Steps
Before you start
- Use ground chicken that includes some dark meat (about 93% lean or less); pure breast meat makes dry burgers.
- Keep the chicken cold until you form the patties, then chill the shaped patties for 20 minutes so they hold together in the pan.
- Wash your hands, board and plates after handling raw chicken, and use a clean plate for cooked burgers.
- Have the buns, cheese, pickles and tomato ready before you start cooking, because the burgers cook fast.
Make the sauce
- In a small bowl, stir together ¼ cup (56 g) mayonnaise, the ketchup, mustard and pickle brine until smooth.

Prep the onion
- Coarsely grate the onion on a box grater.
- Press it in a fine sieve or paper towel to squeeze out the liquid, then measure ¼ cup (40 g).

Substitutions
- sharp cheddar cheese slices → Monterey Jack, Colby or pepper jack slices. Melts the same way; pepper jack adds heat.
- ground chicken → Ground turkey. Use dark-meat turkey (85–93% lean) for the same juiciness; cook to 165°F (74°C).
- panko breadcrumbs → Plain dry breadcrumbs. Use 3 tablespoons (20 g), since they are denser.
- burger buns → Brioche buns or gluten-free buns. Toast as directed.
