Steps

Before you start
  • Take the eggs, yogurt and milk out of the fridge 30 minutes ahead so the batter mixes smoothly and bakes evenly.
  • You need about 1 cup (150 g) of seeds, which is roughly 1 large pomegranate. Seed it ahead and pat the seeds very dry so they don't bleed pink streaks into the batter.
  • Grind cardamom fresh if you can (seeds from about 20 green pods) for the best aroma; pre-ground works but use it within 6 months.
  • Total time is about 1 hour, including 20 minutes of cooling.
  1. Heat oven, line tinOven 375°F / 190°C

    • Position a rack in the center of the oven and preheat to 375°F (190°C).
    • Line all 12 cups of a standard muffin tin with paper liners.

Ready when: Oven reaches 375°F (190°C) and the tin is fully lined.

Tip: Use an oven thermometer if you can; many ovens run hot or cool by 15–25°F.

  2. Prep the pomegranate

    • Pat the pomegranate seeds thoroughly dry with paper towels, removing any white pith.
    • In a small bowl, toss the seeds with 1 tablespoon (8 g) flour until lightly coated.
    • Set aside.

Ready when: Seeds look matte and dusty, with no wet shine.

Tip: The flour coating helps keep the seeds from sinking and bleeding color into the batter.

  3. Whisk dry ingredients

    • In a large bowl, whisk together 2¼ cups (280 g) flour, the baking powder, baking soda, salt and 2 teaspoons cardamom for 30 seconds, until evenly combined with no lumps.
    + Show details

Ready when: Mixture is a uniform pale color flecked with cardamom.

  4. Whisk wet ingredients

    • In a second large bowl, rub the orange zest into the sugar with your fingertips for 30 seconds until fragrant and damp.
    • Whisk in the eggs until pale and slightly thickened, about 1 minute.
    • Add the yogurt, oil, milk and vanilla and whisk until smooth and fully blended.

Ready when: Mixture is smooth, glossy and uniform, with no streaks of yogurt or oil.

Tip: Cold ingredients can make the oil clump; keep everything at room temperature.

  5. Combine batter

    • Pour the wet mixture over the dry ingredients.
    • Using a silicone spatula, fold just until the last streaks of flour disappear, about 15–20 strokes.
    • The batter will be thick and slightly lumpy.

Ready when: No dry flour pockets remain; small lumps are fine.

Tip: Overmixing develops gluten and gives tough, tunneled muffins.

  6. Fold in pomegranate

    • Add the floured pomegranate seeds and fold gently 4–5 times, just to distribute them.
    • Mix the turbinado sugar and ¼ teaspoon cardamom together in a small bowl.

Ready when: Seeds are evenly dispersed and mostly intact.

Tip: Fold gently; crushed seeds turn the batter pink and gummy.

  7. Fill and top

    • Divide the batter among the 12 liners using a scoop, filling each about ¾ full (roughly ⅓ cup / 90 g each).
    • Sprinkle each with the cardamom-sugar mixture, then the chopped pistachios, if using.
    + Show details

Ready when: Batter is level with the tops of the liners' lower three-quarters and topping covers each surface.

Tip: Press any exposed seeds slightly into the batter so they don't scorch.

  8. Bake the muffinsOven 375°F / 190°C

    • Bake at 375°F (190°C) for 20–24 minutes, rotating the tin front to back after 12 minutes, until the tops are golden and domed.
    + Show details

Ready when: A toothpick inserted in the center comes out clean (a pomegranate smear is fine), and the tops spring back when lightly pressed.

Tip: Avoid opening the oven before 12 minutes, or the domes may collapse.

  9. Cool and serve

    • Let the muffins rest in the tin for 5 minutes, then lift them onto a wire rack.
    • Cool at least 15 minutes more before eating so the crumb sets and the pomegranate juices settle.

Ready when: Muffins are warm, not hot, and release cleanly from the liners.

Tip: Leaving them in the hot tin longer will steam the bottoms and make them soggy.

Good to know

Tips
  • Cut the pomegranate in a bowl of water and the arils sink while the pith floats, making seeds easy to separate; drain and dry them well afterward.
  • For bakery-style domes, start the oven at 425°F (220°C) for the first 5 minutes, then lower to 375°F (190°C) and finish baking.
  • Weigh the flour if you can; too much flour makes dry muffins.
  • A pinch of rose water (½ teaspoon) added to the wet mixture gives a classic Persian floral note.
Make ahead

Mix the dry ingredients and the wet ingredients separately (without the pomegranate) up to 12 hours ahead; cover the wet mixture and refrigerate it, then let it sit 30 minutes at room temperature before combining. Fold in the seeds just before baking.

Storage & reheating

Room temperature in an airtight container: up to 2 days. Refrigerator: up to 5 days. Freezer: up to 2 months, wrapped individually in plastic then placed in a freezer bag. Reheat refrigerated muffins at 325°F (160°C) for 8 minutes, or thawed frozen muffins for 10 minutes; or microwave for 15–20 seconds.

Substitutions
  • plain whole-milk yogurt → Buttermilk or sour cream. Use the same amount; sour cream gives a slightly richer, denser crumb.
  • pomegranate seeds (arils) → Fresh blueberries or chopped fresh cranberries. Use 1 cup (150 g); cranberries are tart, so you may want 2 tablespoons more sugar.
  • neutral oil (such as sunflower or canola) → Melted unsalted butter, cooled slightly. Use 120 g (½ cup); gives more buttery flavor but a slightly less moist crumb.
  • unsalted shelled pistachios → Chopped almonds or omit. Almonds are a classic Persian pairing; omit for nut-free muffins.
