Steps

Before you start
  • Read through the recipe—this moves fast
  • Have all ingredients measured and ready
  • Use ground chicken at room temperature for easier mixing
  1. Mix meatball mixture

    • In a large bowl, combine ground chicken, harissa paste, breadcrumbs, beaten egg, minced garlic, cumin, salt, and black pepper.
    • Using your hands (work quickly to avoid overworking the meat), gently fold until just combined—the mixture should hold together but not be dense or pasty.
    + Show details

Ready when: Mixture just holds together when gently squeezed

Tip: Don't overmix—overworked chicken becomes dense and tough. Stop as soon as all ingredients disappear into the mix.

  2. Shape into meatballs

    • Wet your hands lightly with cold water.
    • Using a 1½-tablespoon ice cream scoop or your hands, form 16 evenly sized meatballs (about the size of walnuts).
    • Place them on a clean plate as you work.
    + Show details

Ready when: All 16 meatballs shaped and evenly sized

Tip: Wet hands prevent sticking and help you shape faster. Even sizing ensures they cook at the same rate.

  3. Heat skillet and sear meatballs

    • Heat olive oil in a large 12-inch skillet over medium-high heat until it shimmers and a breadcrumb sizzles immediately on contact, about 1 minute.
    • Carefully add all 16 meatballs in a single layer.
    • Let them sit undisturbed for 2 minutes to develop a golden crust.
    + Show details

Ready when: Bottom of each meatball is golden brown and releases easily from the pan

Tip: Don't move the meatballs during the sear—moving them breaks the crust. A medium-high heat is crucial for browning without cooking the inside too fast.

  4. Roll and finish cookingOven 165°F / 75°C

    • Using a wooden spoon, gently roll each meatball a quarter turn.
    • Cook undisturbed for another 2 minutes until that side browns.
    • Continue rolling and cooking until all sides are seared golden brown and the meatballs are cooked through, about 6–7 minutes total.
    • An instant-read thermometer inserted into the thickest part should read 165°F (74°C).
    + Show details

Ready when: All sides are golden brown and internal temperature reaches 165°F (74°C)

Tip: Rolling rather than stirring keeps the crust intact and the meatballs intact. If you don't have a thermometer, cut one open—there should be no pink and the juices should run clear.

  5. Rest meatballs

    • Transfer the meatballs to a clean plate.
    • Let them rest for 5 minutes while you prepare the yogurt sauce.
    + Show details

Tip: This short rest keeps the meatballs moist when you eat them. Don't skip it.

  6. Make yogurt sauce

    • In a medium bowl, whisk together Greek yogurt, lemon juice, half of the cilantro, and optional mint.
    • Taste and adjust lemon juice or salt as needed—it should be bright and taste like a cooling foil to the harissa spice.
    + Show details

Ready when: Yogurt sauce is smooth, bright, and well combined

Tip: Add the cilantro and mint at the last moment so they stay vibrant. Reserve some cilantro for garnish.

  7. Serve

    • Arrange meatballs on a platter or individual plates.
    • Spoon or dollop yogurt sauce alongside and garnish with the reserved cilantro.
    • Serve warm or at room temperature.

Tip: These taste great warm, at room temperature, or even chilled the next day. Serve with pita, rice, or as part of a mezze platter.

Good to know

Tips
  • For extra North African flair, serve the meatballs on a bed of couscous or bulgur pilaf and drizzle the yogurt sauce over the top.
  • If your harissa paste is very thick and oil-based, it may separate slightly in the yogurt sauce—whisk it back together just before serving.
  • These freeze beautifully: make a double batch, freeze the extras on a sheet tray, then pack them into a freezer bag. Reheat gently in the oven.
  • To control heat, reduce harissa to 2 tbsp (30 g) and add another 1 tbsp (10 g) breadcrumbs to keep the binder balanced.
Make ahead

Form meatballs up to 4 hours ahead and refrigerate on a plate, covered. Cook them straight from the fridge—add 2–3 minutes to cooking time. Or make the full batch, cool, and store in the fridge; reheat in a 350°F (175°C) oven for 8–10 minutes.

Storage & reheating

Refrigerate cooked meatballs and sauce separately in airtight containers for up to 3 days. Reheat meatballs in a 350°F (175°C) oven for 8–10 minutes. Freeze cooked meatballs (without sauce) for up to 3 months; thaw in the fridge overnight and reheat as above. Yogurt sauce is best fresh but keeps refrigerated for 2 days.

Substitutions
  • ground chicken (85/15 lean) → Ground turkey (90/10 or 93/7). Very similar flavor and texture. Turkey may be slightly drier, so don't skip the beaten egg binder.
  • harissa paste → 2 tbsp (30 g) sambal oelek or sriracha, mixed with 1 tsp (2 g) smoked paprika. Sambal oelek alone is hotter and less complex; the paprika adds depth. Use slightly less if you're heat-sensitive.
  • plain Greek yogurt → Sour cream or 0% Greek yogurt thinned with 1–2 tbsp water or lemon juice. Sour cream is tangier; dilute the Greek yogurt if using 0% to avoid a chalky texture. Both work well.
  • fresh cilantro → Parsley (Italian flat-leaf) or a mix of parsley and mint. Parsley is milder and more neutral; cilantro brings the authentic North African note. Use the same amount.
