Steps
Before you start
- Chill your blender by running cold water through it, or chill it in the freezer for 5 minutes
- Remove pistachio ice cream from the freezer 2–3 minutes before blending so it's soft enough to blend easily without needing added liquid
Grind the pistachios
- Add the finely ground roasted pistachios to the blender.
- Pulse for 10–15 seconds until you have a fine, powdery texture with no large chunks.
- This releases the oils and deepens the pistachio flavor.
- Transfer to a small bowl and set aside.

Ready when: Pistachio powder is fine and homogeneous with no visible pieces larger than a grain of sand
Tip: Do not over-blend; you want powder, not pistachio butter. Stop as soon as the texture is uniformly fine.
Combine base ingredients
- Return the pistachio powder to the blender.
- Add the slightly softened pistachio ice cream, cold whole milk, vanilla extract, and a pinch of sea salt (if using).
- Do not blend yet.

Tip: Keep milk cold to help the milkshake stay thick and creamy—warm milk will make it too thin.
Blend until smooth
- Blend on medium-high speed for 30–45 seconds, until the mixture is completely smooth, creamy, and uniform in color.
- Stop and scrape down the sides of the blender with a spatula if needed, then blend for another 10–15 seconds.
- The shake should be thick enough to hold a mound when poured but still drinkable through a straw.

Ready when: Shake is uniform pale green, completely smooth with no grit or chunks, and holds its shape briefly when poured
Tip: Over-blending will warm the shake and make it thin and icy. Aim for 45 seconds total; if it's still chunky after 30 seconds, blend a few more seconds but no more.
Pour and serve
- Divide the milkshake between two chilled glasses.
- Top each glass with roughly chopped roasted pistachios if desired, and serve immediately with a straw and long spoon.

Tip: Chill the glasses in the freezer for 5 minutes before serving so the shake stays cold longer and looks more elegant.

Tips
- Choose pistachio ice cream with real pistachio flavor (check the ingredients for actual pistachio paste or pieces, not just flavoring) for the best result.
- If your pistachio ice cream is very hard straight from the freezer, let it sit at room temperature for 3–5 minutes, but no longer—it will start to melt unevenly.
- For a protein boost, add 1–2 tablespoons of unsweetened pistachio butter or 2 tablespoons of plain Greek yogurt; blend in the last step.
- Toast your own pistachios (shell them, spread on a baking sheet at 350°F/175°C for 8–10 minutes) for the brightest flavor if you're starting with raw nuts.
Storage & reheating
Best served immediately. If you need to make ahead, blend the dry ingredients and chill the wet ingredients in the fridge separately for up to 4 hours. Blend together just before serving. Once blended, consume within 15 minutes or the shake will separate and become icy.
Substitutions
- whole milk, cold → Heavy cream (use ½ cup/120 ml cream and ½ cup/120 ml whole milk for richness without making it too heavy). Creates a richer, more indulgent shake. Reduce total milk volume by 1–2 tablespoons so it's not too thick.
- whole milk, cold → Half-and-half or 2% milk. Half-and-half makes it creamier; 2% makes it lighter. Use the same amount called for in the recipe.
- roasted, salted pistachios → Unsweetened pistachio butter (use 2 tablespoons/32 g in place of the whole roasted pistachios). Skips the grinding step and delivers concentrated pistachio flavor. Blend directly with other ingredients—no pre-grinding needed.
- vanilla extract → Omit or reduce to ¼ teaspoon if you prefer pure pistachio flavor without vanilla notes. Vanilla is optional and acts as a subtle flavor enhancer; without it, the shake is more intensely nutty.
