- Marinade for 1½ to 2 lbs (680–900 g) prawns
Steps
Before you start
- Peel and devein the prawns, leaving tails intact if desired
- Gather fresh curry leaves (frozen work if fresh are unavailable)
- Have a medium bowl and a non-reactive container (glass or stainless steel) ready for marinating
Toast and bloom spices
- In a medium bowl, whisk together the ground turmeric, cumin, coriander, and kashmiri chili powder.
- Add the minced ginger, garlic, and chopped curry leaves.
- Stir well to distribute the spices evenly and to wake up the aromatics of the fresh ingredients.
- This fragrant mixture is the foundation of your marinade.

Ready when: Spices are fragrant and well combined
Tip: Toasting spices in a dry pan first deepens flavor, but combining them directly with wet ingredients works well here too.
Create creamy base
- Pour the coconut milk into the spice mixture and whisk until smooth, breaking up any lumps.
- The mixture should be creamy and uniform in color, with no visible clumps of spice.
- Add the neutral oil and whisk again to fully incorporate.

Ready when: Marinade is smooth, creamy, and pale golden
Tip: If using thick canned coconut milk, whisk it first to break up any separation.
Finish marinade
- Add the fresh lime juice and sea salt to the coconut-spice mixture.
- Whisk thoroughly until fully combined.
- Taste a tiny spoonful and adjust salt to preference (remember the marinade will be concentrated and the prawns will add their own briny flavor).
- If using green chilies, stir them in now.

Ready when: Marinade is well seasoned and balanced
Tip: Lime juice is essential—it brightens the rich coconut and prevents the dish from feeling heavy.
Coat and marinate prawns
- Transfer the prepared prawns to a non-reactive container (glass or stainless steel).
- Pour the entire marinade over them, gently folding with a spoon or silicone spatula to coat each prawn evenly.
- Make sure all prawns are submerged or well coated in the marinade.
- Cover with a lid or plastic wrap.

Ready when: All prawns are coated and in the container
Tip: Use a glass or stainless-steel container—aluminum or cast iron can react with the acidic lime juice and discolor the marinade.
Marinate until ready to cook
- Refrigerate for at least 30 minutes, and up to 2 hours.
- The longer the prawns marinate, the more flavor they will absorb.
- Do not marinate longer than 2 hours, as the lime juice will begin to break down the delicate prawn flesh and make it mushy.

Ready when: Prawns have absorbed the golden color of the marinade and smell fragrant
Tip: If marinating for less than 30 minutes, use room-temperature marinade; if longer, chill the marinade slightly before adding prawns so they stay fresh.
Good to know
Tips
- Gently fold the marinade over the prawns rather than stirring vigorously—you want to coat them without bruising their delicate flesh.
- For a silkier marinade, finely chop or grind the curry leaves, ginger, and garlic into a paste before mixing with the coconut milk.
- If you plan to grill the marinated prawns, thread them onto skewers (soak wooden skewers 30 minutes first). Reserve some extra marinade before adding the prawns and brush the skewers as they grill for extra flavor and gloss.
- Serve marinated prawns within 2 hours of cooking for the best texture; overcooking will make them tough and rubbery.
Make ahead
Prepare the marinade mixture up to 4 hours ahead and refrigerate in a non-reactive container. Add the prawns no more than 2 hours before cooking, and keep refrigerated until you are ready to pan-sear, grill, or skewer and cook them.
Storage & reheating
Store marinated prawns in the refrigerator in a covered non-reactive container for up to 2 hours. If you need to hold them longer, freeze the marinated prawns for up to 3 months. Thaw in the refrigerator overnight and cook without re-marinating. The marinade itself (without prawns) keeps refrigerated for up to 5 days in an airtight container.
Substitutions
- fresh curry leaves → 4–5 fresh basil leaves or 1 tablespoon dried curry leaf powder. Fresh curry leaves are ideal, but frozen curry leaves work well too. Dried powder will be less aromatic but still flavorful. Basil offers a different but pleasant herbal note.
- kashmiri chili powder → sweet paprika or ½ teaspoon cayenne pepper mixed with 1 tablespoon sweet paprika. Kashmiri chili powder is mild and adds beautiful color; paprika is similar but slightly sweeter. Cayenne will make the marinade much hotter.
- fresh lime juice → 3 tablespoons fresh lemon juice or white wine vinegar. Lemon is less floral and more tart; vinegar adds tanginess but less brightness. Lime is best for the authentic flavor.
- unsweetened coconut milk → Greek yogurt or a 1:1 mixture of yogurt and coconut cream. Yogurt creates a thicker, more tangy marinade and is excellent for grilling. Coconut milk is creamier and more traditional for Diwali.
