Mushroom Swiss Chicken Burgers
Juicy ground chicken burgers loaded with sautéed mushrooms, melted Swiss cheese, and caramelized onions. These are lighter than beef burgers but packed with umami flavor from the mushroom-onion mixture. Pan-fried to a golden crust and served on toasted buns.
Steps
Before you start
- Keep ground chicken cold until ready to form patties
- Have all toppings and buns prepped before cooking
- Use a light touch when mixing the patties to avoid compacting the meat
Sautéed mushrooms and onions
- Heat 1 tbsp butter in a medium skillet over medium-high heat.
- Once foaming, add the finely chopped mushrooms and cook for 5 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.
- Add the sliced onion, reduce heat to medium, and cook for 6–8 minutes, stirring frequently, until the onions are soft and lightly caramelized.
- The mixture should be golden and smell deeply savory.
- Transfer to a plate and let cool for 5 minutes.

Ready when: Mushrooms and onions are golden brown and caramelized
Tip: Cook mushrooms uncovered first to evaporate moisture; this deepens their flavor.
Form burger patties
- In a mixing bowl, combine the ground chicken, cooled mushroom-onion mixture, panko breadcrumbs, beaten egg, minced garlic, Dijon mustard, and Worcestershire sauce.
- Season with ¾ tsp salt and ¼ tsp black pepper.
- Using your hands, gently mix until just combined—do not overmix or the burgers will be dense and tough.
- Divide into 4 equal portions and shape each into a patty about ¾ inch thick, slightly wider than the buns (they will shrink as they cook).
- Make a shallow indent with your thumb in the center of each patty to prevent them from puffing up.

Ready when: Patties are uniform in size with a thumb indent in the center
Tip: Keep patties cold until ready to cook. If they feel soft, refrigerate for 10 minutes.
Cook the burgersOven 165°F / 75°C
- Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Once hot, carefully place the 4 patties in the skillet (do not crowd; if they don't fit, cook in batches).
- Cook undisturbed for 5–6 minutes on the first side until golden brown and a crust forms.
- Flip carefully and cook for 4–5 minutes on the second side.
- The burgers are done when they reach 165°F (74°C) on an instant-read thermometer inserted into the thickest part, or when they feel firm to the touch and no longer pink inside.

Ready when: Golden crust forms; patties are firm and reach 165°F (74°C) internally
Tip: Resist the urge to press down on the burgers with your spatula—this squeezes out juices and dries them out.
Melt cheese on burgers
- In the final minute of cooking the second side, place one slice of Swiss cheese on top of each patty.
- Reduce heat to medium-low, cover the skillet with a lid or foil, and cook for 1 minute until the cheese is melted.
- If you don't have a lid, drape a piece of foil loosely over the skillet.

Ready when: Swiss cheese is melted and glossy
Tip: Add cheese in the last minute to keep it creamy rather than rubbery.
Toast and assemble buns
- While the cheese melts, lightly butter the cut sides of the buns and toast them cut-side down in a separate skillet or toaster until golden and crispy, about 1–2 minutes.
- Place the bottom halves of the buns on serving plates.
- Top each with a lettuce leaf (if using), a burger patty with melted cheese, a tomato slice (if using), and the bun top.

Ready when: Buns are golden and crispy on the cut sides
Tip: Toast the buns while the cheese melts to keep everything warm when assembling.
Good to know
Tips
- For extra flavor, brown 1 tsp of minced garlic separately with the mushrooms; this builds deeper umami than mixing it raw into the patties.
- Don't press the burgers as they cook—this releases juices and creates a dry, dense patty. Let them rest undisturbed for the full time.
- If ground chicken is not cold enough when forming patties, briefly freeze the patties (15–20 minutes) so they hold together better on the hot skillet.
- Serve immediately while the buns are still warm and the cheese is at peak meltiness.
Make ahead
Patties can be formed up to 4 hours ahead and refrigerated, covered. Cook them straight from the fridge without thawing.
Storage & reheating
Store leftover cooked burgers (meat only, without buns) in an airtight container in the fridge for up to 3 days. Reheat gently in a 350°F (175°C) oven for 8–10 minutes. Uncooked patties freeze well for up to 1 month; cook from frozen, adding 2–3 minutes to the cooking time.
Substitutions
- Swiss cheese, sliced → provolone, fontina, or cheddar cheese. Any mild, melting cheese works. Avoid very sharp varieties that can overpower the delicate chicken.
- mushrooms, cremini or button → cremini, shiitake, or a mix of wild mushrooms. Finely chop larger mushrooms like shiitakes. Avoid very small button mushrooms; they don't caramelize as well.
- ground chicken, 85/15 blend → 93/7 lean ground chicken. Leaner blends work but may result in slightly drier burgers; add an extra tbsp of beaten egg to compensate.
- Worcestershire sauce → soy sauce or tamari. Use the same amount (½ tsp). This adds umami depth similar to Worcestershire.
