Steps

Before you start
  • Heavy cream must be cold (refrigerate bowl and beaters if possible)
  • Preheat oven to 350°F (175°C) for toasting nuts and phyllo
  • Have a 2-quart (2 L) freezer-safe serving dish or loaf pan ready
  • Read through the recipe—freezing takes 8 hours or overnight
  1. Toast the nutsOven 350°F / 175°C

    • Preheat oven to 350°F (175°C).
    • Spread pistachios and walnuts on a baking sheet.
    • Toast for 8–10 minutes, stirring halfway, until fragrant and nuts darken slightly.
    • Transfer to a plate to cool.
    • Once cool, coarsely chop them and set aside.
    • Keep oven on for phyllo.

Ready when: Nuts are fragrant and light golden; skins may split

Tip: Do not skip toasting—it deepens the baklava flavor significantly.

  2. Prepare phyllo shardsOven 350°F / 175°C

    • Lay one phyllo sheet on a clean, dry surface.
    • Brush lightly with melted butter using a pastry brush.
    • Layer a second sheet on top, brush again.
    • Cut the buttered phyllo into rough 1½-inch (4 cm) shards.
    • Spread on a baking sheet and sprinkle with 1 tablespoon of sugar.
    • Repeat with the remaining two phyllo sheets and 1 tablespoon sugar.
    • Bake at 350°F (175°C) for 10–12 minutes until golden and crispy.
    + Show details

Ready when: Phyllo shards are golden brown and very crisp, not chewy

Tip: Work quickly with phyllo—it dries out. Keep unused sheets under a damp towel.

  3. Whip the cream

    • Pour cold heavy cream into a large bowl.
    • Using an electric mixer or whisk, beat the cream on medium-high speed for 2–3 minutes until soft peaks form (cream holds its shape but tips curl over).
    • Do not overbeat or the cream will turn grainy.

Ready when: Cream forms soft peaks; a spoon lifted from the bowl holds an airy mound

Tip: Chill your mixing bowl in the freezer for 10 minutes before whipping to speed up the process and ensure stiff peaks.

  4. Infuse the honey base

    • In a medium bowl, whisk together honey, sweetened condensed milk, vanilla extract, cinnamon, cardamom, clove, and sea salt until fully combined and smooth.
    • The spices should be evenly distributed with no clumps.

Ready when: Mixture is smooth with no visible spice clumps; color is uniform tan

Tip: Whisk the spices thoroughly to avoid little grit at the bottom—they won't fully dissolve but should be evenly dispersed.

  5. Fold mousse together

    • Gently fold the honey mixture into the whipped cream using a rubber spatula.
    • Work in two additions: add half the honey mixture and fold until mostly combined (a few streaks are okay), then add the remaining mixture and fold until no white streaks remain.
    • Fold gently—vigorous stirring deflates the whipped cream and makes the mousse dense.

Ready when: Color is uniform honey-tan with no visible cream streaks

Tip: Use a rubber spatula and fold from bottom to top, rotating the bowl, not stirring in circles—this preserves airiness.

  6. Assemble and freeze

    • Spoon half the mousse into your 2-quart (2 L) freezer-safe dish.
    • Sprinkle with about one-third of the toasted nuts.
    • Top with the remaining mousse, smoothing the surface.
    • Scatter the remaining nuts and about half the phyllo shards over the top.
    • Cover with plastic wrap or a lid and freeze for at least 8 hours or overnight until firm throughout.
    + Show details

Ready when: Mousse is firm to the touch; an ice cream scoop easily breaks the surface

Tip: Reserve some phyllo shards to sprinkle fresh just before serving—phyllo absorbs moisture from the mousse and becomes soft in the freezer, so top shards taste better when freshly crispy.

  7. Serve and enjoy

    • Remove mousse from the freezer 5–10 minutes before serving (at -5 to 0°F / -20 to -18°C it will be very hard).
    • Scoop into chilled glasses or dessert bowls.
    • Garnish with a few reserved phyllo shards, a pinch of remaining chopped nuts, and a light drizzle of honey if desired.
    • Serve immediately.

Ready when: Mousse is scoopable and melts slowly on the tongue

Tip: For the best texture and authentic baklava flavor experience, serve in small portions—the mousse is very rich.

Good to know

Tips
  • Make a light honey drizzle on the side (1–2 tablespoons honey thinned with 1 teaspoon warm water) to serve alongside; it replicates the honey-soaked quality of traditional baklava without making the mousse soggy.
  • For a no-bake version, crush store-bought baklava (about 2–3 pieces) into shards and scatter them as topping instead of making phyllo shards—saves time and adds authentic baklava flavor.
  • Serve in small portions: this mousse is very rich. A 3–4 oz (85–115 ml) scoop per person is generous and satisfying.
  • For Ramadan iftar, prepare this 1–2 days ahead so you can enjoy it fresh from the freezer without last-minute effort—a gift after fasting.
Make ahead

Prepare fully 1–2 days ahead. The mousse benefits from a longer freeze, and flavors meld beautifully overnight. Phyllo shards can be made up to 2 days in advance and stored in an airtight container.

Storage & reheating

Room temperature: Not applicable (must be kept frozen). Freezer (covered): Up to 2 weeks. The mousse will firm up slightly but remains creamy. Reheat/refreeze: Not applicable. To serve after freezing, simply thaw in the refrigerator for 20–30 minutes for a mousse-like consistency, or serve directly from the freezer for a firmer texture. Phyllo shards stored separately in an airtight container at room temperature last up to 2 days; refresh briefly in a 275°F (135°C) oven for 2–3 minutes if they soften.

Substitutions
  • roasted salted pistachios, shelled → roasted almonds or unsalted roasted cashews. Almonds are more neutral; cashews add rich sweetness. Chop to the same size. The traditional baklava uses pistachios, so this is a secondary choice.
  • roasted walnuts → hazelnuts or more pistachios. Hazelnuts add a subtle earthiness. Using all pistachios (1.25 cups/150g total) deepens the classic baklava flavor.
  • sweetened condensed milk → 0.5 cup (120 ml) heavy cream mixed with 0.25 cup (60 ml) honey and 2 tablespoons (25 g) powdered sugar. This substitution works if you cannot find sweetened condensed milk; whisk until smooth. The texture will be slightly airier but still delicious.
  • ground cardamom → ground ginger or ground allspice. Ginger adds warmth and slight spice; allspice approximates the complexity. Use the same amount, but add gradually and taste—they're potent.
