
Classic Cheese Ball with Pecans
A creamy, tangy cheese ball made with sharp cheddar, green onions and a splash of Worcestershire, rolled in toasted pecans. It's make-ahead friendly and always the first thing to disappear at a party.

Steps
Before you start
- Allergen alert: this recipe contains milk (cream cheese, cheddar) and tree nuts (pecans). Regular Worcestershire sauce usually contains anchovies (fish) and some brands contain gluten, so read the label. For fish-allergic, vegetarian or gluten-free guests, use a certified anchovy-free, vegetarian and/or gluten-free Worcestershire.
- Set the cream cheese out on the counter 45–60 minutes ahead so it is fully soft. Cold cream cheese leaves lumps.
- Grate the cheddar from a block. Pre-shredded cheese is coated with starch and makes the ball grainy and dry.
- Plan on about 4 hours in total. The mixture needs 1 hour to firm up for shaping, then 2 more hours to set after coating.
- Use full-fat block cream cheese. Whipped or reduced-fat tubs are too soft to hold a shape.
Toast the pecansOven 350°F / 175°C
- Heat the oven to 350°F (175°C).
- Spread the 1½ cups pecan halves in a single layer on a rimmed baking sheet.
- Toast for 8–10 minutes, shaking the pan once halfway, until the pecans smell nutty and are a shade darker.

Tip: Pecans go from toasted to bitter fast. Pull them as soon as you smell them.
Cool and chop pecans
- Slide the pecans onto a plate and cool completely, about 15 minutes.
- Chop finely with a knife into pieces about ⅛ inch (3 mm), no bigger than a pea.
- Mix with the chopped parsley, if using, and spread over a shallow plate.

Tip: Warm nuts soften as they sit against the cheese, so make sure they are fully cool.
Prep the cheese and onions
- Grate the cheddar on the large holes of a box grater until you have 2 packed cups (227 g).
- Slice the green onions thinly, using both the white and green parts, to get about ⅓ cup (35 g).

Tip: Pat the sliced onions dry with a paper towel so they don't add water to the mixture.
Beat the cream cheese
- In a large bowl, beat the softened cream cheese with a hand mixer on medium speed (or a sturdy spoon) for 1–2 minutes until completely smooth and creamy with no lumps.
- Scrape the bowl once.

Tip: Beat the cream cheese alone first. Once the cheddar is in, lumps are hard to remove.
Mix in flavorings
- Add the Worcestershire sauce, garlic powder, smoked paprika and hot sauce (if using).
- Beat on low for 20 seconds to blend.
- Add the cheddar and green onions and fold with a rubber spatula until evenly distributed.
- Taste and add a pinch of salt only if needed, as the cheddar and Worcestershire are already salty.

Ready when: Evenly orange-flecked mixture with no streaks of plain cream cheese
Tip: Fold the cheddar in by hand rather than with the mixer so the shreds stay distinct.
Chill to firm up
- Scrape the mixture into the center of a large sheet of plastic wrap and gather the edges to form a rough mound.
- Refrigerate for 1 hour until firm enough to shape without sticking to your hands.

Shape the ball
- Using the plastic wrap to help, pull the edges up around the mixture and twist to form a tight ball about 4 inches (10 cm) wide.
- Smooth out any creases by pressing and rolling it between your palms through the wrap.
- Unwrap carefully.

Tip: If the mixture is still sticky, chill it another 15 minutes before shaping.
Coat with pecans
- Set the ball on the plate of chopped pecans.
- Roll it around, then press handfuls of pecans onto any bare spots so the whole surface is covered in an even layer.
- Wrap it tightly in fresh plastic wrap, or transfer to a serving platter and cover loosely.

Chill until set
- Refrigerate the coated cheese ball for at least 2 hours, or up to 3 days, so the flavors meld and the ball sets firm.

Temper and serve
- Take the cheese ball out of the fridge 20 minutes before serving so it softens slightly for spreading.
- Unwrap onto a platter and serve with crackers, pretzels, apple slices, celery or cucumber slices and a spreading knife.
- Let guests know it contains dairy, tree nuts and fish (from the Worcestershire) unless you used an anchovy-free brand.

Tips
- Freshly grated cheddar is the secret to a creamy texture. Bagged shreds make the ball grainy.
- Use a spoon to press pecans onto the bare spots instead of rolling again, which would flatten the ball.
- Serve with sturdy crackers or pretzel crisps. Thin crackers break when you spread the cold cheese.
- For a party, shape two smaller balls (about 3 inches/8 cm) so one can stay in the fridge while the other is out.
Make ahead
The uncoated, shaped ball can be wrapped and refrigerated up to 3 days ahead. Roll it in the toasted pecans on the day of serving, or up to 12 hours ahead, so the nuts stay crisp. Toasted pecans keep in an airtight container at room temperature for 2 days.
Storage & reheating
Room temperature: up to 2 hours while serving. Refrigerator: wrap tightly and store up to 5 days (the pecans soften after day 2). Freezer: freeze uncoated, wrapped tightly in plastic wrap and foil, up to 1 month. Thaw overnight in the refrigerator, then roll in freshly toasted pecans before serving. No reheating is needed.
Substitutions
- Worcestershire sauce (contains anchovies/fish; may contain gluten) → vegetarian or anchovy-free Worcestershire sauce (check the label for gluten-free if needed). Use this for fish-allergic, vegetarian or gluten-free guests. Regular Worcestershire contains anchovies.
- pecan halves → chopped toasted walnuts or almonds. Walnuts are slightly more bitter. Toast them the same way. All are tree nuts, so none suit a nut allergy.
- sharp cheddar cheese → Colby-Jack or pepper Jack. Pepper Jack adds some heat, so you may want to skip the hot sauce.
- green onions → 2 tbsp finely chopped chives. Gives a milder onion flavor.
