Crispy Tofu and Black Sesame Rice
Pan-fried crispy tofu cubes tossed with jasmine rice and finished with nutty black sesame seeds, scallions, and a light soy-ginger dressing. This aromatic side dish works equally well as a light meal on its own, with a satisfying contrast of crispy tofu, tender rice, and herbaceous freshness.
Steps
Before you start
- Have the rice cooked and cooled to room temperature or chilled at least 1 hour ahead (day-old rice works best and prevents mushiness)
- Press the extra-firm tofu to remove excess moisture for at least 20 minutes
- Measure all ingredients and prepare the soy-ginger dressing before you start cooking
Prepare the dressing
- In a medium bowl, whisk together 2 tablespoons (30 ml) soy sauce, 1 tablespoon (15 ml) rice vinegar, 1 teaspoon (5 ml) toasted sesame oil, 1 tablespoon (6 g) minced fresh ginger, and 1 minced garlic clove.
- Set aside.

Ready when: Dressing is smooth and ingredients are combined.
Tip: Whisk the dressing thoroughly to emulsify the oils and distribute the ginger and garlic evenly.
Pan-fry the tofu
- Heat 3 tablespoons (45 ml) peanut oil in a large nonstick skillet over medium-high heat.
- Once the oil shimmers and moves easily across the pan (about 2 minutes), carefully add the pressed tofu cubes in a single layer.
- Avoid stirring for the first 3–4 minutes so they develop a golden crust on the bottom.
- Then stir and cook for another 8–10 minutes, turning occasionally, until the tofu is golden and crispy on multiple sides.
- The cubes should feel firm on the outside and have a light golden-brown color.

Ready when: Tofu cubes are golden brown and crispy on all sides; they hold their shape when stirred.
Tip: Don't crowd the pan or stir too early—this prevents the tofu from crisping. If the pan is small, work in batches.
Toss rice with dressing and tofu
- Transfer the crispy tofu to a large serving bowl.
- Add the cooled jasmine rice to the same skillet (you don't need to clean it; the browned bits add flavor) over medium heat.
- Stir and warm the rice for 2–3 minutes, breaking up any clumps and allowing the rice to absorb any residual oil from the tofu.
- Pour the prepared dressing over the warm rice and stir vigorously for 1–2 minutes until the rice is evenly coated and glistening.
- Add the tofu cubes back in and fold gently to combine.

Ready when: Rice is warmed through, each grain is separated, and the dressing coats all ingredients evenly.
Tip: Use a light folding motion at the end to keep the crispy tofu from breaking apart.
Finish and serve
- Transfer the rice mixture to a serving platter or divide among bowls.
- Scatter the black sesame seeds over the top and garnish with the sliced scallion whites and light green parts.
- Reserve the dark green scallion tops as a fresh garnish.
- Finish with a pinch of white pepper to taste.

Tips
- Use day-old or cold rice from the refrigerator for the best results—fresh, hot rice will become mushy when mixed with the warm dressing.
- Press your tofu seriously for at least 20 minutes; this is the key to achieving a crispy exterior. Wet tofu will steam instead of brown.
- Black sesame seeds add both visual interest and a subtle earthiness to the dish. They have a slightly different flavor than white sesame—more mineral and nutty. Toast them lightly in a dry pan for 1–2 minutes before serving if you want to deepen their flavor.
- This dish is naturally vegetarian and can be vegan if you use soy sauce that contains no animal products. Serve it as a side to grilled proteins, or add a soft-boiled egg or chickpeas for extra protein as a standalone meal.
Make ahead
Cook the jasmine rice 1 day ahead and refrigerate; it actually works better for this dish because the grains separate more easily and won't turn mushy. Prepare the soy-ginger dressing up to 2 hours ahead and store at room temperature. Pan-fry the tofu no more than 1 hour before serving to keep it as crispy as possible.
Storage & reheating
Refrigerate leftovers in an airtight container for up to 3 days. The tofu will soften slightly over time. Reheat gently in a skillet over medium heat for 2–3 minutes, stirring to warm through, or microwave in a covered bowl for 1–2 minutes. The black sesame seeds and scallion garnish are best added fresh before serving.
Substitutions
- black sesame seeds → white sesame seeds. White sesame seeds have a milder, more delicate flavor and will lighten the visual appearance, but they work just as well for texture and nutrition.
- peanut oil or neutral vegetable oil → vegetable oil, canola oil, or refined coconut oil. Any neutral oil with a high smoke point works. Peanut oil adds a subtle nutty flavor, but other options are equally effective.
- rice vinegar → unseasoned rice wine vinegar or a squeeze of fresh lime juice. Rice vinegar provides acidity that balances the salty soy sauce. Lime juice adds brightness but will change the flavor profile slightly.
- scallions (green onions) → fresh chives or the green parts of a leek, sliced thin. Both provide similar fresh onion flavor and color. Chives are milder; leeks have a slightly more pronounced onion taste.
