Steps

Before you start
  • Peel and cut all potatoes into ½-inch cubes before you begin—consistency in size ensures even cooking
  • Pat potatoes thoroughly dry with paper towels; surface moisture prevents browning and crispiness
  • Have a 12-inch skillet ready so potatoes fit in a single layer without crowding
  • Mince the garlic and chop the cilantro ahead of time
  1. Prepare potatoes

    • Peel all potatoes and cut into uniform ½-inch cubes.
    • Spread on clean paper towels or a kitchen towel and pat thoroughly dry.
    • Any moisture on the surface will cause the potatoes to steam instead of crisp when they hit the hot butter.

Ready when: Potatoes are uniformly cubed and completely dry to the touch

Tip: Uniform size is critical—½-inch pieces cook evenly and develop crispy edges on all sides in the same amount of time.

  2. Heat skillet and melt butter

    • Place a 12-inch skillet over medium-high heat.
    • Once the pan is hot, add 2 tablespoons (28g) of butter and let it melt, coating the entire bottom of the pan evenly.
    • The butter should foam slightly and smell nutty, not brown.

Ready when: Butter is melted and foaming; a drop of water sizzles immediately

Tip: A properly hot pan is essential—it's the key to developing that golden, caramelized crust.

  3. Add potatoes and sear undisturbed

    • Add all the prepared potatoes to the hot butter in a single layer, stirring once to coat evenly.
    • If the skillet is too crowded, work in two batches or use two pans.
    • Let the potatoes sit undisturbed, allowing the bottoms to develop a deep golden crust.
    • Resist stirring—stillness is what creates the crispy exterior.

Ready when: The undersides are golden brown (you can peek by lifting a piece with a wooden spoon)

Tip: Resisting the urge to stir constantly is the secret to papas doradas—the uninterrupted contact with hot butter creates the crust.

  4. Stir and brown all sides

    • Give the potatoes a thorough stir with a wooden spoon or spatula, scraping up any stuck-on pieces.
    • Return them to a single layer as much as possible.
    • Continue cooking over medium-high heat, allowing the newly exposed surfaces to develop their own golden crust, stirring occasionally (every 1–2 minutes).
    + Show details

Ready when: All exposed surfaces are golden brown; potatoes feel tender when pierced with a fork

Tip: By this stage, the potatoes are mostly cooked through internally and developing multiple caramelized faces.

  5. Add garlic and remaining butter

    • Add the remaining 2 tablespoons (28g) of butter and the minced garlic to the skillet.
    • Stir constantly for 1–2 minutes until the garlic becomes fragrant and turns a very light golden color.
    • Watch closely—fresh garlic burns easily and becomes bitter if overcooked.
    + Show details

Ready when: Garlic is fragrant and pale golden; small bubbles form around the garlic pieces

Tip: Reduce heat slightly if garlic is browning too fast. Fresh garlic is delicate and burns quickly.

  6. Season and finish with cilantro

    • Remove the skillet from heat immediately.
    • Sprinkle generously with sea salt and black pepper to taste, stirring gently to combine.
    • Add the finely chopped fresh cilantro and toss until evenly distributed.
    • Serve at once while the potatoes are still crackling and hot.
    + Show details

Ready when: Cilantro is evenly distributed, seasonings are incorporated, and the dish is ready to serve

Tip: Add cilantro off the heat so it stays bright green and vibrant—its fresh flavor shouldn't be muted by residual heat.

Good to know

Tips
  • Cut potatoes into uniform ½-inch pieces—inconsistent sizes lead to some burning while others remain raw.
  • Patting potatoes completely dry is non-negotiable: moisture on the surface will create steam, preventing a crispy crust from forming.
  • Don't skip either butter addition: the first 2 tablespoons creates the initial golden crust; the second 2 tablespoons adds richness and delivers the garlicky finish.
  • For the crispiest result, maintain medium-high heat throughout, but reduce slightly in step 5 if the garlic threatens to brown too fast.
Make ahead

Potatoes can be peeled and cubed up to 4 hours ahead; store in cold water in the refrigerator, then drain and pat completely dry before cooking. The finished dish is best served immediately while hot and crispy, but does not benefit from advance preparation.

Storage & reheating

Room temperature: up to 1 hour (crispness will begin to fade). Refrigerator: up to 2 days in an airtight container; reheat in a 350°F (175°C) skillet over medium heat for 3–4 minutes, stirring occasionally, until crispy again. Freezer: not recommended—texture becomes mushy when thawed.

Substitutions
  • unsalted butter → vegetable oil or olive oil. Use 4 tablespoons (60ml) of any neutral oil for a dairy-free version. The flavor will be slightly less rich, but the crispiness will be the same.
  • fresh cilantro → fresh flat-leaf parsley or fresh mint. Parsley offers a milder, earthier note; mint adds a bright freshness. Use the same amount.
  • sea salt → kosher salt or table salt. Use equal volume of kosher salt, or reduce table salt slightly (it's finer and saltier by volume).
  • garlic cloves → garlic-infused oil or omit entirely. For milder garlic flavor, use 1 tablespoon (10g) of garlic-infused oil in step 5, or omit garlic altogether for plain papas doradas.
