Steps

Before you start
  • Chill the pomegranate juice and sparkling water in the fridge for at least 2 hours so the spritz stays fizzy and cold.
  • The rosemary-honey syrup needs about 20 minutes to steep and cool, so make it first.
  • Use 100% pomegranate juice, not a sweetened cocktail blend, so the sweetness stays balanced.
  • Roll limes firmly on the counter before juicing to get more juice.
  1. Make the syrup

    • In a small saucepan, combine the water, honey, and the 3 bruised rosemary sprigs.
    • Set over medium heat and stir until the honey fully dissolves into the water, then bring to a gentle simmer with small bubbles around the edge.
    • Simmer for 2 minutes, then remove from the heat.

Ready when: Honey is fully dissolved, the liquid is clear, and the kitchen smells piney and herbal.

Tip: Don't boil hard; vigorous boiling can make the rosemary taste bitter and resinous.

  2. Steep and cool

    • Leave the rosemary in the hot syrup, cover the pan, and steep for 20 minutes.
    • Remove the sprigs, pressing them lightly against the pan to extract the liquid.
    • Pour the syrup into a jar and refrigerate for 5 minutes, or until cool to the touch.
    + Show details

Ready when: Syrup tastes distinctly of rosemary and is cool to the touch.

Tip: Taste after 15 minutes; if you prefer a subtle herbal note, remove the sprigs then.

  3. Juice the limes

    • Squeeze the limes through a juicer and strain out the seeds and pulp.
    • Measure ¼ cup (60 ml) of juice.
    • Cut one additional lime into 4 thin wheels for garnish.
    + Show details

Ready when: You have ¼ cup (60 ml) of seed-free juice.

Tip: Wheel garnish is from a separate lime, so you'll need about 3 limes total.

  4. Mix the base

    • In a large measuring cup or pitcher, stir together the chilled pomegranate juice, lime juice, and ⅓ cup (80 ml) of the cooled rosemary syrup.
    • Taste: it should be tart, fruity, and gently sweet.
    • Add up to 1 more tablespoon (15 ml) syrup if you want it sweeter.
    + Show details

Ready when: The base is uniformly deep red and balanced between sweet and tart; remember it will be diluted by the sparkling water.

Tip: Slightly over-flavor the base, since the sparkling water and ice will mellow it.

  5. Fill the glasses

    • Fill four 12-oz (350 ml) glasses to the top with ice, about 1 cup (140 g) each.
    • Pour about ½ cup (120 ml) of the base over the ice in each glass.
    + Show details

Ready when: Each glass is about half full of red base with ice reaching the rim.

Tip: A full glass of ice keeps the drink cold longer with less dilution.

  6. Top with bubbles

    • Slowly pour about ½ cup (120 ml) of cold sparkling water into each glass, tilting the glass slightly and pouring down the side to preserve the fizz.
    • Give each drink one gentle stir with a long spoon, lifting from the bottom just once or twice.
    + Show details

Ready when: The drink is evenly pink-red with a light fizz on top.

Tip: Stirring more than twice knocks out the carbonation and leaves the spritz flat.

  7. Garnish and serve

    • Slap each rosemary garnish sprig gently against your palm to release its aroma, then tuck one into each glass with a lime wheel.
    • Scatter a spoonful of pomegranate arils on top if using.
    • Serve right away.
    + Show details

Ready when: Garnish is visible, fragrant, and the drink is still actively bubbling.

Tip: Serve within 5 minutes; the ice dilutes and the bubbles fade after that.

Good to know

Tips
  • Keep every liquid ice cold before assembling; warm ingredients quickly lose carbonation.
  • Pour sparkling water last and stir only once or twice to keep the drink fizzy.
  • Bruise the rosemary rather than chopping it; this releases flavor without leaving bits in the syrup.
  • For a party, batch the base in a pitcher and let guests top their own glasses with sparkling water.
Make ahead

The rosemary syrup can be made up to 7 days ahead and refrigerated. The base (pomegranate juice, lime juice, and syrup) can be mixed up to 24 hours ahead and kept covered in the fridge. Add ice and sparkling water only at serving time.

Storage & reheating

Assembled spritzes are best within 5 minutes and do not store well. Unused base keeps covered in the fridge for up to 2 days. Leftover rosemary syrup keeps in a sealed jar in the fridge for up to 1 week; it can be frozen in ice cube trays for up to 3 months. Do not leave at room temperature for more than 2 hours.

Substitutions
  • honey → granulated sugar or maple syrup. Use the same weight of sugar for a neutral flavor, or ¼ cup (60 ml) maple syrup for a deeper taste. Sugar makes this vegan.
  • fresh lime juice → fresh lemon juice. Gives a slightly softer, sweeter citrus note; use the same amount.
  • unflavored sparkling water → ginger beer or tonic water. Ginger beer adds sweetness and spice, so reduce the syrup to 3 tablespoons (45 ml). Tonic adds a pleasant bitterness.
  • fresh rosemary sprigs → fresh thyme sprigs. Use 4 sprigs of thyme for a more delicate, floral herbal flavor.
