Steps
Before you start
- Chill glasses in the freezer for at least 15 minutes before serving
- Juice fresh oranges if not using pre-made juice
- Have sparkling water chilled and ready
Combine base ingredients
- In a cocktail shaker or jar with a lid, add the fresh orange juice (6 fl oz / 180 ml), orange blossom water (1½ tsp / 7.5 ml), rose water (¼ tsp / 1.25 ml), honey (1 tbsp / 21 g), and fresh lemon juice (¾ fl oz / 22.5 ml).
- Seal the lid and shake vigorously for 10–15 seconds until the honey fully dissolves and the mixture is well combined.

Ready when: Honey is completely dissolved and ingredients are thoroughly mixed
Tip: Shake firmly to ensure the honey dissolves fully; you should not see streaks or granules when you pour
Fill glasses with ice
- Fill two chilled highball or rocks glasses (10 oz / 300 ml each) with ice cubes, filling each glass about three-quarters full.

Tip: Using pre-chilled glasses keeps the drink cold longer and maintains the floral aromas
Strain and pour
- Strain the mixed orange-blossom mixture evenly between the two glasses, pouring over the ice.
- You should fill each glass about halfway.

Tip: Strain through a fine-mesh sieve or cocktail strainer to catch any residual pulp and ensure a clear, silky drink
Top with sparkling water
- Top each glass with 2 fl oz (60 ml) of chilled sparkling water, pouring gently to preserve the bubbles and create a light fizz.

Ready when: Drink is topped with visible carbonation and effervescence
Tip: Add sparkling water last to maximize fizz; stir very gently with a bar spoon to combine without losing carbonation
Garnish and chill
- Stir gently with a bar spoon to combine the sparkling water with the base.
- If desired, garnish each glass with an orange wheel or thin slice of fresh orange.
- Let the drink sit undisturbed for 1–2 minutes before serving, allowing the floral and citrus aromatics to integrate.

Ready when: Drink is well-chilled, flavors are balanced, and carbonation is still visible
Tip: A brief rest allows the delicate floral notes to emerge without the honey tasting cloying; don't let it sit longer than 3 minutes or carbonation will fade
Good to know
Tips
- Orange blossom water and rose water are potent; start with the amounts given and adjust upward only if you love florals. A little goes a long way.
- Use freshly squeezed orange juice if possible; bottled juice lacks the brightness and subtle complexity needed to balance the floral elements.
- This drink is naturally sweet from the honey and orange juice, so the lemon juice is essential for brightness and balance—don't omit it.
- For a party, multiply the base ingredients and chill in a pitcher, then top with sparkling water and ice individually at serving time to keep the fizz alive.
Make ahead
You can prepare the orange-blossom-rose-honey-lemon base (all ingredients except sparkling water and ice) up to 8 hours ahead. Cover and refrigerate. When ready to serve, shake or stir the chilled base with fresh ice and top with sparkling water.
Storage & reheating
This mocktail is best consumed immediately after preparation. If you must store the finished drink (not recommended), keep it refrigerated for no more than 30 minutes; carbonation will dissipate over time. The unshaken base will keep, refrigerated and covered, for up to 8 hours.
Substitutions
- orange blossom water → 1 tsp (5 ml) edible orange blossom extract or ½ tsp (2.5 ml) orange zest macerated in the juice for 1 hour. Extract is more concentrated; use sparingly. Fresh zest adds texture but not the floral delicacy of true orange blossom water. Orange blossom water is widely available at Middle Eastern and specialty grocers.
- rose water → ¼ tsp (1.25 ml) of edible rose extract, or omit entirely for a purely citrus-orange blossom drink. Rose extract is more potent; start with half the amount and taste. The drink is delicious without rose water if you prefer a lighter floral note.
- raw or wildflower honey → 1 tbsp (15 ml) of agave nectar, or simple syrup made from equal parts sugar and water. Agave and simple syrup are neutral sweeteners and won't add floral complexity, but they dissolve easily at room temperature. For a different flavor, use dates blended with water for a more authentic Levantine sweetness.
- chilled sparkling water or soda water → still water for a still beverage, or chilled ginger ale for a subtle spice note. Still water makes a more delicate, quieter drink. Ginger ale adds warmth and is traditional in some Levantine preparations but will change the flavor profile.
