Steps

Before you start
  • Choose firm, fresh radishes and cucumbers
  • Have sour cream at or near room temperature for smooth mixing
  • Chill serving bowls or a serving platter if you want extra crispness
  1. Prepare the radishes

    • On a cutting board, trim the stem and root ends from each radish.
    • Slice them thinly, about ⅛-inch (3 mm) thick.
    • Thin slices will soften slightly and absorb flavors better than thick chunks, which can stay woody and separate from the dressing.

Ready when: All radish slices are thin and uniform

Tip: Slice as thin as possible—thicker slices stay woody and don't soften well

  2. Prepare the cucumbers

    • Halve each cucumber lengthwise.
    • If using regular cucumbers with tough, bitter skins, peel them first with a vegetable peeler.
    • Slice the halves crosswise into ½-inch (1 cm) half-moons.
    • Transfer both the sliced radishes and cucumbers to a medium mixing bowl.

Ready when: All cucumber slices are ½-inch (1 cm) half-moons, uniform in size

Tip: English (hothouse) cucumbers are seedy and wetter; if using them, halve the amount or scoop out seeds with a spoon to prevent sogginess

  3. Chop herbs and aromatics

    • On the cutting board, roughly chop the fresh dill into bite-sized pieces (about ⅛-inch / 3 mm).
    • Slice the green onions on a diagonal into ½-inch (1 cm) pieces, using only the white and light green parts; reserve any dark green tops for garnish if desired.

Ready when: Dill is finely chopped and green onions are thinly sliced

  4. Make the sour cream dressing

    • In a small bowl, combine the room-temperature sour cream, chopped dill, sliced green onions, ¼ teaspoon fine sea salt, and 3–4 grinds of freshly ground black pepper.
    • Whisk or stir until the dressing is smooth, creamy, and well combined.
    • Taste and adjust seasoning with more salt or pepper as needed.

Ready when: Dressing is smooth, herb-flecked, and fully blended

Tip: Room-temperature sour cream mixes smoothly; if yours is cold, let it sit at room temperature for 10 minutes first

  5. Combine vegetables and dressing

    • Pour the sour cream dressing over the sliced radishes and cucumbers in the medium bowl.
    • Using a large spoon or two forks, gently toss until all the vegetables are evenly coated.
    • Use a light touch—don't over-toss or the delicate cucumber and radish slices will break down and become mushy.

Ready when: All vegetables are evenly coated with creamy dressing

Tip: Use a gentle touch when tossing; if you stir too vigorously, the slices will shatter and the salad will become mushy

  6. Chill and finish

    • Transfer the salad to a serving bowl or divide among individual serving plates.
    • Refrigerate for 10 minutes so the salad chills, the vegetables soften slightly, and the flavors meld together.
    • Just before serving, if you like extra brightness and acidity, add a small squeeze of fresh lemon juice (about ½ teaspoon per serving) and toss very gently.

Ready when: Salad is well chilled and flavors have melded

Tip: Serve as close to this time as possible; after 2–3 hours, the vegetables will soften noticeably and release excess liquid

Good to know

Tips
  • For the crispest salad, chill all ingredients in the refrigerator for 30 minutes before slicing and assembling
  • English (hothouse) cucumbers are seedy and tend to be wetter; if using them, halve the amount or scoop out the seeds with a spoon to prevent a soggy salad
  • If the salad sits longer than an hour before serving, it will release water and become less crisp; drain off excess liquid from the bottom and adjust the dressing before serving
  • Make this salad as close to serving time as possible for maximum crispness; the vegetables will soften noticeably within 2–3 hours
Make ahead

The salad can be assembled up to 2 hours ahead and refrigerated in a covered container, but it will become wetter as the vegetables release water. For best texture and crispness, prepare the dressing separately and toss it with the vegetables no more than 1 hour before serving.

Storage & reheating

Room temperature: Not recommended; best served within 30 minutes of assembly. Refrigerator: Cover and keep for up to 1 day; the vegetables will soften and the dressing will become thinner as they release liquid. Drain off excess liquid before serving and adjust seasoning if needed. Freezer: Not suitable for freezing.

Substitutions
  • cucumbers → zucchini, thinly sliced or shredded. Use raw zucchini for the same crispness; shredding gives a lighter, more delicate texture
  • fresh dill → fresh parsley or fresh chives. Flat-leaf parsley gives a milder, fresher flavor; chives add an oniony note
  • full-fat sour cream → Greek yogurt or crème fraîche. Greek yogurt is tangier; crème fraîche is richer and silkier. Use the same amount.
  • green onions (scallions) → red onion, thinly sliced. Red onion is sharper and adds color; use 2–3 tablespoons (about 20 g) as it is more pungent than green onion
