Steps

Before you start
  • Chill the soda water in the fridge for at least 2 hours so it stays fizzy and doesn't melt the ice quickly.
  • Kokum syrup (concentrate) is usually sweetened and fairly strong; taste yours first and adjust the amount if it is very sweet or very sour.
  • Open the soda water only when you are ready to pour, to keep as many bubbles as possible.
  • Wash the lime and ginger well before cutting.
  1. Grate the ginger

    • Peel the ginger with the edge of a spoon, then grate it on a microplane into a small bowl until you have 2 tablespoons (20 g) of fine pulp and juice.

Ready when: Ginger is a wet, fine pulp with no long fibrous strands

Tip: Freeze the ginger for 20 minutes first for easier, less stringy grating.

  2. Juice the limes

    • Roll 2 limes firmly on the counter, halve and squeeze into a measuring cup to get 3 tablespoons (45 ml) of juice.
    • Strain out seeds.
    • Cut 4 thin wheels from a third lime or reserve slices from the squeezed limes' leftover fruit if you have extra.

Ready when: You have 3 tablespoons juice and 4 neat wheels

Tip: Cut wheels before juicing if using the same limes; cut limes are harder to slice afterward.

  3. Infuse the base

    • Add the kokum syrup, lime juice and salt to the bowl with the ginger.
    • Stir for 20 seconds until the salt dissolves.
    • Let it sit for 10 minutes so the ginger flavors the syrup.

Ready when: Base is deep ruby with a sharp ginger aroma and no salt grains

Tip: Don't skip the salt; it rounds out the sweetness and makes the kokum taste fruitier.

  4. Strain the base

    • Pour the base through a fine-mesh sieve into a glass measuring cup, pressing the ginger pulp with a spoon to extract all the liquid.
    • Discard the pulp.
    • You should have about ½ cup (120 ml).
    + Show details

Ready when: Liquid is clear ruby with no ginger bits

Tip: Taste now: add another teaspoon of syrup if too tart, or a squeeze of lime if too sweet.

  5. Fill the glasses

    • Fill two tall glasses about three-quarters full with ice (about 1 cup / 140 g each).
    • Divide the strained base evenly between them, about ¼ cup (60 ml) each.
    + Show details

Ready when: Base pools deep pink-red at the bottom around the ice

  6. Top with soda

    • Slowly pour ¾ cup (180 ml) cold soda water into each glass, tilting the glass and pouring down the side to protect the bubbles.
    + Show details

Ready when: Fizz rises to about ¾ inch (2 cm) below the rim

Tip: Pouring straight onto the ice makes it foam over and go flat faster.

  7. Stir gently

    • Insert a long spoon to the bottom of each glass and lift it once or twice in slow, gentle motions for about 5 seconds to blend the layers without knocking out the bubbles.
    + Show details

Ready when: Color is an even coral-pink from top to bottom

Tip: Over-stirring flattens the soda; two lifts are enough.

  8. Garnish and serve

    • Slide 2 lime wheels into each glass and tuck in a slapped mint sprig if using.
    • Serve immediately with a straw.

Ready when: Bubbles are still streaming up from the ice

Tip: Drink within 10 minutes for the best fizz.

Good to know

Tips
  • Brands of kokum syrup vary widely in sweetness and concentration, so always taste the base before adding soda.
  • Use large ice cubes; they melt slowly and keep the drink from becoming watery.
  • Squeeze the ginger pulp firmly in the sieve; most of the heat is in the juice trapped in the fibers.
  • For a party, scale up the base in a jar and pour 2 tablespoons per ½ cup soda for each guest.
Make ahead

The strained ginger-kokum base can be made up to 2 days ahead and refrigerated in a sealed jar. Add ice and soda water only at serving time.

Storage & reheating

Assembled drinks do not store; serve right away. The strained base keeps 2 days in the fridge in a covered jar, or up to 1 month frozen in an ice cube tray (thaw in the glass before adding ice and soda). Not reheated; serve cold.

Substitutions
  • kokum syrup (sweetened concentrate) → 3 tbsp (45 ml) kokum concentrate plus 1 tbsp (15 ml) simple syrup, or 4 tbsp pomegranate juice with an extra squeeze of lime. Pomegranate version is less tangy and lighter in flavor.
  • soda water → Sparkling mineral water or plain club soda. Use unflavored and unsweetened so the kokum flavor stays in front.
  • black salt (kala namak) or fine sea salt → Pinch of fine sea salt plus a pinch of roasted cumin powder. Cumin adds a traditional savory note; black salt gives a slightly eggy, sulfurous note some love.
  • fresh ginger → 1 tbsp (15 ml) bottled ginger juice. Skip the infusing and straining steps; stir it straight into the base.
