Miso and Ginger Dip
A silky-smooth Japanese-inspired dip that balances umami-rich white miso with bright, warming ginger. Sour cream creates a creamy base enhanced by aromatic toasted sesame oil and finished with fresh scallions. Serve with vegetable crudités, crackers, or alongside grilled fish and chicken.
Steps
Before you start
- Remove sour cream from the refrigerator 15 minutes ahead for smoother blending (optional but recommended)
- Peel and have your fresh ginger ready to grate
- Wash and trim the scallions
- Have your blender or food processor ready and clean
Prepare ginger and scallions
- Peel a 1½-inch (4 cm) piece of fresh ginger and finely grate it using a microplane or box grater.
- You should have about 1½ tablespoons (20g).
- Trim the scallions and thinly slice them, keeping the white and light-green parts separate from the darker green tops—you'll use the darker parts as garnish.

Ready when: Ginger is finely grated with no large fibers; scallions are evenly sliced
Tip: Use a microplane grater for fine, fluffy ginger that blends smoothly into the dip
Blend the dip base
- Add 1 cup (240 ml) sour cream, 3 tablespoons (50g) white miso, the grated ginger, and 1 teaspoon (5 ml) toasted sesame oil to a blender or food processor.
- Blend on medium-high speed for about 1 minute, until the mixture is completely smooth, pale tan, and has no visible miso lumps.
- If the dip is thicker than you'd like, add water 1 tablespoon at a time until you reach the desired spoonable consistency.

Ready when: Smooth, creamy, and pale tan with no visible miso chunks
Tip: Blend long enough to fully incorporate the miso; any lumps will be gritty in the final dip
Taste and adjust seasoning
- Transfer the dip to a serving bowl and taste a spoonful.
- The dip should be creamy with distinct umami from miso, warmth from ginger, and nuttiness from sesame oil.
- If using the optional ingredients, add ½ teaspoon rice vinegar and ¼ teaspoon honey to brighten and balance the saltiness, then stir well.
- If the dip tastes too salty, stir in 2–3 tablespoons more sour cream.
- If you want more ginger or sesame flavor, add a small pinch of either.

Tip: Miso saltiness varies by brand, so taste before serving and adjust seasoning as needed

Good to know
Tips
- Room-temperature sour cream blends more smoothly than cold sour cream, resulting in a silkier dip without lumps.
- White miso is milder and slightly sweet compared to red or brown miso, making it ideal for a delicate dip. If you can only find red miso, reduce the amount to 2 tablespoons.
- Serve alongside grilled meats, fish, or roasted vegetables for a quick, impressive condiment.
- This dip is best fresh but can be made 1–2 days ahead. Keep it in an airtight container in the fridge and top with fresh scallion greens just before serving.
Make ahead
Prepare the dip up to 2 days in advance. Store in an airtight container in the refrigerator. Do not freeze. Top with fresh scallion greens just before serving.
Storage & reheating
Refrigerator: Store in an airtight container for up to 5 days. The dip does not freeze well due to the sour cream base. Stir before serving. Discard if the surface looks discolored or smells off.
Substitutions
- sour cream → Greek yogurt (full-fat). Use the same amount; the dip will be tangier and less rich but still delicious
- white (shiro) miso → Red or brown (aka) miso. Use 2 tablespoons instead of 3, as red and brown misos are more intense and earthy
- toasted sesame oil → Chili-infused sesame oil or regular sesame oil. Toasted sesame oil provides the nuttiest flavor, but regular or chili oil works for different taste profiles
- rice vinegar → Fresh lime juice or white wine vinegar. Use the same amount for brightness and acidity
