  2. Prep the carrots

    • Peel the carrots, trim the ends, halve lengthwise and cut into 3-inch (7.5 cm) lengths.
    • Cut any thick pieces in quarters so every piece is about ½ inch (1.25 cm) thick.

  5. Make the glaze

    • While the carrots roast, combine the butter, honey and thyme leaves in a small saucepan over low heat.
    • Stir for 2 to 3 minutes until the butter melts and the mixture is smooth and fragrant.
    • Remove from the heat and stir in the lemon juice.

Make ahead

Peel and cut the carrots up to 2 days ahead and store in a container in the fridge, covered with a damp paper towel. Make the glaze up to 3 days ahead; rewarm gently before using.

Storage & reheating

Room temperature: up to 2 hours. Refrigerator: airtight container up to 4 days. Freezer: not recommended, as carrots turn soft. Reheat on a baking sheet at 400°F (200°C) for 8 to 10 minutes, or in a skillet over medium heat.

Substitutions
  • honey → maple syrup. Use the same amount; the flavor will be slightly woodsy and the glaze a bit thinner.
  • unsalted butter → olive oil or vegan butter. Use the same amount for a dairy-free version.
  • fresh thyme leaves → fresh rosemary, finely chopped (1 teaspoon). Rosemary is stronger, so use less.
  • medium carrots → whole baby carrots or rainbow carrots. Leave small ones whole; add 3 to 5 minutes to the first roast if thick.
