  1. Heat the stock

    • Pour the stock into a medium saucepan and bring to a bare simmer over medium-low heat.

  2. Toast the pistachios

    • Add the lamb in an even layer and cook, breaking it up with a spoon, for 6 to 8 minutes.

    • Spoon off all but about 2 tablespoons of fat if the pot looks greasy.

    • Stop when you've used about 4½ cups and the rice is nearly tender.

  9. Finish and rest

Substitutions

  • dry white wine → additional stock plus 1 tablespoon lemon juice. Keeps the acidity without alcohol.
