fragrant but not brown.
    + Show details

Ready when: Garlic is fragrant and pale, with no brown edges

Tip: Watch closely—garlic burns easily and will taste bitter. Keep the heat at medium and stir constantly.

  4. Add tomatoes and broth

    • Pour the canned tomatoes with their juices and 0.5 cup (120 ml) vegetable broth or water into the pot.
    • Stir well to combine, scraping the bottom to release any browned bits.
    • Bring to a gentle simmer over medium-high heat.
    + Show details

Ready when: Mixture reaches a gentle simmer with small bubbles breaking the surface

Tip: The broth thins the sauce so the roasted carrots blend into a silky consistency. Don't skip it.

  5. Add roasted carrots

    • When the oven timer sounds and carrots are ready, remove the baking sheet and let the carrots cool for 1–2 minutes.
    • Scrape them (and any browned bits from the pan) into the simmering sauce.
    • Stir to combine.
    + Show details

Ready when: Carrots are incorporated and the sauce simmers gently

Tip: Include the caramelized bits stuck to the pan—they add depth and flavor.

  6. Simmer and develop flavor

    • Reduce heat to medium-low and let the sauce simmer gently, uncovered, for 10 minutes.
    • The liquid will reduce slightly and the flavors will meld.
    • Stir occasionally.
    + Show details

Ready when: Sauce has reduced by about ¼, with a rich, concentrated aroma

Tip: Don't cover the pot—you want steam to escape so the sauce thickens and concentrates.

  7. Blend until smooth

    • Remove the pot from heat and let cool for 2–3 minutes.
    • Using an immersion blender, blend the sauce directly in the pot until completely smooth and silky, about 1 minute of blending.
    • If you prefer a chunkier texture, blend for only 20–30 seconds.
    • Alternatively, carefully transfer the sauce in batches to a regular blender, blend until smooth, and return to the pot.
    + Show details

Ready when: Sauce is smooth and silky with a luxurious texture

Tip: If using a regular blender, remove the cap and cover the lid with a kitchen towel to prevent hot sauce from splashing. Never fill the blender more than halfway.

  8. Taste and season

    • Taste the sauce and season with additional kosher salt and black pepper as needed.
    • The sauce should taste bright, earthy from the cumin, and naturally sweet from the roasted carrots, with no raw garlic bite.
    + Show details

Ready when: Sauce tastes balanced and flavorful with no harsh edges

Tip: Add salt gradually—it's easier to add more than to fix oversalted sauce. Taste after each small pinch.

  9. Finish and serve

    • Stir in the optional torn fresh basil or parsley, if using.
    • Serve the sauce hot over your choice of pasta—it clings beautifully to pappardelle, rigatoni, or penne.
    • Drizzle with a bit more olive oil and finish with grated Parmesan if desired.

Ready when: Herbs are incorporated and sauce is ready to plate

Tip: Add fresh herbs at the very end to preserve their bright color and fresh flavor.

Good to know

Tips
  • Roasting the carrots is the key to this sauce's depth. Don't skip it or use raw carrots—the caramelization transforms them from sweet to richly complex.
  • This sauce is naturally vegan and gluten-free if you serve it with appropriate pasta. It's also freezer-friendly, making it perfect for meal prep.
  • For a lighter version, reduce the olive oil to 2 tbsp total (1.5 tbsp for roasting, 0.5 tbsp for sautéing) or use 2 tbsp of broth instead of oil for the garlic.
  • The sauce thickens as it cools, so if you're making it ahead, you may need to add a splash of broth or water when reheating.
Make ahead

The sauce can be made up to 3 days ahead. Cool it completely, store in an airtight container in the refrigerator, and gently reheat over medium-low heat with a splash of water or broth if needed to loosen it. It also freezes well for up to 3 months—thaw overnight in the refrigerator and reheat gently.

Storage & reheating

Room temperature: up to 2 hours. Refrigerator: up to 3 days in an airtight container. Freezer: up to 3 months in a freezer-safe container or bag. Reheat gently on the stovetop over medium-low heat, stirring occasionally and adding a splash of water or broth if the sauce has thickened too much.

Substitutions
  • cumin seeds → Ground cumin (use 1 tsp / 2 g instead, or to taste). Ground cumin will give faster flavor release but won't toast the same way. Add it with the garlic rather than toasting it dry first.
  • canned whole tomatoes (San Marzano preferred) → Fresh tomatoes, cored and quartered (about 4 medium tomatoes). Use the best ripe tomatoes you can find in summer. Add them with the broth and simmer a bit longer (12–15 minutes) to break them down fully.
  • vegetable broth or water → Chicken broth or pasta cooking water. Chicken broth adds richness; pasta water adds starch for a silkier texture. Use in equal quantity.
  • fresh basil or parsley leaves → Dried oregano (1 tsp / 1 g) or fresh mint (3–4 leaves, torn). Oregano gives an Italian twist; mint adds brightness. Both can be added a bit earlier (with the garlic) if dried.
