Steps

Before you start
  • Measure out all vegetables ahead of time so they're ready when you need them
  • Use long-grain white or brown rice; avoid risotto rice
  • Have chicken broth at room temperature or warm to avoid shocking the pan
  1. Sauté aromatics

    • Melt 1 tbsp (15 g) of butter in a 9-inch (23 cm) nonstick skillet or saucepan over medium heat.
    • Add the diced onion and cook, stirring occasionally, for 3–4 minutes until softened and light golden at the edges.
    • Stir in the minced garlic and cook for 30 seconds until fragrant.
    + Show details

Ready when: Onion is translucent and garlic is fragrant

Tip: Don't brown the garlic or it will taste bitter; keep the heat at medium

  2. Toast the rice

    • Add the uncooked rice to the pan and stir constantly for 1–2 minutes.
    • The rice grains should become slightly opaque and smell lightly nutty.
    • This step helps them stay separate rather than becoming mushy.
    + Show details

Ready when: Rice is opaque and fragrant, clinging slightly to the pan

Tip: Toasting is optional but improves texture and flavor; don't let the rice brown

  3. Add broth and bring to a boil

    • Pour in the 2 cups (480 ml) of chicken broth and bring to a boil over medium-high heat, stirring once.
    • Once it reaches a boil, the liquid should mostly cover the rice with maybe ¼ inch peeking through.
    + Show details

Ready when: Broth is boiling vigorously

Tip: Watch carefully so the broth doesn't boil over; you can reduce heat slightly once it boils

  4. Add carrots and reduce heat

    • Stir in the diced carrots (not the zucchini or peas yet—they'll add too much moisture now).
    • Lower the heat to low, then cover the pan with a lid.
    • Simmer gently for 12–14 minutes without lifting the lid.
    + Show details

Ready when: You should see steam escaping; the liquid is at a gentle bubble, not a roiling boil

Tip: Resist the urge to lift the lid and stir—this releases steam and can cause the rice to cook unevenly

  5. Stir in remaining vegetables

    • Remove the lid carefully (watch for steam).
    • Stir in the peas, the diced zucchini (if using), and the fresh thyme leaves (or dried thyme).
    • The vegetables should be moist but not submerged.
    • Cover again and cook for 2–3 minutes until the peas are heated through and the zucchini is tender-crisp.
    + Show details

Ready when: Peas are bright green and warm; zucchini is just tender when pierced with a fork

Tip: If you added frozen peas, they thaw instantly from the residual heat—no extra cooking time needed

  6. Rest the rice

    • Remove the pan from heat and let it sit, covered, for 5–7 minutes.
    • During this time, the rice absorbs any remaining liquid and the grains finish cooking gently.
    + Show details

Ready when: No visible liquid in the bottom of the pan when you peek under the lid

Tip: Don't skip this rest—it's crucial for fluffy, separate grains

  7. Finish and fluff

    • Remove the lid and stir gently with a fork or rice paddle to fluff the grains.
    • Taste and adjust seasoning with kosher salt and freshly ground black pepper.
    • Stir in the remaining 1 tbsp (15 g) of butter until melted throughout, then fold in the fresh parsley if using.
    + Show details

Ready when: Rice is fluffy and grains are separate; butter is melted and parsley is distributed

Tip: Use a fork or rice paddle rather than a spoon to avoid mashing the grains into a paste

Good to know

Tips
  • For firmer, more al dente rice, reduce the liquid to 1¾ cups (420 ml) and check at the 12-minute mark—you want just a bit of liquid remaining so the rice finishes cooking during the rest period
  • Brown rice works great here but requires 2⅔ cups (640 ml) of broth and an extra 8–10 minutes of simmering; skip the toasting step to prevent over-browning
  • Stir in shredded rotisserie chicken or cooked diced poultry in the final step to turn this into a more substantial main dish
  • Fresh herbs shine here—use what you have on hand: dill, chives, basil, or oregano all work beautifully; add them after cooking
Make ahead

Cook the vegetables ahead of time and store them in the fridge for up to 1 day. Toast the rice in the pan, add hot broth, and complete the dish when you're ready to eat—it will take about 20 minutes from start to finish.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium-low heat with a splash of water or broth to restore moisture, stirring occasionally, for 5–7 minutes. You can also reheat in the microwave in a covered dish with a sprinkle of water for 2–3 minutes, stirring halfway through. Freezer storage is not recommended due to the delicate texture of the rice.

Substitutions
  • frozen peas → corn kernels, fresh or frozen. Adds sweetness and a similar texture; use the same amount
  • carrots → diced red bell pepper. Adds color and a slightly sweet, crisp vegetable; add with the peas so it doesn't overcook
  • zucchini → diced celery or green beans. Celery adds a mild vegetal flavor; green beans stay slightly firmer. Cut into ¼-inch pieces
  • chicken broth, low-sodium → vegetable broth. Use a low-sodium vegetable broth for a vegetarian version; the flavor will be slightly lighter
