Corn, Avocado and Lime Pasta Salad with Cilantro
A bright, refreshing pasta salad combining sweet corn, creamy avocado, and zesty lime with fresh cilantro. This cold salad is perfect for warm weather gatherings and pairs beautifully with grilled chicken or fish. The dressing comes together in minutes, and the salad is best served immediately after assembly to keep the avocado from oxidizing.

Steps
Before you start
- Bring a large pot of salted water to a boil for the pasta
- Have all ingredients prepped and ready to combine quickly
- Bring avocados to room temperature for easier slicing (about 30 minutes if very cold)
Cook the pasta
- Bring a large pot of salted water to a boil over high heat.
- Add the pasta and cook according to package directions until just al dente (usually 8–9 minutes), stirring occasionally to prevent sticking.
- Drain in a colander and rinse briefly with cold water until the pasta feels cool to the touch.
- Transfer to a large mixing bowl.

Ready when: Pasta is tender but still has a slight firmness when bitten
Tip: Do not overcook; al dente pasta holds up better in the cold salad and won't become mushy.
Make the lime dressing
- While the pasta cooks, whisk together the lime juice (about ⅓ cup / 80 ml), lime zest, minced garlic, olive oil, salt, black pepper, and red pepper flakes (if using) in a small bowl.
- Whisk until combined.
- Taste and adjust salt or lime juice as needed.

Ready when: Dressing is emulsified and well combined
Tip: Make the dressing while the pasta cooks to save time, and adjust seasoning to your taste before tossing.
Toss pasta with dressing
- Pour the lime dressing over the cooled pasta in the large bowl and toss gently but thoroughly until every piece of pasta is coated.
- Let sit for 5–10 minutes so the pasta absorbs the flavors.

Ready when: Pasta glistens and is evenly coated
Tip: Toss gently to avoid crushing the pasta; this short rest allows the flavors to develop.
Add vegetables and cilantro
- Add the corn, diced red onion, diced red bell pepper, and chopped cilantro to the dressed pasta.
- Toss gently to combine, making sure the vegetables are evenly distributed throughout.

Ready when: Vegetables are evenly distributed and salad is well combined
Tip: Add vegetables after the pasta has rested so the dressing flavor is already established.
Fold in avocado
- Just before serving, cut the avocados in half lengthwise, remove the pit, scoop the flesh into ½-inch cubes, and gently fold them into the salad using a rubber spatula.
- Work quickly and carefully to avoid mashing the avocado, and serve immediately.

Ready when: Avocado is folded in without breaking apart
Tip: Add avocado at the very last moment to prevent browning and to keep chunks intact. If making ahead, prepare avocado only when serving.
Good to know
Tips
- Add the avocado just before serving to prevent browning; a squeeze of lime juice over the cubes helps slow oxidation if you must wait a few minutes.
- For a heartier salad, add 1 cup (150 g) of crumbled queso fresco or cotija cheese, diced cooked chicken, or canned black beans drained and rinsed.
- If the salad seems dry after 30 minutes, drizzle with a little extra lime juice and olive oil; the pasta continues to absorb liquid over time.
- Toast the red pepper flakes in a dry pan for 30 seconds before adding to the dressing to deepen their flavor and warmth.
Make ahead
Prepare and refrigerate all ingredients except the avocado up to 2 hours ahead. Assemble the complete salad with avocado no more than 15 minutes before serving to prevent the avocado from browning.
Storage & reheating
Store in an airtight container in the refrigerator for up to 1 day. The avocado will begin to brown after a few hours. To serve leftover salad (without avocado), let it come to room temperature for 15–20 minutes and add a splash of fresh lime juice to refresh the flavors. Do not freeze.
Substitutions
- Fresh or frozen corn kernels → Fresh corn cut from the cob, or thawed edamame. Edamame adds protein and a slightly different texture but keeps the same fresh, light character.
- Fresh cilantro leaves → Fresh mint or flat-leaf parsley. Mint will shift the flavor toward a more Mediterranean style; parsley offers a milder herbal note.
- Extra virgin olive oil → Avocado oil or grapeseed oil. Both have a neutral flavor and similar texture; avocado oil adds richness.
- Red bell pepper → Yellow or orange bell pepper, or diced cucumber. Yellow pepper is slightly sweeter; cucumber adds crunch but will release water if cut hours ahead.
