Steps

Before you start
  • Have a dry skillet or frying pan ready
  • Use a small food processor, spice grinder, or mortar and pestle
  • Measure all ingredients before you start toasting
  1. Toast the sesame seeds

    • Place sesame seeds in a dry 8–10 inch skillet over medium heat.
    • Stir constantly for 2–3 minutes until fragrant and light golden, being careful not to burn them.
    • Sesame seeds brown quickly, so watch closely.
    • Transfer to a small plate to cool for 1 minute.

Ready when: Seeds are fragrant and light golden, not dark brown

Tip: Keep the pan moving to prevent burning; sesame seeds go from perfect to scorched in seconds.

  2. Prepare grinding equipment

    • While the seeds cool, set up your spice grinder, small food processor, or mortar and pestle.
    • Ensure the vessel is completely dry with no moisture or residue from previous use, as any dampness will clump the blend.

Ready when: Equipment is clean and dry

Tip: A dry tool is essential for a free-flowing spice blend; moisture causes caking.

  3. Add cooled seeds to grinder

    • Once the sesame seeds are cool enough to handle (about 1 minute), transfer them to your grinder, food processor, or mortar.
    • Add the gochugaru, garlic powder, black pepper, and sea salt.

Ready when: All ingredients are in the grinding vessel

Tip: Add cooled seeds last to avoid them melting or clumping with other powdered ingredients.

  4. Blend to coarse texture

    • If using a spice grinder or food processor, pulse for 1–2 minutes until the mixture is mostly broken down but still slightly coarse, with some small seed pieces visible (not a fine powder).
    • If using a mortar and pestle, grind gently for about 2 minutes until roughly combined.
    • The blend should smell fragrant and look uneven, with visible sesame flecks.

Ready when: Blend is coarse and fragrant, with visible sesame seed pieces throughout

Tip: Do not over-process; you want texture and some whole seed pieces for authentic Korean flavor, not a powdery blend.

  5. Transfer to jar and label

    • Pour the blend into a small airtight glass jar, scraping the bottom and sides of the grinder to get all the flavorful bits.
    • Seal the lid tightly and label the jar with the date and contents.

Ready when: Blend is fully transferred and jar is sealed

Tip: Glass jars preserve flavor better than plastic; keep away from direct sunlight and heat.

  6. Use as a finishing seasoning

    • Use this blend as a finishing seasoning for soups, rice bowls, roasted vegetables, eggs, or any dish needing Korean heat and nutty depth.
    • Sprinkle on at the last moment before serving to preserve the toasted sesame aroma and heat impact.

Tip: Sprinkle sparingly over finished dishes rather than cooking with it; the toasted flavor fades with heat.

Good to know

Tips
  • Toast your own sesame seeds rather than buying pre-toasted for fresher, more vibrant flavor—the difference is noticeable.
  • Use this blend as a finishing seasoning rather than cooking with it; sprinkle it on at the last moment to preserve the toasted sesame aroma.
  • Adjust the heat level by reducing gochugaru to 2 tablespoons for a milder blend, or increase to 4 tablespoons if you love intense spice.
  • This blend is excellent sprinkled over soft-boiled or poached eggs, roasted sweet potato wedges, cucumber salad, or warming bowls of miso soup or kimchi jjigae.
Make ahead

This blend can be made up to 3 months ahead and stored in an airtight container at room temperature.

Storage & reheating

Room temperature in an airtight glass jar: up to 3 months. Keep away from direct sunlight and moisture. No freezer storage needed; the blend keeps fresh at room temperature.

Substitutions
  • sesame seeds, white → Black sesame seeds. Use the same amount for a more dramatic look and slightly earthier flavor. Toast the same way to release oils.
  • gochugaru (Korean red chili flakes) → Aleppo pepper or ground cayenne. Aleppo pepper (Turkish) is milder and fruitier; use 2 tablespoons plus 1 teaspoon. Cayenne is much hotter; use only 2 tablespoons.
  • garlic powder → Onion powder or a combination of both. Use 1.5 teaspoons onion powder alone for a sweeter profile, or mix 0.75 teaspoon each for balance.
  • black pepper, freshly ground → White pepper. White pepper is slightly hotter and cleaner in flavor; use the same amount.
