Steps
Before you start
- If using bamboo skewers, soak them in water for at least 30 minutes
- Pat the scallops very dry with paper towels—moisture prevents proper browning
- Prep all ingredients (mince ginger and garlic, slice scallions) before starting
- Have your grill grates clean and ready
- Toast the sesame seeds ahead of time or while the scallops grill
Mix the marinade
- In a large bowl, whisk together dark sesame oil, soy sauce, and rice vinegar until combined.
- Stir in minced ginger, minced garlic, honey, white pepper, and crushed red pepper flakes (if using) until the mixture is smooth and glossy.
- The marinade should smell fragrant with a balance of salty, sweet, and savory notes.
- Set aside.

Ready when: Marinade is smooth, glossy, and fragrant
Tip: Use good-quality dark sesame oil (also called toasted sesame oil)—it has a richer, more authentic flavor than light sesame oil
Dry the scallops
- Inspect each scallop for the small, tough side muscle (a thin, rectangular piece attached to the side) and remove it gently if present.
- Pat each scallop completely dry with paper towels, pressing gently to remove all surface moisture.
- Place them on a clean plate.
- This step is essential for proper browning on the grill.

Ready when: Scallops are completely dry to the touch with no side muscles attached
Tip: Don't skip this step—moisture on the surface prevents caramelization and causes scallops to stick to the grill
Marinate the scallops
- Add the dried scallops to the marinade bowl and gently toss with a spoon to coat all sides evenly.
- Let sit at room temperature for 30 minutes (no longer than 45 minutes, or the acidity may begin to cook the delicate flesh).
- While the scallops marinate, soak bamboo skewers (if using) in a shallow dish of water for 30 minutes to prevent burning.

Ready when: Scallops are well-coated with marinade and smell fragrant
Tip: Set a timer—don't marinate longer than 45 minutes, or you risk toughening the scallop flesh
Load the skewers
- Remove the scallops from the marinade with a slotted spoon and transfer to a plate.
- Pour 3 tablespoons of the remaining marinade into a small bowl and set aside—you'll brush this on the scallops as they grill.
- Thread the scallops onto the skewers, alternating each scallop with a 1-inch piece of scallion.
- Load 3–4 scallops per skewer, spacing them slightly so heat can circulate and they cook evenly.

Ready when: Skewers are loaded with scallops alternating with scallion pieces distributed throughout
Tip: Reserve the marinade before threading—this ensures you have enough glaze to brush on during cooking
Get the grill hotOven 450°F / 230°C
- Preheat your grill to medium-high heat, about 450°F (230°C).
- For charcoal, you want hot, ashy coals.
- For gas, preheat with all burners on high for about 10 minutes.
- Clean the grill grates thoroughly with a grill brush to remove any debris.
- Lightly oil the grates with a high-heat oil (such as vegetable or canola oil) to prevent sticking.
- Test the heat by holding your hand about 2 inches above the grates—you should barely be able to hold it there for 3–4 seconds before it's too hot.

Ready when: Grill grates are clean, hot, and lightly oiled; heat is at medium-high (450°F / 230°C)
Tip: A properly hot grill is essential for developing grill marks and caramelizing the exterior of the scallops
Grill the first side
- Place the loaded skewers directly on the hot grill grates, arranging them in a single layer.
- Leave them completely undisturbed for 3–4 minutes so they develop nice caramelized grill marks.
- Resist the urge to move or flip them—this is key to browning.
- You'll see the scallops turn from translucent to opaque around the edges.
- After 3–4 minutes, check that the grill marks are golden-brown with a hint of char.

Ready when: Scallops show golden-brown grill marks with slight char; the exterior is opaque
Tip: Don't move the skewers around—letting them sit undisturbed is how you get beautiful caramelized grill marks
Flip and finish grilling
- Using tongs, carefully flip each skewer.
- Cook the other side for 3–4 minutes until the scallops are opaque white throughout and feel firm to the touch.
- In the last minute of cooking, brush the reserved marinade over the scallops for a glaze and caramelization.
- Do not overcook—scallops cook very quickly and become rubbery if left on the grill too long.

Ready when: Scallops are opaque white throughout with no translucent center, firm to the touch, with a light glaze
Tip: Scallops cook very fast. Check them after 3 minutes on the second side—overcooked ones become tough and rubbery
Garnish and serve
- Transfer the skewers to a serving plate or platter.
- While still warm, sprinkle toasted sesame seeds over the scallops and scatter the thinly sliced scallions over the top.
- Serve immediately with lime wedges on the side.
- The scallops are best enjoyed hot, with a squeeze of fresh lime juice to brighten the flavors.

Good to know
Tips
- Never skip drying the scallops—moisture prevents browning and causes them to stick to the grill
- Avoid marinating longer than 45 minutes; the acidic components can begin to cook the delicate flesh, making it tough
- Grill marks come from leaving the skewers undisturbed. Resist moving them around for proper caramelization
- Scallops cook very quickly over high heat. Set a timer for the first side, and check the second side after 3 minutes to avoid overcooking
Make ahead
Marinate the scallops up to 2 hours ahead and refrigerate; reduce initial marinating time to 20–30 minutes if chilling. Remove from the refrigerator 15 minutes before grilling to bring to room temperature. These skewers are best grilled and served fresh.
Storage & reheating
Store any leftovers in an airtight container in the refrigerator for up to 1 day. Reheat gently in a 300°F (150°C) oven for 3–5 minutes, or enjoy cold. Scallops are best consumed the day they're cooked, as reheating can make them tougher. Freezing is not recommended.
Substitutions
- Dark sesame oil → Regular neutral oil mixed with 1 tsp sesame extract per 1/4 cup oil. Won't be quite as authentic or rich, but will work in a pinch
- Large sea scallops → Large shrimp (16–20 count), large firm fish chunks (halibut, cod, monkfish), or firm tofu. Shrimp and fish need 2–3 minutes per side; tofu also 2–3 minutes per side. Cooking time may be slightly shorter.
- Soy sauce → Tamari (gluten-free) or coconut aminos. Tamari has a similar salty-umami taste; coconut aminos are sweeter and less salty, so adjust to taste
- Fresh ginger → 1.5 tsp ground ginger. Ground ginger is more concentrated; use less by volume. The flavor will be slightly more muted and warm.
