Steps

Before you start
  • Measure all ingredients before starting
  • Have mugs ready for serving
  • Use unsweetened molasses (not blackstrap) for the best flavor balance
  1. Prepare ginger and spices

    • Peel the fresh ginger and slice it thinly into ¼-inch (6 mm) slices.
    • Break the 2 cinnamon sticks in half to expose more surface area.
    • Measure out the 6 whole cloves.
    • Have all three spices ready next to your saucepan.

Ready when: Ginger is sliced, cinnamon sticks are broken, cloves are measured

Tip: Thin ginger slices infuse faster and won't make the drink grainy

  2. Heat water and infuse spices

    • Pour 4 cups (960 ml) of water into a large 3-quart saucepan.
    • Bring to a boil over medium-high heat, then add the ginger slices, broken cinnamon sticks, and whole cloves.
    • Reduce heat to medium-low and simmer gently for 5 minutes, stirring occasionally.
    • The kitchen will smell warm and fragrant as the spices release their oils into the water.

Ready when: Liquid is aromatic, ginger edges are slightly softened, cinnamon releases fragrance

Tip: Don't boil vigorously or the ginger will become mushy and overpower the drink

  3. Dissolve molasses and salt

    • While the water is still simmering gently, add the ½ cup (120 ml) molasses and ⅛ teaspoon salt.
    • Stir constantly with a wooden spoon for 2–3 minutes, making sure the molasses dissolves completely.
    • The thick molasses will initially sink to the bottom, then gradually blend into the hot liquid until the entire drink is smooth, glossy, and uniform in color.

Ready when: Molasses is fully dissolved and the mixture is uniform in color with no streaks or lumps

Tip: Stir thoroughly to avoid lumps of molasses settling at the bottom of your mug

  4. Strain and finish

    • Remove the saucepan from heat.
    • Pour the warm drink through a fine-mesh strainer into 4 mugs, leaving behind the ginger slices, cinnamon sticks, and cloves.
    • If using butter, place one 1-tablespoon piece into each mug and stir for 30 seconds until it melts completely into a rich, creamy layer on top.
    • Serve immediately while hot.

Ready when: Drink is strained smooth, solids are removed, and butter is fully melted into the drink

Tip: The butter adds richness and keeps the drink warmer longer; it's optional but highly recommended for cold evenings

Good to know

Tips
  • For a spicier kick, add a pinch of cayenne pepper or fresh black pepper with the molasses
  • If you prefer a smoother drink without any pulp, simmer the spices longer (up to 8 minutes) so they release more fully before straining
  • This drink pairs beautifully with biscuits, gingerbread, or spice cake
  • For a crowd, make a large batch and keep it warm in a slow cooker on the low setting for up to 2 hours
Make ahead

You can prepare the spice-infused water up to 8 hours ahead, then reheat gently and add molasses when ready to serve.

Storage & reheating

Best served fresh, but store leftover drink in the refrigerator for up to 3 days in an airtight container. Reheat gently over medium-low heat (do not boil) or in the microwave for 1–2 minutes until warm. The drink will separate slightly upon cooling, so stir well before reheating.

Substitutions
  • fresh ginger → 1 teaspoon ground ginger. Use half the amount; ground ginger is more potent. Stir it in with the molasses rather than simmering it.
  • cinnamon stick → ½ teaspoon ground cinnamon. Whisk it in with the molasses after the initial simmer for a smoother texture without grit.
  • whole cloves → ¼ teaspoon ground cloves. Add it with the molasses to avoid a grainy texture and maintain better control over flavor intensity.
  • unsweetened molasses → dark brown sugar (½ cup / 100 g) mixed with 1 tablespoon blackstrap molasses. Gives a slightly less rich flavor but still delivers warmth and spice. Adjust sweetness to taste.
