Steps

Before you start
  • Position an oven rack in the upper third of the oven and turn the oven on to 425°F (220°C) before you start prepping; it heats while you trim and zest.
  • Choose spears about ½ inch (1 cm) thick; pencil-thin spears cook faster (check at 8 minutes) and very thick ones need 3–5 extra minutes.

  • High heat and a single layer give browning; low heat or crowding gives soggy spears.

  • Don't peel thin spears; only peel the bottom third of very thick ones.
Make ahead

Trim and dry the asparagus up to 1 day ahead; wrap in paper towels and refrigerate in a bag. Zest the lemon up to 4 hours ahead and keep covered. Season and roast just before serving.

Storage & reheating

Room temperature: up to 2 hours. Refrigerator: airtight container up to 3 days. Freezer: not recommended, as the texture turns mushy. Reheat in a 400°F (200°C) oven or skillet for 3–4 minutes, or enjoy cold in salads.

Substitutions
  • extra-virgin olive oil → melted unsalted butter or avocado oil. Same amount; butter browns a little faster, so check at 8 minutes.
  • kosher salt → fine sea salt. Use about ¼ teaspoon (1.5 g) less, as fine salt is denser.
  • fresh lemon juice → white wine vinegar or lime juice. Use 2 teaspoons (10 ml) vinegar or the same amount of lime juice.
  • fresh asparagus → green beans. Roast 12–15 minutes at the same temperature until blistered.
