Steps

Before you start
  • Plan on 20 minutes of soaking time: the semolina must hydrate before baking or the muffins will be gritty.
  • Take the eggs and yogurt out of the fridge 30 minutes ahead so the batter mixes smoothly and the melted butter doesn't clump.
  • If you only have whole mahlab kernels, grind them to a fine powder in a spice grinder or mortar first.
  • Use soft, spreadable date paste. If yours is stiff, knead it with 1 tablespoon of warm water before using.
  1. Preheat and line panOven 375°F / 190°C

    • Position a rack in the center of the oven and preheat to 375°F (190°C).
    • Line a 12-cup muffin tin with paper liners.

Ready when: Oven reaches 375°F (190°C) and the tin is lined.

Tip: The soak in the next step takes 20 minutes, so you can also start preheating during the last 10 minutes of it.

  2. Soak the semolina

    • In a large bowl, stir together the fine semolina, yogurt and milk until no dry pockets remain.
    • Let it stand at room temperature for 20 minutes.

Ready when: The mixture is thick like porridge and the grains feel soft, not sandy, when pressed between your fingers.

Tip: Don't skip this rest. Unsoaked semolina bakes up dry and sandy.

  3. Make date filling

    • While the semolina soaks, mash the date paste, softened butter, cinnamon and 1 teaspoon orange blossom water together in a small bowl with a fork until smooth and evenly mixed.
    • Divide into 12 equal portions (about 17 g each) and roll each into a ball.
    • Set them on a plate.

Ready when: The filling is a smooth, glossy paste with no streaks of butter, and holds a ball shape.

Tip: Slightly dampen your hands with water if the paste sticks while rolling.

  4. Whisk the dry ingredients

    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt and ground mahlab for 20 seconds, until evenly combined.

Ready when: No clumps of baking soda or mahlab remain; the mixture looks uniform.

  5. Mix the wet ingredients

    • Add the brown sugar, beaten eggs, cooled melted butter and 1 tablespoon orange blossom water to the soaked semolina.
    • Whisk for about 1 minute until smooth and glossy.
    + Show details

Ready when: The mixture is smooth with no visible streaks of egg or pooled butter.

Tip: If the butter is hot it can scramble the eggs, so make sure it has cooled for at least 5 minutes.

  6. Combine the batter

    • Tip the whisked dry ingredients into the soaked semolina and wet mixture.
    • Fold with a spatula just until no dry flour is visible, about 15 strokes.
    • The batter will be thick and spoonable.
    + Show details

Ready when: Batter is thick, fluffy and just combined; a few small lumps are fine.

Tip: Overmixing develops gluten and makes the muffins tough.

  7. Fill the muffin cups

    • Spoon about 2 tablespoons of batter into each liner and spread it flat.
    • Press one date ball lightly on top of the batter in each cup.
    • Cover each with about 2 more tablespoons of batter, so the date ball is fully enclosed.
    • Cups should be filled about ¾ full.
    + Show details

Ready when: No date paste is visible on the surface and the batter is level across all 12 cups.

Tip: Keep the date ball centered and away from the liner so it doesn't stick or burn on the edge.

  8. Top and bakeOven 375°F / 190°C

    • Sprinkle the chopped pistachios evenly over the muffins.
    • Bake on the center rack at 375°F (190°C) for 22 to 25 minutes, rotating the pan once at the 12-minute mark.
    + Show details

Ready when: Tops are golden brown and spring back when lightly pressed; a toothpick inserted in the batter beside the date center comes out clean.

Tip: A toothpick pushed into the date center will come out sticky; test the batter around it instead.

  9. Cool and dust

    • Let the muffins rest in the tin for 5 minutes, then move them to a wire rack for at least 10 minutes.
    • Dust with powdered sugar through a fine-mesh sieve just before serving.

Ready when: Muffins release easily from the tin and feel just warm to the touch.

Tip: The date centers stay very hot after baking, so let them cool before biting in.

Good to know

Tips
  • Use fine semolina (sometimes labeled 'semolina flour' or 'smeed na'em'); coarse semolina gives a gritty crumb.
  • Grind mahlab just before using; pre-ground powder loses its aroma within weeks.
  • Orange blossom water is potent. Measure exactly, as extra tastes soapy.
  • For a more cookie-like top, brush the warm muffins lightly with 1 tablespoon of melted butter before dusting.
Make ahead

Soak the semolina with the yogurt and milk, cover, and refrigerate up to 12 hours (bring to room temperature for 20 minutes before continuing). The date balls can be rolled and refrigerated up to 3 days ahead.

Storage & reheating

Room temperature in an airtight container: up to 2 days. Refrigerator: up to 5 days. Freezer: up to 3 months, wrapped individually. Reheat at 325°F (160°C) for 8 to 10 minutes, or microwave for 20 to 30 seconds (from frozen, 45 to 60 seconds). Dust with powdered sugar after reheating.

Substitutions
  • ground mahlab → ¼ tsp almond extract plus a pinch of ground anise. Gives a similar nutty, cherry-like aroma; mahlab is more floral and distinctive.
  • date paste → 200 g pitted Medjool dates blended with 1 tbsp hot water. Process or mash to a thick, smooth paste before mixing with the butter.
  • plain whole-milk yogurt → buttermilk or kefir. Same amount; the batter will be slightly thinner, so soak 25 minutes.
  • raw unsalted pistachios → chopped walnuts or almonds. Walnuts are the traditional filling for date maamoul and add a pleasant bitterness.
