Cottage Cheese Berry Muffins

Moist, tender muffins made with cottage cheese for extra protein and a delicate crumb. Mixed berries and a hint of lemon create bright, fresh flavor. The entire batter comes together in one bowl—no separate prep bowls needed. Honey provides natural sweetness and keeps the muffins tender for days.

Steps

Before you start
  • Preheat your oven to 375°F (190°C)
  • Line a 12-cup muffin tin with paper muffin liners
  • Make sure cottage cheese and eggs are at room temperature for smoother mixing
  1. Prepare muffin tin and preheat ovenOven 375°F / 190°C

    • Line all 12 cups of a muffin tin with paper liners, pressing them gently to fit snugly.
    • Place the muffin tin on a baking sheet for easier handling.
    • Position an oven rack in the center of the oven and preheat to 375°F (190°C).
    • Let the oven preheat for at least 8 minutes while you prepare the batter.

Tip: Paper liners prevent muffins from sticking and make cleanup easier

  2. Mix wet ingredients

    • In a large mixing bowl, add cottage cheese, 2 large eggs at room temperature, honey, melted butter, and vanilla extract.
    • Whisk vigorously for about 2 minutes until the mixture is smooth and well combined—the cottage cheese should break down almost completely and blend into the other ingredients.
    • Small curds are fine, but work out larger lumps.

Ready when: mixture is smooth and pale, with no visible large chunks of cottage cheese

Tip: Room-temperature ingredients blend more smoothly than cold ones

  3. Add dry ingredients and lemon zest

    • Sprinkle all-purpose flour, baking powder, baking soda, salt, and lemon zest (if using) directly over the wet mixture.
    • Using a rubber spatula, gently fold the ingredients together with a series of scoops from the bottom of the bowl up and over the top.
    • Stop when you see no visible flour streaks—the batter should still be slightly lumpy and uneven.
    • You're aiming for about 20–25 gentle folds total.

Ready when: no visible flour streaks remain, and batter is thick and chunky

Tip: Overmixing develops gluten and leads to tough, dense muffins—lumpy batter is your friend

  4. Fold in berries

    • Scatter the mixed berries (use them straight from the freezer if frozen—do not thaw) over the batter.
    • Very gently fold them in with 8–10 folds, just until they're evenly distributed.
    • Avoid crushing or over-stirring, which breaks the berries and can cause color bleeding into the batter.

Ready when: berries are evenly scattered throughout the batter

Tip: Frozen berries stay whole and prevent color bleeding into the muffin; thawed berries will stain the batter

  5. Fill muffin cups

    • Using an ice cream scoop or 1/4-cup measure, divide the batter evenly among the 12 lined muffin cups, filling each about 3/4 full.
    • Gently tap the muffin tin on the counter once or twice to release any trapped air bubbles.
    • Any leftover batter can be scraped into one of the cups.
    + Show details

Ready when: each cup is filled evenly and batter reaches about 3/4 of the way up

Tip: An ice cream scoop ensures all muffins are the same size and bake at the same rate

  6. Bake muffinsOven 375°F / 190°C

    • Transfer the muffin tin to the preheated 375°F (190°C) oven.
    • Bake for 20–22 minutes, until the muffin tops are deep golden brown and a toothpick inserted into the center of one muffin comes out with just a few moist crumbs clinging to it (not completely dry, but not wet batter).
    • Don't open the oven door during the first 18 minutes.

Ready when: muffin tops are deep golden brown and a toothpick in the center comes out with a few moist crumbs

  7. Cool and turn out

    • Remove the muffin tin from the oven and set it on a wire rack or heat-safe surface.
    • Let the muffins cool in the pan for 5 minutes—this allows them to set firm and firm up around the edges.
    • Gently turn the muffins out onto a wire rack to cool completely.
    • They're best served warm or at room temperature after 10 minutes of cooling.

Tip: Removing muffins too soon may cause them to crumble; waiting too long makes them stick

Good to know

Tips
  • Use an ice cream scoop or 1/4-cup measure for uniformly sized muffins that bake evenly—large and small muffins will overbake or underbake
  • Frozen berries are your friend: they don't thaw and bleed color into the batter the way thawed berries do
  • Don't overmix once the flour goes in—lumps in the batter lead to tender crumb; overmixing develops gluten and makes tough muffins
  • If you love berry flavor, include the lemon zest—it brightens and intensifies the berry taste without adding tartness
Make ahead

Prepare the batter up to 4 hours ahead and store it in the mixing bowl, covered, in the refrigerator. Bake directly from cold; add 2–3 minutes to the baking time if you do. Do not freeze unbaked batter.

Storage & reheating

Store cooled muffins at room temperature in an airtight container for up to 2 days. Refrigerate in an airtight container for up to 5 days. Freeze in a freezer bag or airtight container for up to 2 months. To reheat, wrap a muffin in foil and warm in a 325°F (160°C) oven for 10 minutes, or microwave a single muffin for 30–45 seconds.

Substitutions
  • cottage cheese → Greek yogurt. Use plain, unsweetened Greek yogurt in the same amount (1 cup). The muffins will be slightly tangier and a touch denser.
  • honey → maple syrup or agave nectar. Use the same volume (1/3 cup). Maple syrup adds an earthy flavor; agave is more neutral.
  • mixed berries → blueberries, raspberries, or chopped strawberries. Any berry works. If using large strawberries, chop them into 1/2-inch pieces. Frozen or fresh both work well.
  • unsalted butter → neutral oil (coconut, vegetable, or canola). Use the same amount (4 tablespoons / 57 g), melted and cooled. Oil yields slightly more tender muffins.
