Pineapple Coconut Microwave Oatmeal
A quick, creamy microwave oatmeal bowl with tropical pineapple, rich coconut milk, and a touch of honey. Soft oats in a few minutes, perfect for rushed mornings when you want breakfast that tastes like a treat.
Steps
Before you start
- Have your microwave-safe bowl and ingredients ready.
- If using fresh pineapple, chop it ahead so it's ready to add.
Combine wet and dry
- In a microwave-safe bowl (at least 16 oz), add the rolled oats, coconut milk, and water.
- Stir well so the oats are evenly moistened.
- The mixture should look slightly loose—it will absorb liquid as it cooks.

Tip: Don't skip stirring; it prevents dry pockets of oats at the bottom.
Microwave and stir
- Microwave on high for 2 minutes.
- Open the microwave carefully (watch for steam) and stir the oatmeal well, breaking up any clumps.
- If it looks too thick, add a splash more water (1–2 tablespoons).
- Microwave on high for 1 more minute until the oats are tender and the mixture has thickened slightly but is still creamy.

Ready when: Oats are tender and creamy, no hard centers when you bite one
Tip: Microwave strength varies; if oatmeal is too thin after 3 minutes, microwave in 30-second intervals until thickened.
Add pineapple and honey
- Stir in the pineapple chunks and honey.
- Fold gently so the fruit doesn't break apart.
- Add a pinch of kosher salt to balance the sweetness and brighten the tropical flavor.

Ready when: Pineapple is distributed throughout, honey is fully stirred in
Tip: If your pineapple is very cold from the freezer, the oatmeal will cool down quickly; stir it in just before serving for best warmth.
Serve and top
- Pour or spoon the oatmeal into a bowl.
- Top with toasted coconut if desired, a drizzle of extra honey, or a few more pineapple chunks.
- Eat right away while warm.

Tip: Toasted coconut adds a nutty depth; if you don't have it toasted, you can toast it in a dry skillet for 1–2 minutes while the oatmeal cooks.
Good to know
Tips
- Microwave power varies widely. Start with the time given and check doneness; add 30-second intervals as needed rather than cooking the full time and ending up with mush.
- For extra creaminess, use full-fat coconut milk from a can, which has more coconut solids and richness than the carton version.
- If you prefer a looser, more soup-like oatmeal, increase water to ⅓ cup and reduce cook time by 30 seconds.
- Taste after cooking and drizzle extra honey if you like it sweeter, or add a squeeze of fresh lime juice for a subtle tang that complements the pineapple.
Make ahead
Chop fresh pineapple or thaw frozen pineapple up to 1 day ahead and store in the fridge. Toast shredded coconut up to 3 days ahead and store in an airtight container at room temperature.
Storage & reheating
Best eaten right away. Leftovers can be refrigerated in an airtight container for up to 1 day; reheat in the microwave with a splash of water or coconut milk (30–60 seconds on high) to restore creaminess. Do not freeze.
Substitutions
- fresh or frozen pineapple chunks → Mango chunks, papaya, or diced peaches. Any tropical or stone fruit works; adjust quantity to taste. Fresh or frozen both work.
- unsweetened coconut milk (canned or carton) → Almond milk, oat milk, or regular whole milk. The oatmeal will be less creamy and tropical, but still delicious. Use the same amount.
- honey → Maple syrup, agave nectar, or brown sugar (2 teaspoons). Any sweetener works; maple syrup adds a different flavor depth.
- rolled oats (old-fashioned) → Steel-cut oats (will need 4–5 minutes total microwave time) or quick oats (reduce time to 1.5–2 minutes total). Steel-cut oats stay chewier; quick oats are softer. Adjust liquid if needed.
