Steps

Before you start
  • Preheat your oven to 400°F (200°C) so it's ready when you need it
  • Read through all steps so you understand the timing—pasta and meatballs bake together
  • Have a 9×13-inch baking dish ready (or similar ~3-quart capacity)
  1. Mix the meatballs

    • In a medium bowl, combine the ground turkey, panko breadcrumbs, egg, minced garlic, Parmigiano-Reggiano, 0.5 tsp kosher salt, black pepper, and dried oregano.
    • Mix gently with your hands until just combined—don't overwork or the meatballs will be dense.
    • Form into 12 meatballs about 1.5 inches in diameter and set aside.

Ready when: Meatballs are formed and rest at room temperature

Tip: Light mixing prevents tough, rubbery meatballs. The egg acts as a binder without making them heavy.

  2. Cook the pasta

    • Bring a large pot of water to a rolling boil.
    • Add 1 tbsp kosher salt.
    • Stir in the ziti and cook for 2 minutes less than the package directions (the pasta will continue cooking in the oven).
    • Drain well but do not rinse.

Ready when: Pasta is firm but mostly tender, still slightly al dente

Tip: Undercooking the pasta here prevents mushy texture after baking. Draining without rinsing helps the sauce cling to each piece.

  3. Assemble the bake

    • Pour 1 tbsp olive oil into a 9×13-inch baking dish and swirl to coat the bottom.
    • Add the drained hot pasta and marinara sauce (24 fl oz / 720 ml), then stir gently to combine.
    • Nestle the 12 formed meatballs evenly across the top of the mixture.
    • They should rest on and partially sink into the pasta.

Ready when: Meatballs are distributed evenly and nestled into the pasta-sauce mixture

Tip: Oil the dish to prevent sticking on the bottom. Nestle meatballs partially into the mixture so they stay moist as they cook.

  4. Bake uncoveredOven 400°F / 205°C

    • Place the baking dish in a 400°F (200°C) oven.
    • Bake uncovered for 25 minutes.
    • The meatballs should firm up on the outside, the sauce will bubble at the edges, and the pasta will finish cooking in the steam.

Ready when: Meatballs are firm and light brown; sauce bubbles at the edges

Tip: No need to stir—this keeps the meatballs intact. Uncovered baking prevents the top from becoming soggy.

  5. Top with cheese and bake againOven 400°F / 205°C

    • Remove the dish from the oven.
    • Scatter the shredded mozzarella evenly over the top, covering as much of the pasta and meatballs as you can.
    • Return to the 400°F (200°C) oven for 8–10 minutes until the cheese is melted, bubbly, and lightly golden in spots.
    + Show details

Ready when: Cheese is completely melted and bubbling, with light golden-brown edges in spots

Tip: Keep the oven at 400°F for consistent cooking. Watch toward the end to avoid scorching the cheese—it cooks quickly.

  6. Rest before serving

    • Remove the baking dish from the oven and let it rest for 5 minutes.
    • This allows the cheese to set slightly and the pasta to absorb any remaining sauce, making it easier to serve without everything sliding around.

Ready when: Cheese has firmed slightly but is still creamy inside

Tip: Don't skip this step—it makes plating much cleaner and the dish easier to eat.

Tips
  • For a spicier dish, add 1/4 tsp red pepper flakes to the meatball mixture or stir into the sauce.
  • If your mozzarella is browning too quickly, tent the dish loosely with foil for the final 3–4 minutes of cheese baking, then remove it to let it brown.
  • A meat thermometer inserted into the center of a meatball should read 165°F (74°C) for food safety; the internal temperature will rise slightly as the dish rests.
  • For a lighter version, use part-skim mozzarella and replace the egg with 2 tbsp of milk mixed into the panko—the meatballs will be slightly less rich but still tender.
Make ahead

Meatballs can be formed up to 8 hours ahead, covered, and refrigerated. Cook them straight from the fridge—add an extra 2–3 minutes to the initial bake time. The assembled (unbaked) dish can sit at room temperature for up to 30 minutes before baking, or be covered and refrigerated for up to 12 hours; bake from cold, adding 5–8 minutes to the cooking time.

Storage & reheating

Store covered in the refrigerator for up to 3 days. Reheat gently in a 350°F (175°C) oven for 20–25 minutes, covered with foil, until warmed through. Freeze for up to 2 months in an airtight container or wrapped well; thaw overnight in the refrigerator before reheating.

Substitutions
  • ground turkey (85/15 blend) → Ground lean beef or ground chicken. Beef will be richer; chicken will be even leaner. Use the same weight. Beef may need 1–2 minutes longer in the oven.
  • panko breadcrumbs → Regular plain breadcrumbs or crushed crackers. Use the same amount by volume. Regular breadcrumbs will make slightly denser meatballs; reduce to 1/4 cup if they feel too wet.
  • marinara sauce (store-bought or homemade) → Homemade tomato sauce or pesto cream sauce. Use 24 fl oz (720 ml) of any sauce. Pesto cream will be richer; add 1 tbsp less if it seems very thick.
  • low-moisture mozzarella cheese, shredded → A mix of mozzarella and ricotta (1.5 cups mozzarella + 0.5 cup ricotta dolloped on top). Ricotta makes the top creamier but less crispy. Increase oven time by 2–3 minutes since ricotta needs time to warm.
