Steps

Before you start
  • Preheat oven to 400°F (200°C)
  • Trim asparagus and pat dry thoroughly so it roasts rather than steams
  • Have all ingredients measured and ready before roasting begins
  1. Toast the almondsOven 400°F / 205°C

    • Spread sliced almonds on a small baking sheet or cast-iron skillet.
    • Place in the preheated 400°F (200°C) oven for 5–6 minutes, stirring once halfway through, until fragrant and light golden.
    • Watch carefully so they don't burn.
    • Transfer to a plate to cool slightly.

Ready when: Almonds are golden and fragrant, with no dark brown patches

Tip: Toast almonds in a separate smaller pan if possible so you can remove them quickly and keep the oven free for the asparagus

  2. Prepare and roast asparagusOven 400°F / 205°C

    • Toss trimmed asparagus with 2 tablespoons (30 ml) of olive oil, the peeled garlic cloves, ½ teaspoon salt, and a pinch of black pepper on a large sheet pan.
    • Spread in a single layer.
    • Roast at 400°F (200°C) for 18–20 minutes, shaking the pan halfway through, until asparagus is tender when pierced with a fork and the tips are lightly browned.
    • The garlic should be soft and caramelized.

Ready when: Asparagus is fork-tender with light browning on the tips; garlic is soft and golden

Tip: Pat the asparagus very dry before tossing with oil—excess moisture will cause steaming instead of roasting

  3. Cool slightly and combine

    • Let the roasted asparagus and garlic cool for 2–3 minutes at room temperature.
    • This prevents the dip from becoming too hot when blended with yogurt.
    • Transfer the roasted asparagus, garlic cloves, and toasted almonds to a food processor.

Ready when: Asparagus and garlic are comfortable to handle

Tip: A slight cool-down prevents the yogurt from curdling when blended into warm ingredients

  4. Blend the dip

    • Add the Greek yogurt, remaining 1 tablespoon (15 ml) olive oil, and lemon juice to the food processor.
    • Blend until smooth but with a slight, pleasing texture (not completely pureed).
    • The dip should be creamy and hold its shape with a spoon.
    • Pulse as needed, about 30–45 seconds total.
    + Show details

Ready when: Dip is smooth and creamy, with slight texture from almonds; no yogurt streaks remain

Tip: Blend in pulses rather than continuously to avoid overworking the yogurt, which can make it grainy

  5. Season and finish

    • Transfer the blended dip to a serving bowl.
    • Taste and adjust with sea salt and black pepper to your preference.
    • Stir in fresh dill if using, and sprinkle the surface with a pinch of red pepper flakes for color and a gentle heat accent.
    + Show details

Ready when: Dip is well seasoned to taste, with dill incorporated and pepper flakes sprinkled on top

Tip: Add salt gradually—the roasted garlic and asparagus contribute saltiness, and the yogurt has its own salt content

  6. Serve or chill

    • Serve the dip immediately at room temperature, or chill for up to 1 hour before serving if you prefer it colder.
    • It's excellent with crisp vegetable crudités (carrot sticks, celery, radishes, bell pepper strips), toasted pita chips, or crusty bread.

Ready when: Dip is ready to serve

Tip: The dip tastes best served within a few hours of making, as the fresh herb color and bright lemon flavor fade if stored too long

Good to know

Tips
  • Roasting the garlic mellows its sharpness into a sweet, golden flavor—raw garlic would overpower the delicate asparagus and nuts.
  • If your asparagus spears are very thick (¾ inch / 2 cm or more), cut them in half lengthwise before roasting so they cook evenly and caramelize on more surfaces.
  • The dip thickens slightly as it cools; if it seems too thick the next day, stir in a tablespoon of lemon juice or water to restore creaminess.
  • For a vegan version, replace Greek yogurt with silken tofu or cashew cream blended with lemon juice and a splash of plant-based milk.
Make ahead

You can roast the asparagus and toast the almonds up to 1 day ahead. Store them separately in airtight containers in the refrigerator. On serving day, bring them to room temperature, then blend with the yogurt, oil, and lemon juice for the freshest flavor and best texture.

Storage & reheating

Room temperature: up to 2 hours. Refrigerator: up to 3 days in an airtight container; the flavor and texture are best in the first day. Freezer: not recommended, as yogurt-based dips separate and become grainy when thawed. Reheat gently at room temperature by stirring, or serve cold straight from the fridge.

Substitutions
  • plain Greek yogurt, at room temperature → Crème fraîche or sour cream. Use the same amount (½ cup / 120 ml). Both offer a tangy richness; crème fraîche gives a silkier texture, while sour cream adds sharper tang. Avoid over-blending with sour cream to prevent it from becoming too thin.
  • sliced or whole raw almonds → Blanched almonds, pine nuts, or roasted walnuts. Keep the amount the same. Blanched almonds create a lighter, more delicate dip; pine nuts add buttery sweetness; walnuts contribute earthiness but will darken the dip.
  • fresh dill, finely chopped → Fresh mint, flat-leaf parsley, or tarragon. Use 2 tablespoons (5 g) fresh and finely chopped. Mint brings brightness; parsley adds earthiness; tarragon introduces subtle anise notes—each shifts the flavor profile.
  • fresh lemon juice → Fresh lime juice or white wine vinegar. Use the same amount (2 tablespoons / 30 ml). Lime adds tropical brightness; vinegar contributes sharper acidity. Adjust to taste if using vinegar, as it's more intense.
