Steps

Before you start
  • Pat the chicken very dry with paper towels; dry chicken makes the coating stick and crisp.
  • Make the ranch first so it chills while you cook (at least 15 minutes).
  • Set up a breading line of three shallow dishes: flour, egg, then panko, plus a wire rack for the cooked chicken.
  • Wash and thoroughly dry the greens so the dressing clings and the salad stays crisp.
  1. Make the ranch

    • In a small bowl whisk the mayonnaise, sour cream, buttermilk, chives, dill, garlic powder, onion powder, lemon juice, ¼ teaspoon of the black pepper and a pinch of salt until smooth.
    • Taste and add salt if needed.
    • Thin with a teaspoon more buttermilk if you want a pourable dressing.
    • Cover and refrigerate.

Make ahead

Storage & reheating

Store undressed salad, chicken and ranch separately. Chicken keeps 3 days in the fridge in an airtight container; salad components 2 days. Freeze cooked chicken up to 2 months. Reheat chicken on a rack in a 400°F (200°C) oven for 8 to 10 minutes (from frozen 15 minutes) until hot and crisp. Do not leave at room temperature for more than 2 hours.

Substitutions
  • panko breadcrumbs → crushed cornflakes or plain dry breadcrumbs. Cornflakes give extra crunch; plain breadcrumbs give a finer, denser crust.
  • chicken tenders → boneless skinless chicken breasts, sliced into thin cutlets. Pound to ½ inch (1.3 cm) thick and cook 3 to 4 minutes per side to 165°F (74°C).
  • buttermilk → milk with ½ teaspoon lemon juice stirred in. Let it sit 5 minutes before using.
  • sour cream → plain Greek yogurt. Slightly tangier and a bit thicker.
