Steps
Before you start
- Clear a level space in your freezer large enough for a 13×9-inch (33×23 cm) pan or a small rimmed baking sheet.
- Use full-fat or 2% plain Greek yogurt; nonfat versions freeze harder and icier.
- Wash berries and pat them very dry so extra water doesn't make the bark icy.
- Plan on at least 3 hours of freezing time, or leave it overnight.
Prepare the pan
- Clear freezer space and line a 13×9-inch (33×23 cm) rimmed baking sheet with parchment paper, letting it overhang slightly on the short sides to use as handles later.
- Make sure the pan sits flat in the freezer.

Ready when: Parchment lies flat and covers the whole base of the pan.
Tip: Dab a tiny bit of yogurt under each corner of the parchment to hold it in place.
Dry the berries
- Dice the strawberries into ¼-inch (6 mm) pieces.
- Halve any large raspberries.
- Spread all the berries on a paper towel-lined plate and pat the tops dry with another paper towel.

Ready when: Berries look matte, with no visible beads of water.
Tip: Wet berries bleed color and create icy patches in the bark.
Mix the yogurt base
- In a medium bowl, stir together the Greek yogurt, 3 tablespoons honey, vanilla extract, and salt with a spatula for about 30 seconds.

Ready when: Mixture is smooth, evenly pale, and no honey streaks remain.
Tip: Taste it now. It should be lightly sweet, since freezing dulls sweetness. Add another teaspoon of honey if you like.
Spread the yogurt
- Scrape the yogurt onto the lined pan.
- Use an offset or rubber spatula to spread it into an even layer about ⅜ inch (1 cm) thick, covering roughly 11×8 inches (28×20 cm).
- Leave a small border around the edges.

Ready when: Layer is level with no bare parchment inside the spread area and no thin, see-through spots.
Tip: Rap the pan gently on the counter twice to level the surface and release air bubbles.
Add the berries
- Scatter the strawberries, blueberries, and raspberries evenly over the yogurt.
- Gently press them in with your fingertips so they are about halfway submerged.
- If using, drizzle the warmed 1 teaspoon honey over the top in thin zigzags.

Ready when: Berries cover the surface in a mosaic and stay put when the pan is tilted slightly.
Tip: Don't bury the berries fully, or the bark will be hard to break cleanly.
Freeze until solid
- Carefully transfer the pan to the freezer, keeping it level.
- Freeze for at least 3 hours, or up to overnight.

Ready when: Bark is rock hard throughout; pressing the center with a finger leaves no dent.
Tip: Keep the pan away from strong-smelling foods, since yogurt absorbs freezer odors.
Break into pieces
- Lift the bark out using the parchment overhang and set it on a cutting board.
- Let it sit 1 minute, then break it by hand into about 16 irregular shards, or cut with a sharp knife into 2-inch (5 cm) pieces.

Ready when: Pieces separate cleanly with a snap.
Tip: If the bark is too brittle and crumbles, wait another minute; if it bends and feels soft, return it to the freezer for 15 minutes.
Store or serve
- Serve right away, or layer the pieces in an airtight freezer container with parchment between layers.
- Return to the freezer immediately.

Ready when: Pieces are fully frozen and not stuck together.
Tip: Work quickly, because the thin pieces soften within 5 minutes at room temperature.
Good to know
Tips
- Use thick Greek yogurt. Regular yogurt is too thin and freezes icy.
- Spread evenly to about ⅜ inch (1 cm); thinner areas freeze brittle and thicker areas stay hard to bite.
- Add toppings like chopped pistachios, granola, or unsweetened coconut flakes (about ¼ cup) with the berries for crunch.
- Break the bark just before serving for the best snap.
Make ahead
"Make the whole batch up to 1 week ahead. Freeze the broken pieces in a sealed container and serve straight from the freezer."
Storage & reheating
"Room temperature: not suitable; it softens within 5–10 minutes. Freezer: store in an airtight container with parchment between layers for up to 2 weeks. Serve straight from the freezer; if too hard, let it stand 1–2 minutes. Do not refreeze after it has melted. Fridge: not recommended."
Substitutions
- honey → maple syrup. Use the same amount; the flavor will be slightly more caramel-like.
- plain whole-milk Greek yogurt → thick coconut yogurt. Gives a dairy-free version, but it may freeze a bit softer, so freeze 4 hours.
- strawberries → diced mango or peaches. Use the same weight and pat very dry.
- fine sea salt → omit. The bark will taste slightly flatter but still works.
