Indian Strawberry Salad with Cardamom and Pomegranate Molasses
A vibrant, elegant salad that brings together fresh strawberries with warm spice from cardamom, bright acidity from pomegranate molasses, and the richness of roasted pistachios. Rose petals add a delicate floral note typical of Indian desserts. The salad is assembled just before serving to keep the berries fresh and firm.

Steps
Before you start
- Choose ripe strawberries with a deep red color and mild fragrance
- Use edible rose petals only (culinary grade, not florist roses which may be treated with pesticides)
- Have all ingredients prepped and ready within 30 minutes of serving for best flavor and texture
Toast the cardamom
- Place the crushed cardamom pods in a small dry skillet over medium heat.
- Toast for 1–2 minutes, stirring occasionally, until fragrant.
- You'll notice the pods darken slightly and release a warm, sweet-spice aroma.
- Transfer to a small bowl to cool slightly, then remove the seeds from the pods and discard the husks.
- Lightly crush the seeds with the back of a spoon.

Ready when: Seeds are fragrant, pods darkened and slightly papery
Tip: Don't skip toasting—it blooms the cardamom's flavor and removes rawness. Overtoasting will make them bitter.
Make the dressing
- In a small bowl, whisk together the pomegranate molasses and honey until fully combined.
- Fold in the crushed cardamom seeds until evenly distributed.
- Taste and adjust: if the dressing tastes too tart, add a touch more honey; if too mild, add a few more crushed cardamom seeds.
- Set aside.

Ready when: Dressing is smooth and cardamom seeds are evenly distributed
Tip: Make the dressing no more than 30 minutes before serving to preserve the cardamom's bright flavor.
Prepare the strawberries
- Hull the strawberries and halve them lengthwise.
- Arrange them on a serving platter or divide among four individual bowls, cut-side up so the red flesh is visible.

Ready when: All strawberries are halved and arranged
Tip: Halve just before assembly to keep the berries fresh and firm. If strawberries must sit, cover loosely and refrigerate up to 2 hours.
Assemble the salad
- Drizzle the cardamom-pomegranate dressing evenly over the strawberries.
- Scatter the chopped pistachios across the top, then sprinkle the rose petals and torn mint leaves (if using) over everything.
- Finish with a whisper of black salt (kala namak) if you like—it adds a subtle mineral, slightly sulfurous note that complements the sweetness.

Ready when: All toppings are evenly distributed
Tip: Assemble no more than 5 minutes before serving so the strawberries don't soften and the pistachios stay crisp.

Tips
- Green cardamom is readily available in the spice aisle or Indian grocery stores; it's worth sourcing true cardamom rather than a blend, as it's the star flavor here.
- Pomegranate molasses (also called pomegranate concentrate) is found in Middle Eastern or Indian markets and adds a sophisticated tang that fresh pomegranate juice cannot replicate.
- Black salt (kala namak) is optional but traditional in Indian cuisine—its slight sulfur note echoes the complexity of fermented foods and elevates simple fruit.
- For a vegan version, use agave or maple syrup in place of honey in equal amounts.
Make ahead
Prepare the cardamom-pomegranate dressing up to 4 hours ahead; store in a covered jar at room temperature. Prep and hull the strawberries up to 2 hours in advance (cover and refrigerate). Toast and crush the cardamom seeds 1 day ahead (store in an airtight container). Assemble the salad just before serving.
Storage & reheating
This salad is best eaten immediately, but leftovers will keep refrigerated in a covered container for up to 4 hours (the strawberries will soften and the pistachios will lose crispness). To serve again, drain any excess liquid and top with fresh pistachios and rose petals. Do not freeze.
Substitutions
- pomegranate molasses → pomegranate juice (use 4 tablespoons / 60 ml, then reduce by simmering over medium-low heat for 3–4 minutes until syrupy and concentrated to about 3 tablespoons / 45 ml). Fresh pomegranate juice lacks the concentrated tang of molasses, so it must be reduced. The flavor will be slightly less complex, but still delicious.
- green cardamom pods → black cardamom pods (use the same quantity but toast briefly; black cardamom is deeper and smokier). Black cardamom offers a more earthy, camphor-like warmth. Reduce the quantity by half if you prefer a milder flavor.
- edible rose petals → candied violets or a sprinkle of dried rose petals (use 1 tablespoon / 4 g). Candied violets add a subtle sweetness and are easier to source. Dried rose petals are more intensely floral—use less.
- roasted unsalted pistachios → blanched sliced almonds or chopped raw almonds (use the same quantity). Almonds will give a milder, buttery taste. Toast them lightly first for better flavor.
